Overview
Almond Mushroom (Agaricus subrufescens) is a robust member of the Agaricaceae distinguished by a cap clothed in fine silky brown fibrils over a whitish to buff ground, a stout stipe with a large hanging ring, and an unmistakable sweet aroma reminiscent of almonds or marzipan — the character that gave it its common name. In the scientific literature it has also circulated under the names Agaricus blazei (in a widely used but disputed application) and Agaricus brasiliensis, and untangling those names has occupied taxonomists for decades.
Like all Agaricus species it shows free gills that shift from pale through pink to dark chocolate brown, a ringed stipe and a dark brown spore print. What sets it apart within the genus is the combination of its warm-region distribution, its strong preference for very rich organic substrates, and the intensity of its benzaldehyde-like aroma, which is often noticeable from a short distance on a still day.
It is a large and eye-catching fungus, with mature caps regularly exceeding 12 cm, and its habit of appearing in enriched garden beds and compost means it is encountered as often on cultivated ground as in anything resembling wild habitat.
How to identify it
Cap
The cap is 6–18 cm across, ovate to hemispherical when young and expanding to convex or broadly flattened, sometimes with a slightly squared-off profile. The ground colour is whitish to pale buff and is overlaid with fine, appressed, silky fibrils and small flattened scales in shades of reddish-brown, tawny or ochre-brown, densest at the centre and thinning toward the margin so the pale base colour shows through. Veil remnants may hang briefly from the rim.
Gills
The gills are free from the stipe, crowded and narrow, whitish to pale greyish at first, then passing through pinkish-grey to a dark chocolate brown. As in the rest of the genus, the pale-to-pink-to-brown sequence is the key generic signal.
Stipe
The stipe is 6–15 cm long and 1–2.5 cm thick, more or less cylindrical with a slightly enlarged or bulbous base from which whitish mycelial cords (rhizomorphs) often radiate into the substrate. It is white and smooth above the ring, more fibrillose and often flecked with small scales below. The ring is large, white, membranous and pendulous, hanging skirt-like from the upper stipe, with a somewhat cottony underside. There is no volva.
Flesh & spore print
The flesh is white and firm, and on cutting may slowly discolour pale yellowish or dull pinkish-brown, especially in the stipe base. The odour is strongly sweet and almond-like, one of the most reliable characters for the species. The spore print is dark chocolate brown.
Where and when it grows
This species is strongly associated with very rich organic substrates: compost heaps, manured and heavily mulched garden beds, decaying plant residues, greenhouse borders, deep leaf litter in warm woodland, and the enriched soil around cultivated ground. It commonly fruits in groups, clusters or arcs, often reappearing in the same bed as long as the organic material lasts.
Fruiting occurs in warm, humid periods, typically summer through autumn in temperate areas and over a longer stretch of the year in subtropical and tropical climates. Originally described from North America, it is now recorded from many parts of the Americas, Europe, Africa, Asia and Australasia, with its distribution complicated by movement of compost and cultivated stock. It is most frequent where summers are warm and moist.
Ecological role
Agaricus subrufescens is a saprotroph specialised for hot, nutrient-rich decomposing plant material. It is a secondary decomposer, moving in after bacteria and thermophilic fungi have already broken down the rawest components of compost, and its mycelium then works through the partly humified residue. The whitish rhizomorphs at the stipe base are foraging cords that let a colony explore and exploit patchy resources across a compost bed.
Because it thrives at temperatures that discourage many temperate agarics, it fills an ecological niche in warm-season decomposition, converting garden and agricultural plant waste into humus and releasing nitrogen and other nutrients back into the soil. Its fruit bodies support the usual community of fungus-associated invertebrates — fly larvae, mites and springtails — which help disperse its spores through the substrate.
Similar species
Blushing Wood Mushroom (Agaricus silvaticus) shares the brown-fibrillose cap but is a woodland species whose cut flesh reddens strongly and quickly, and it lacks the almond aroma. Inky Mushroom (Agaricus moelleri) and the Flat-topped Agaricus (A. placomyces) also have scaly greyish-brown caps but their scales are darker and greyer, they develop a bright chrome-yellow stain at the stipe base, and their odour is inky or phenolic rather than sweet.
Horse Mushroom (Agaricus arvensis) shares the sweet aniseed-to-almond aroma but has a smooth white cap without brown fibrils, and its ring shows a cogwheel pattern beneath. Cultivated Agaricus bisporus in its brown form has a similar stature but a more uniformly brown, less silky-fibrillose cap and no marked almond scent.
