Appalachian Chanterelle Identification Guide

A working field routine for Cantharellus appalachiensis: the small brown-capped chanterelle of eastern hardwood slopes, identified by the contrast between a dull olive-brown cap, pinkish false gills and a bright yellow stipe.

The setting and the first impression

You meet this species in high summer on a shaded slope in an eastern North American hardwood forest, most often on a mossy bank above a creek or along a ravine where oaks and beeches shade the ground. It is a small, unassuming chanterelle: caps one and a half to five centimetres across, scattered or in loose groups on bare soil and moss, never on wood. From above it reads as a dull brown to olive-brown mushroom with a wavy edge, easy to walk past.

What stops you is the underside. Tilt one up and the colour flips completely, from a drab brownish cap to soft pinkish-cream, salmon or pinkish-buff folds, and below them a stipe that is a clean, bright yellow. That three-colour contrast, brown above, pink beneath, yellow below, is the fastest way to place this species in the field, and it is the character that separates it from every common chanterelle around it.

Reading the cap

Start with a mature specimen. The cap begins convex with an inrolled margin, then flattens and finally becomes centrally depressed and shallowly funnel-shaped, with the margin becoming wavy, lobed and often irregularly split with age. The outline is rarely circular.

Colour runs from yellowish-brown through tawny to olive-brown or greyish-brown, usually darkest at the centre and lightening toward the margin, and the surface is dry, matt to finely fibrillose, sometimes cracking into fine radial fibrils or small scales in dry weather. It is not viscid. Older or sun-exposed caps fade toward buff, but even faded material keeps a brownish disc.

That brownish cap is the crux. Most people expect a chanterelle to be egg-yellow to orange all over. This one is not.

Reading the spore-bearing surface

Run a thumb across the underside. You should feel blunt ridges rather than sharp blades. These are false gills, and they are the defining feature of a true chanterelle: they are thick-edged, rounded on the edge, shallow, irregularly forked, and joined by cross-veins into a low network. They cannot be cleanly detached from the cap flesh, and if you try to flake one off with a fingernail it tears the flesh with it rather than peeling away as a separate blade.

They are decurrent, running some way down the stipe and fading out gradually rather than stopping at an abrupt line. Colour is pale pinkish-cream to salmon-pink or pinkish-buff, occasionally with a lilac or greyish cast, and this pinkish tone against a brown cap is the single most useful character of the species. Handle the ridges and they may slowly discolour brownish, but there is no rapid or dramatic bruising reaction.

Stipe, base and flesh

The stipe is two to six centimetres long and four to ten millimetres thick, usually more slender than in the larger chanterelles, either equal or tapering downward, smooth, and bright yellow to yellowish-buff. That yellow stipe under a brown cap is diagnostic in combination, and it stands out clearly when you lay a few specimens side by side on dark leaf litter. The stipe is solid to slightly stuffed when young and may become hollow or channelled in age. It is not gelatinous and not hollow in the tubular way of the trumpet chanterelles.

Slice a fruitbody lengthwise. The flesh is white to pale yellow, thin, and it does not exude latex. Cut surfaces may develop a faint brownish or ochre tone slowly over minutes to hours, but there is no instant bruising to blue, green or blood-red. The stipe base is smooth, without a bulb, ring or volva, and it is embedded in soil and litter with fine white mycelial strands running out into the humus.

Taking a spore print

Because the false gills are shallow and the fruitbody is small, prints need patience. Cut the stipe as close under the folds as you can without slicing into them, set the cap folds-down on card that is half black and half white, cover with a bowl and leave it for six to twelve hours. Choose a fresh, firm specimen; dried-out caps often refuse to drop.

The deposit is pale, usually a pale pinkish-cream to yellowish-cream or very pale buff. It is not white in the crisp way of an Amanita print, and it is certainly not brown. The main use of the print is exclusion: a distinctly brown or ochre-brown print points to another genus, and a strongly pinkish-salmon print in quantity suggests you should check whether the folds are actually true gills.

Substrate and season

This is a mycorrhizal fungus. It forms root partnerships with hardwoods, especially oaks, and it appears on soil, moss and thin leaf litter, never on wood or woody debris. Look on shaded slopes, along stream banks, on mossy road cuts and in the humid draws of mixed hardwood forest.

The season is summer into early autumn, roughly June through September, tracking warm weather and steady rain, and it typically fruits earlier than many of the larger chanterelles in the same forest. Fruitbodies come singly, scattered or gregarious, sometimes in loose lines along a bank, but not in clustered tufts from a single base.

Separating it from look-alikes on morphology alone

The golden chanterelles of the Cantharellus cibarius complex, including the yellow species commonly encountered in eastern woods, differ in being uniformly yellow to egg-yellow or orange on the cap as well as the folds, generally stouter and thicker-fleshed, and lacking the brown cap and pinkish-buff underside contrast.

Cantharellus minor is smaller and more delicate, but it is orange-yellow throughout including the cap, with very thin flesh, and is often found among mosses.

Cantharellus lateritius has an orange to apricot cap and an undersurface that is nearly smooth or only shallowly wrinkled rather than carrying distinct forking ridges.

Cantharellus cinnabarinus is small but a striking pink-red to cinnabar throughout.

Craterellus tubaeformis shares a brownish cap, but its stipe is yellow-brown and distinctly hollow, its cap becomes perforated at the centre and often forms a shallow funnel opening into the stipe cavity, its undersurface is greyish and vein-like rather than pinkish, and it grows late in the year on very rotten wood and mossy conifer debris.

Hygrophoropsis aurantiaca is the classic false chanterelle. It has true gills: thin, sharp-edged, crowded, repeatedly forked blades that can be separated from the cap flesh. It is orange throughout, often with a browner cap centre, and it grows on woody debris, wood chips and conifer litter rather than as a soil mycorrhizal partner.

Omphalotus illudens forms large, dense clusters of bright orange fruitbodies from buried roots and stumps, with true, crowded, sharp-edged decurrent gills and a tapering fused base. Its scale and clustering habit rule it out at a glance.

Small brown Clitocybe and Lyophyllum species on the same slopes have true gills; the thumb test across the underside settles it in seconds.

Examine the underside closely. Hygrophoropsis has true gills: thin, sharp-edged, crowded, repeatedly forked blades that can be lifted away from the cap flesh, and it is orange throughout while growing on conifer litter, wood chips or woody debris. The Appalachian Chanterelle has shallow blunt ridges fused to the flesh, a brown cap with pinkish folds and a yellow stipe, and grows from soil as a tree partner.
