Bare-toothed Brittlegill

A firm, muted pinkish-brown brittlegill whose cap skin shrinks back from the rim to expose a fine pale line of gill ends. It partners with oak and beech on well-drained soils.
Overview
The Bare-toothed Brittlegill, Russula vesca, is one of the most frequently encountered members of the large genus Russula in temperate broadleaf woodland. Like all brittlegills it belongs to the family Russulaceae, a group whose flesh is built from rounded, bladder-like cells (sphaerocysts) rather than the long fibrous threads of most gilled fungi. That cellular architecture is what gives the whole genus its signature snap: the stipe breaks cleanly like a stick of chalk instead of tearing into fibres.
What sets R. vesca apart is a small but reliable detail at the cap margin. The cap cuticle contracts slightly as the mushroom matures and pulls back from the very edge, leaving a narrow whitish rim where the ends of the gills are left uncovered. Field mycologists call this the "bare-toothed" margin, and the alternative English name The Flirt alludes to the same slightly retracted skin.
Colour in this species is unhelpfully variable — wine-pink, dull rose, buff, ochre-brown or almost leather-coloured — so identification leans on the retracted cuticle, the firm white flesh and the near-white spore deposit rather than on hue. It is a mycorrhizal woodland species and a good example of how Russula identification depends on a combination of small characters rather than one striking feature.
How to identify it
Cap
Typically 5-10 cm across, at first convex and later flattening or shallowly depressed at the centre. The surface is dry to slightly greasy in wet weather and matt when dry. Colour is very variable: dull wine-pink, rosy buff, brick, ochre-brown or pale leather, often with paler bleached patches. The defining feature is the cuticle, which shrinks back a millimetre or two from the extreme margin so that the pale tips of the gills show as a fine toothed line. The skin peels only a short way in from the edge.
Gills
White to cream, crowded, narrow and adnexed to almost free. They are notably brittle and shatter under a fingertip. Some gills fork near the stipe, and short intermediate gills are usually present. With age the gill faces may develop small rusty spots.
Stipe
White, cylindrical or slightly tapering downwards, 3-7 cm long and 1.5-2.5 cm thick, firm and solid when young but becoming softly stuffed. The base often picks up rusty-ochre stains, particularly where it has been in contact with soil. There is no ring and no volva.
Flesh & spore print
Flesh is white, thick, firm and unchanging when cut. A drop of iron salts on the stipe surface produces a strong salmon to orange-pink reaction, a useful confirmatory test. The spore print is white to the palest cream, and the spores themselves are broadly ellipsoid with low warts joined by fine connecting lines.
Where and when it grows
Russula vesca is an ectomycorrhizal species associated principally with oak and beech, and also with birch, hornbeam, sweet chestnut and occasionally lime. It favours well-drained ground — sandy banks, thin soils over chalk, open woodland rides and mature parkland trees — and is often among the first brittlegills to appear in early summer.
Fruiting runs from late June through to October, peaking in warm damp spells of late summer. The species is widespread and common across Europe, and closely comparable populations occur in temperate North America and parts of East Asia, generally in mixed deciduous forest.
Ecological role
This is a mycorrhizal fungus. Its mycelium forms a sheath around the fine root tips of its host tree and an inward network between root cells, exchanging soil-derived phosphorus, nitrogen and water for sugars produced by the tree's leaves. Because of this dependence, the fruiting bodies only ever appear near living host trees and cannot be cultivated on dead wood or compost.
Within the woodland ecosystem the species contributes to a dense underground network that binds soil, buffers trees against drought, and channels mineral nutrients from litter and mineral horizons that roots could not reach alone. The fruit bodies are heavily used by fungus gnats, rove beetles and slugs, and mature caps decay quickly, returning nutrients to the litter layer.
Similar species
The Charcoal Burner (Russula cyanoxantha) reaches a similar size but has a greasy, often lilac-, green- and grey-mottled cap and, most importantly, soft flexible gills that bend under a finger instead of shattering. The Greasy Green Brittlegill (Russula heterophylla) has a distinctly green cap and very crowded gills that run slightly down the stipe, and its cuticle does not retract from the margin.
Russula rosea (also called R. lepida) shares the pinkish tones but has a chalky matt cap, hard flesh and a stipe usually flushed rose-pink. Russula mustelina, a conifer species, is a similar warm brown but keeps its cuticle to the very rim and has a stouter, more barrel-shaped stipe. Checking whether the cap skin has pulled back to expose the gill ends, and whether the gills snap or flex, will separate R. vesca from all of these.
