Sparassis spathulata

A large cream rosette built from broad, flat, concentrically zoned leaf-like lobes, growing at the base of oaks and other hardwoods in eastern North America.
Overview
The Eastern Cauliflower Mushroom is a big, unmistakable rosette that appears at the foot of living or recently dead hardwoods, most often oaks. It can reach 30 cm or more across and weigh several kilograms, built up from dozens of broad flattened lobes radiating from a shared basal core. From a distance it reads as a pale cabbage or a bunched-up sea sponge lying against the trunk.
Sparassis is a small genus placed in its own family, the Sparassidaceae, within the Polyporales — so despite the total absence of pores or gills, its closest relatives are polypores. The fertile surface is smooth and coats the underside and edges of each lobe. Species in the genus are distinguished chiefly by the shape and thickness of the lobes and by their tree hosts.
S. spathulata is the eastern North American member of the genus and is characterised by broader, flatter, more leaf-like lobes with visible concentric colour zones — quite different from the tightly crisped, egg-noodle-like ribbons of the European Sparassis crispa. Some authors have used the name Sparassis herbstii for eastern collections, and the taxonomy of the group continues to be refined.
How to identify it
Fruiting body
A rounded to irregularly lobed rosette 10 to 40 cm across and 8 to 25 cm tall, composed of many flattened, spathulate or fan-shaped lobes arising from a short, tough, common base. Individual lobes are 2 to 8 cm wide and only 1 to 3 mm thick, with wavy, sometimes slightly lacerated margins.
Lobes and colour
The lobes are broad and leaf-like rather than tightly ruffled, and their upper surfaces commonly show faint concentric zones of buff, tan and pale brown, a feature not seen in the more uniformly cream S. crispa. The overall colour is creamy white to pale tan when fresh, darkening to ochre-brown at the lobe edges with age or drying.
Base and attachment
The rosette narrows to a firm, tough, whitish rooting base that attaches to a root or to the root collar of the host tree, often reaching some way underground. Excavating around the base usually reveals the connection to wood.
Flesh and spore print
The flesh is white, firm, slightly elastic and tough at the base, becoming thinner and more brittle toward the lobe margins. The spore print is white to pale yellow. Spores are small, smooth and elliptical, produced on the smooth fertile surface covering the lobes rather than in any pores or gills.
Where and when it grows
Eastern Cauliflower Mushroom fruits at the base of standing hardwoods, on exposed roots, at the root collar, or on stumps and buried roots after the tree has gone. Oaks are the primary hosts across most of its range, with records also from other hardwoods; unlike the European and western species, it is not principally a conifer fungus.
The season runs from late summer into autumn, generally August through October in temperate eastern North America, with fruiting following periods of sustained rainfall. The species is distributed through eastern and southeastern North America, from the Great Lakes and New England south to the Gulf states and west into the Ozarks. Because the mycelium is established within the root system, the same tree base often produces a rosette in the same spot for many consecutive years.
Ecological role
Sparassis spathulata behaves as a weak parasite and subsequent saprotroph, colonising the roots and butt of living hardwoods and continuing to decay the wood after the tree dies. It causes a brown rot in which cellulose is consumed and lignin left behind, so affected root and butt wood becomes brown, crumbly and cracked into roughly cubical blocks.
The infection is slow and typically confined to roots and the lower trunk, so a colonised oak may stand for many years while structural wood at the base is gradually weakened. When the tree eventually falls or is removed, the fungus persists in the remaining root system. The rosette form is functionally efficient: folding the fertile surface into dozens of thin lobes packs an enormous spore-producing area into a compact volume close to the ground, where humidity is high and air movement is enough to carry spores away.
Similar species
Sparassis crispa, the European cauliflower fungus, has narrower, thinner, tightly crisped and curled ribbon-like lobes with no concentric zoning, and grows at the base of conifers, especially pine. Sparassis radicata of western North America is larger, more crisped, and has a long tapering rooting base attached to conifer roots. The broad, flat, faintly zoned lobes and hardwood host of S. spathulata separate it from both.
Grifola frondosa (Hen of the Woods) also forms large rosettes at the base of oaks, but it is built from overlapping grey-brown fan-shaped caps with a distinct white pored underside, and its lobes are thicker and clearly capped rather than being flat sheets fertile on both faces. Meripilus sumstinei similarly grows at hardwood bases but forms thick grey-brown pored fans that blacken where bruised. Checking the underside for pores immediately separates those polypores from the smooth-surfaced Sparassis.
