A soft, moist, blood-red tongue-shaped bracket on oak, unique among polypores in having individually separate tubes rather than a fused pore layer.

Overview

Beefsteak Fungus is one of the strangest brackets in temperate woodland, both in colour and in construction. It emerges from the base or lower trunk of old oaks as a fleshy, deep red, tongue- or liver-shaped shelf, moist to the touch and marbled internally with paler streaks, and it exudes a reddish watery juice when squeezed.

Structurally it is a genuine oddity. In almost every polypore the tubes on the underside are fused into a single pore layer, but in Fistulina each tube is a separate, free-standing cylinder packed against its neighbours — a difference visible with a lens and confirmed by scraping the surface, where the tubes come away individually. This character gives the genus its own family, the Fistulinaceae.

It is also economically notable in forestry for the deep brown colouration it produces in oak heartwood. Timber from affected trees, known in the trade as brown oak, is prized by furniture makers for its rich colour, which is a direct consequence of the fungus's activity.

How to identify it

Fruiting body

A fleshy bracket 8–30 cm across and 2–6 cm thick, tongue-shaped, semicircular or fan-shaped, attached by a very short, thick lateral stem or directly to the bark. The upper surface is moist, sticky when damp, and finely warty or granular, coloured pinkish-red, blood-red or dark liver-brown, darkening with age. Young specimens can start as a rounded reddish knob before flattening out.

Pores

The underside is pale cream, pinkish-buff or yellowish when young, bruising and ageing to reddish-brown where handled. Under a lens the surface resolves into a mass of short, individually separate tubes — each one detachable from its neighbours — rather than a solid pore layer with drilled holes. Pores are fine, roughly 2–3 per millimetre.

Flesh & spore print

The flesh is thick, soft and juicy, deep red and conspicuously marbled with radiating paler streaks so that a cut section resembles raw meat or marbled liver. Squeezing releases a dark red watery liquid. The spore print is pale pinkish-brown to salmon-buff, an unusual colour among brackets and a useful confirmation.

Where and when it grows

It is strongly associated with oak (Quercus) and sweet chestnut (Castanea sativa), with occasional records from other broadleaves. Fruiting bodies appear low on the trunk, at the base of the tree, or on old stumps and standing snags, typically on mature or veteran individuals rather than young trees.

The species is common in oak woodland, wood pasture, ancient parkland and hedgerow oaks throughout Britain, Ireland and much of Europe, and it also occurs in North America, North Africa, Asia and Australia. Fruiting runs from late summer into autumn, with a single bracket lasting a few weeks before collapsing.

Ecological role

Fistulina hepatica is a brown-rot fungus of oak heartwood and one of the classic organisms of veteran trees. It colonises the central heartwood, which is already dead tissue, and degrades it slowly, staining the surrounding wood a rich chocolate brown — the brown oak of the timber trade. Because it attacks only heartwood and works slowly, an infected oak may live for many decades with a Fistulina colony inside it.

That slow hollowing is a keystone process in old wood pasture. The soft, brown, crumbling heartwood and eventual hollow cavity created by this fungus and its associates supports a specialist community of saproxylic beetles, hoverflies and wood-mould invertebrates, several of which are found nowhere else, as well as roosting bats and nesting birds.

Similar species

No other European bracket combines a blood-red tongue shape with separate tubes, but a few can be confused at a distance. Chicken of the Woods (Laetiporus sulphureus) also grows on oak and is bright orange above with a sulphur-yellow pore surface, but it forms tiered, overlapping fans with fused tubes and dry, pale, cheese-like flesh rather than red marbled flesh. Oak Bracket (Pseudoinonotus dryadeus) grows at the base of oaks and exudes amber droplets when young, but it is a thick ochre-brown cushion with a fused pore layer and tough fibrous brown flesh.

Ganoderma species at the base of oaks are hard and woody with a crusted upper surface and a white pore layer bruising brown, and they deposit cocoa-brown spores; the soft, wet, red flesh of Beefsteak Fungus is nothing like theirs. Very young red knobs of Fistulina can resemble emerging Rhodofomes or resinous conks, but those become woody and zoned rather than staying soft and juicy.
