The commonest of the shield mushrooms, with a deer-brown silky cap, free gills that turn from white to salmon-pink, and a fibrous ringless stem. It fruits on decaying wood almost year-round.

Overview

Deer Shield (Pluteus cervinus) is the type species and by far the most frequently encountered member of the genus Pluteus, a group of wood-inhabiting mushrooms in the family Pluteaceae. The English name and the epithet cervinus both refer to the fawn or deer-hide colouring of the cap, though the tone ranges widely from pale grey-brown through mouse-brown to almost blackish umber.

The genus is unified by three features that are easy to check: gills that are completely free from the stipe, a pink to salmon spore deposit that colours the mature gills, and a growth habit on wood or woody debris. Pluteus differs from its sister genus Volvariella in lacking a volva at the stem base, and from the pink-spored Entoloma species in having free rather than attached gills and in growing on wood rather than soil.

Because it fruits on sawdust, woodchip and buried timber as readily as on natural logs, Deer Shield is as much an urban mushroom as a woodland one, and it has one of the longest fruiting seasons of any temperate agaric — appearing from the first mild spells of spring through to hard frost.

How to identify it

Cap

The cap is 5–12 cm across, occasionally larger, convex or bell-shaped at first and expanding to nearly flat, often retaining a low broad umbo. The surface is dry to slightly greasy, silky-smooth, and marked with fine dark radial fibrils that are most obvious over the centre and give the cap a streaked appearance. Colour is highly variable: fawn, deer-brown, greyish-brown, dark umber or occasionally nearly white. The margin is even, not striate, and the whole cap is fairly thin-fleshed.

Gills

The gills are free, ending well short of the stipe and often leaving a narrow gutter around it. They are crowded, broad and ventricose, pure white in young caps and gradually flushing salmon-pink then a dull rosy-brown as the spores mature. The colour change is progressive rather than sudden, and half-grown specimens often show white gills at the margin and pink ones near the centre.

Stipe

The stipe is 5–12 cm tall, 5–15 mm thick, equal or slightly swollen at the base, firm and fibrous. It is white to greyish and streaked lengthways with brown or blackish fibrils that darken towards the base. Crucially there is no ring and no volva — the stem rises cleanly from the wood, sometimes with white mycelial strands binding the base to the substrate.

Flesh and spore print

The flesh is white and unchanging when cut, soft in the cap and fibrous in the stipe. The spore print is pink to salmon-pink; spores are smooth and broadly ellipsoid. Under the microscope the species is characterised by thick-walled pleurocystidia bearing two to four hook-like apical horns, a feature shared across the cervinus group.

Where and when it grows

Deer Shield is a wood-dweller, fruiting on stumps, fallen trunks, buried roots, sawdust heaps, wood-chip mulch and old timber. It shows a clear preference for hardwoods — beech, oak, ash, elm, poplar and willow are all frequent hosts — but it also occurs on conifer debris and on the sawdust of mixed timber yards. Specimens often appear to be growing from soil when the wood they are consuming lies buried.

The season is exceptionally long, running from March or April through to November in temperate regions, with peaks in early summer and again in autumn. The species is common and widespread throughout Europe, North America, temperate Asia and much of the Southern Hemisphere where suitable hardwoods grow, and it colonises landscaped and urban sites readily.

Ecological role

Pluteus cervinus is saprotrophic and causes a white rot, its enzymes breaking down lignin as well as cellulose so that the residual wood becomes pale, soft and fibrous. It is an early to mid-stage coloniser of dead hardwood, often appearing within a year or two of a tree falling or a stump being cut, and it competes vigorously in freshly chipped or sawn material where nutrients are abundant.

The mycelium is inconspicuous within the wood but frequently visible as white cords where a fruit body meets its substrate. Because the fungus does not depend on a living partner, it can complete its life cycle rapidly, which accounts for its long fruiting season and its ability to appear repeatedly on the same stump across many years until the resource is exhausted.

Similar species

Scaly Shield (Pluteus petasatus) is the closest relative: it is generally larger and much paler, with a whitish to cream cap bearing brown fibrillose scales concentrated over the disc, and it favours sawdust and wood-chip. Velvet Shield (Pluteus umbrosus) has a net-veined, dark-scaled cap and gills with a conspicuous dark brown fringed edge. Willow Shield (Pluteus salicinus) is smaller, grey with a slightly scaly centre.

Outside the genus, rosegills (Volvariella and Volvopluteus) also have free gills and a pink spore print but always show a sac-like volva at the stem base, so digging up the base settles it at once. Pink-spored Entoloma species have gills that are attached to the stipe and grow from soil, and true Amanita species produce a white spore print together with both a ring and a volva.

How do I confirm a mushroom is a Pluteus?
Check three things together: gills that are completely free from the stem, a pink to salmon spore print, and growth on wood or woody debris. No ring and no volva are present in this genus.
Why are the gills white on some specimens and pink on others?
The gills start white and take on colour only as the pink spores mature on their surfaces. A young button will show white gills; a fully expanded cap of the same collection will be salmon-pink.
