A very large, heavy white milkcap blotched with wine-red or vinaceous patches, distinguished by crowded pink gills and copious white latex. It grows exclusively with poplars and willows, often in dune slacks and damp sandy ground.

Overview

Lactarius controversus is one of the biggest and heaviest milkcaps in Europe, with a dense, hard-fleshed cap that can exceed 25 cm in exceptional specimens and a squat, thick stipe that anchors it firmly in sand. Its ground colour is white to cream, but the cap is almost always marked with irregular vinaceous, wine-red or purplish-pink blotches and streaks, especially near the centre — the 'blushing' of its common name.

The second defining feature is its gills, which are conspicuously pink to pale flesh-pink even when young, an unusual colour among white-capped milkcaps and one that immediately separates it from the chalk-white L. vellereus and L. piperatus group. The gills are also strikingly crowded and narrow.

It has a narrow host range, partnering only with poplars (Populus) and willows (Salix), and consequently a patchy but predictable distribution: river gravels, dune slacks, poplar plantations, damp sandy waste ground and stabilised coastal dunes where creeping willow grows.

How to identify it

Cap

The cap is 6–25 cm or more across, extremely firm and heavy, convex with a strongly inrolled and often downy margin at first, then flattening and becoming depressed to funnel-shaped. The surface is whitish to cream, viscid when wet and matt to slightly felty when dry, and is irregularly blotched, streaked or spotted with vinaceous, wine-red, purple-pink or rusty tones. Sand and soil frequently adhere to the sticky surface.

Gills

Gills are very crowded, narrow, adnate to markedly decurrent, and pale pink to salmon-pink from an early stage, deepening to a stronger flesh-pink at maturity. This pink colouring is a primary identification character. Bruised areas may take on rusty or brownish tones.

Stipe

The stipe is short and stout — 3–8 cm tall and 2–5 cm thick — solid, hard, often eccentric, tapering downward, and white to cream, sometimes with faint vinaceous flushing. It is dry and smooth, without a ring, and is usually buried deep in sand so that the fruiting body appears half-submerged.

Flesh, latex and spore print

The flesh is thick, white, extremely firm and brittle. It exudes copious white latex which remains white and does not stain the flesh strongly, though drying latex may leave cream to faintly pinkish marks on the gills. The spore print is pale pinkish-cream to pale buff-pink; spores are broadly ellipsoid with amyloid warts and partial ridges.

Where and when it grows

This species is strictly mycorrhizal with poplars and willows, including aspen (Populus tremula), black and white poplars, and both tree and creeping willows (Salix repens). Typical habitats are damp sandy places: coastal dune slacks, river shingle and sand banks, poplar shelterbelts and plantations, quarry floors and damp waste ground colonised by willow scrub.

It is widely but locally distributed across Europe from the Mediterranean north to southern Scandinavia, and extends into western and central Asia and North Africa; comparable populations occur in North America with Populus. Fruiting bodies appear from late summer to late autumn, often pushing up through sand in dense clusters or in rings around a host stem, and they can persist for weeks because the flesh is so hard.

Ecological role

As an ectomycorrhizal symbiont of Populus and Salix, L. controversus colonises the fine roots of pioneer trees growing on raw, mobile, mineral-poor substrates. Dune slacks and river gravels are extremely low in organic nitrogen and phosphorus, and the extensive mycelium of this fungus effectively multiplies the volume of sand a young willow or poplar can exploit for water and nutrients, which in turn helps stabilise the substrate.

Because it is so host-specific, its presence reliably signals poplar or willow roots nearby even where the host is a low creeping shrub hidden in dune vegetation. The dense, long-lived fruiting bodies are heavily colonised by fly larvae and are among the last mushrooms of the season to decay in exposed coastal habitats.

Similar species

Lactarius vellereus is similarly large and white but has a dry, thickly felty cap without vinaceous blotching, distant and coarse cream gills rather than crowded pink ones, and grows with beech and oak. Lactarius piperatus is white with extremely crowded but cream-white gills and a smooth dry cap, again in broadleaved woodland. Lactarius glaucescens resembles L. piperatus but its drying latex turns greenish.

Russula delica is a comparable heavy white funnel-shaped mushroom of woodland soil, but it produces no latex at all when the gills are cut, and its gills are white to cream with a bluish-green tinge near the stipe apex rather than pink.
