One of the largest false morels, with a dark reddish-brown head packed with deep interconnected wrinkles on a massive white furrowed stalk. It fruits in spring in bottomland hardwood forest of the central and southeastern United States.

Overview

Gyromitra caroliniana is the heavyweight of the North American false morels. Mature fruiting bodies can exceed 20 cm across and 20 cm tall and feel substantial in the hand, with a dense, dark reddish-brown head sitting on a thick, chalk-white, deeply furrowed stalk. Nothing else in eastern spring woodland reaches that combination of size, colour and texture.

The head's surface is its most distinctive feature. Rather than the broad, smooth flaring lobes of Gyromitra brunnea, it is packed with deep, narrow, interconnected wrinkles and ridges that run and rejoin in every direction, giving a convoluted, cauliflower- or brain-like texture across the whole surface. Those wrinkles are the folded fertile layer, greatly increased in area.

The species is centred on the bottomland hardwood forests of the central and southeastern United States and is a well-known spring fungus of the Ozarks, the Ohio and Mississippi valleys and the southern Appalachian region.

How to identify it

Cap

The fertile head is 6-20 cm or more across and broadly rounded to irregularly globose or slightly lobed, with the surface densely and deeply convoluted into narrow, branching, interconnected wrinkles and ridges. The overall colour is a rich dark reddish-brown, maroon-brown, brick or chestnut, generally darkening with age; the depths of the folds can appear paler. The lower margin is often inrolled and fused to the upper stalk at several points, so the head sits over the stalk rather than flaring free.

Stipe

The stalk is massive: 4-15 cm tall and commonly 3-8 cm thick, white to cream, and deeply ribbed, furrowed and pitted on the outside, sometimes appearing almost sculpted. Cut lengthwise it reveals a complex system of chambers and channels separated by thick folds of white tissue, not a single cavity. The base is broad, often lobed and buried well into the litter.

Flesh & spore deposit

The flesh is white, firm and thick, especially in the stalk, and does not change colour appreciably when cut. A spore deposit is white to pale yellowish; the elliptical spores bear conspicuous apical projections and often carry oil droplets, characters that place the fungus firmly in Gyromitra.

Where and when it grows

The big red false morel grows on rich, moist soil and leaf litter in bottomland and lower-slope hardwood forest, very often near decaying hardwood logs, stumps and buried wood. Typical stands include oak, hickory, maple, elm, sycamore, sweetgum and tulip poplar on river terraces, creek bottoms and shaded ravines. Fruiting bodies emerge singly or in scattered groups and can push aside a considerable amount of leaf litter as they expand.

Fruiting takes place in spring, usually overlapping the local morel season and often continuing a little later into warmer weather. Its recorded range is centred on the central and southeastern United States, including the Ozark and Ouachita highlands, the Ohio and Mississippi valleys, the mid-South and the southern Appalachians, with scattered records further north and east.

Ecological role

Like its relatives, G. caroliniana is regarded as a saprotroph, decomposing buried hardwood, dead root systems and humified litter in the deep, moist, organically rich soils of floodplain and ravine forest. Its close association with rotting logs and stumps supports that role, and the great size of the fruiting bodies suggests access to a substantial buried nutrient source.

The elaborately folded head is a spore-production device: the fertile layer covers the entire convoluted upper surface, so packing the surface with deep interconnected wrinkles multiplies the number of asci a fruiting body can carry. Spores are discharged into the air from that surface and dispersed through the understorey. Spring fruiting exploits warm, saturated soil before canopy leaf-out dries the forest floor, and the fungus plays a part in converting coarse woody debris into soil organic matter in some of the richest forest soils of the region.

Similar species

Gyromitra brunnea is the species most often confused with it but is smaller, lighter reddish-brown, and folded into a few broad, smooth, flaring lobes with pale free margins rather than a densely wrinkled globe. Gyromitra korfii is smaller again, tan to yellow-brown, with a rounded, lumpy but comparatively shallow-folded head.

Gyromitra esculenta is far smaller and more slender, with a finely convoluted reddish head and a comparatively thin stalk. Gyromitra montana has a paler tan to yellow-brown head with broad blunt folds and occurs in western montane conifer forest at snowmelt rather than in eastern bottomland hardwoods. True morels of the genus Morchella are immediately separated by their regular honeycomb of pits and ridges and their single continuous hollow interior, in contrast to this fungus's wrinkled unpitted head and chambered stalk.
