Candy Cap Identification Guide

A step-by-step field walkthrough for recognising *Lactarius rubidus*, the small dry rusty-orange milkcap of Californian oak woodland, using its wrinkled matt cap, hollow brittle stipe, watery latex and powerful drying aroma.

The First Impression

The Candy Cap is a small mushroom that you find by looking down, not ahead. The usual encounter is a scatter of low, rusty-orange caps sitting almost flush with the duff under coast live oak or tanoak, sometimes half-buried in fallen leaves so that only a burnt-orange disc shows. They are rarely solitary. More often there are a dozen or more spread over a few square metres, with a few pushed up through moss on a shaded bank or lined along the cut edge of a trail where the litter is thin.

From standing height the impression is of something dry and dusty rather than glossy, and matt is the single most useful first-glance word. In the same woods you will pass slimy orange Lactarius species that shine wet from a metre away. Lactarius rubidus does not shine. It looks like fine suede or old leather, and that texture holds even during rain.

Reading the Cap

Pick one mature specimen and one young one. The cap is 2-5 cm across, occasionally to 7 cm, starting convex with an inrolled margin and flattening out, then becoming shallowly depressed in the centre so the mature cap is a low funnel. A small blunt central bump is sometimes present in the depression.

Colour is a warm rusty orange to orange-cinnamon or brick red-brown, generally even across the cap, fading a little at the extreme margin on older specimens. It is essentially azonate: you should not see the concentric bands of a zoned milkcap, though occasional weak shading near the rim can suggest one.

Now use a hand lens. The surface is dry, never viscid or tacky, and finely wrinkled or minutely pitted, a rugulose texture like the grain of very fine leather. Run a fingertip across it. The cap should feel slightly rough and completely dry. The margin is smooth and bald, with no fringing hairs.

Gills and Latex

The gills are attached to shortly decurrent, running a short way down the top of the stipe. They are close to crowded, fairly narrow, and paler than the cap: pale pinkish buff to pale orange cream, with plenty of short intermediate gills and some forking near the stipe. Older gills darken to a duller brownish orange, and handled edges slowly stain darker brown.

The latex is the character that places the mushroom in Lactarius and it needs a clean cut. Slice across the gills near the stipe with a sharp blade, then wait ten to twenty seconds. The latex of this species is watery and thin, near-transparent to faintly whitish, and it is often sparse. In dry weather it can be almost absent, in which case cut the flesh at the top of the stipe where the tissue is wettest. The important negatives are that it does not change colour on exposure, does not turn yellow on a white handkerchief, and does not stain the gills red or lilac.

Stipe, Base and Flesh

The stipe is 3-6 cm long and 5-12 mm thick, equal or tapering slightly downwards, dry and matt, coloured like the cap or a shade paler, sometimes with a very fine pale bloom at the apex. There is no ring and no volva.

Snap the stipe in half rather than twisting it. Two things should happen. First, it breaks cleanly and abruptly, the brittle chalk-like fracture that comes from nests of rounded cells in the flesh and which the Lactarius and Russula group share with nothing else. Second, the interior of a mature stipe is hollow, or at least stuffed with a loose pith that has broken down into a canal. A firmly solid stipe in a mushroom otherwise matching this description should make you reconsider.

The base often carries white mycelial fuzz binding leaf fragments. The flesh is pale buff to pale orange, thin, and does not blue, redden or blacken when cut; it may simply dull slightly.

The Aroma

Odour is a genuine diagnostic character here and it is worth learning to test properly. Fresh specimens smell faint, slightly sweet, sometimes almost nothing. Dried material is transformed: the scent becomes very strong, sweetly aromatic and spicy, in the fenugreek and dried-hay direction, and it fills a paper bag. A quick field test is to tear a strip of cap, put it in a paper envelope in a warm pocket, and check it an hour later. Almost no other Lactarius in the same habitat produces this intensity of aroma on drying.

Taking a Spore Print

Cut the stipe off flush and set the cap gills-down on white paper or, better, a glass slide, then cover it with a cup to hold humidity and leave it in a cool place for four hours or overnight. Small caps drop thin deposits, so use two or three caps side by side and scrape the powder together with a blade to judge the colour properly.

The print is white to pale cream, sometimes with a faint pinkish buff cast when thick. Read it against both white and black card, since a thin pale deposit can look white on black and cream on white. Under a microscope the spores are broadly ellipsoid and ornamented with amyloid warts and ridges forming a partial network, which is the standard genus-level confirmation but is not needed for a field call.

Substrate, Season and Range

This is an ectomycorrhizal species, so it appears in the litter near living trees rather than on wood. Its partners are coast live oak and tanoak above all, with associated Douglas fir and other mixed-woodland trees. The range is the Pacific slope of North America, centred on coastal and near-coastal California and extending north into Oregon.

Fruiting follows autumn and winter rains, roughly November through February and sometimes into March, with the heaviest flushes a week or two after a soaking storm. It favours duff, mossy banks, and the shaded margins of paths under oak canopy.

Separating the Look-alikes

Lactarius rufulus is the most frequent confusion in the same oak woods. It is much bigger and heavier, with a cap commonly 5-12 cm, a darker brick to maroon-brown colour, a solid stipe rather than a hollow one, and copious white latex. Size plus a solid stipe rules it out.

Lactarius luculentus and its relatives have caps that are distinctly viscid or tacky when moist and a brighter orange tone, with white latex and no strong aroma on drying. The wet, shining cap is the giveaway.

Lactarius substriatus and similar small orange species show a striate cap margin and a moist surface, again lacking the matt wrinkled texture.

Lactarius rubrilacteus and the other bleeding milkcaps release reddish or vinaceous latex, obvious within a minute of cutting.

Lactarius camphoratus and Lactarius fragilis of eastern North America and Europe share the strong aroma on drying but are darker reddish brown with a differently textured cap; geography usually settles them, and where ranges are unclear the finely rugulose burnt-orange cap of L. rubidus remains distinctive.

Finally, orange Russula species and orange Hygrophoropsis can catch the eye at a distance. The first releases no latex at all from a cut gill; the second has soft, pliable, repeatedly forked orange gills and a flexible non-brittle stipe.
