A firm, pale, smooth-capped mushroom that grows from wounds on standing elms and maples, distinguished from true oysters by its stout central-to-eccentric stipe and gills that are notched rather than long-decurrent.

Overview

The Elm Oyster (Hypsizygus ulmarius) is a robust, pale, wood-inhabiting mushroom that is frequently mistaken for a true oyster but belongs to a different genus in the Lyophyllaceae. The name Hypsizygus means roughly "high yoke", a reference to the habit of fruiting high on standing trunks, while ulmarius points to elm, its classic host.

Compared with Pleurotus, the genus is defined by a more mushroom-like stature: the stipe is longer, thicker and closer to central, the gills stop at the stipe apex in a notch instead of running far down it, and the flesh is denser and more brittle-fibrous. Fruitbodies are typically solitary or in loose groups of two or three rather than in the shingled tiers that oysters form.

It is a conspicuous autumn fungus of urban and hedgerow trees across the north temperate zone, often appearing on street maples and box elders where old pruning wounds have opened the trunk. Large specimens can reach the size of a dinner plate and develop a distinctive mosaic of surface cracks across the cap as they expand.

How to identify it

Cap

The cap is 5–15 cm across, occasionally larger, convex at first then broadly flattened or shallowly depressed. The surface is smooth, dry to slightly greasy, and white to cream or pale buff, sometimes with a faint tan flush at the centre. In dry weather large specimens crack into a network of shallow fissures or irregular patches, a feature shared with the related Beech Mushroom.

Gills

Gills are white to creamy, fairly crowded, and attached to the stipe by a notch (emarginate) or only shortly and shallowly decurrent — never running a long way down the stipe as in Pleurotus. They are moderately broad, with even, entire edges, and stay pale rather than yellowing markedly with age.

Stipe

The stipe is 4–10 cm long and 1–3 cm thick, firm, white, smooth to finely fibrillose, and central to somewhat eccentric. It is often curved upward where the fruitbody emerges laterally from a vertical trunk, and the base may be slightly swollen but has no volva, no ring and no bulb of note.

Flesh & spore print

The flesh is thick, white and firm, unchanging when cut or bruised. The spore print is white, and spores are small, smooth and broadly ellipsoid to almost globose — the near-round spore shape is a useful microscopic separator from oysters, which have distinctly cylindrical spores.

Where and when it grows

Hypsizygus ulmarius fruits from wounds, cankers and broken limbs on living or recently dead hardwoods. Elm is the traditional host, but in many regions maple, box elder, poplar, willow, beech and ash are at least as frequent, and the species is a common sight on street and park trees where pruning has left large exposed cuts. Fruitbodies typically appear singly or in small clusters directly out of the trunk, often at some height.

The main season runs from late summer into autumn, continuing until hard frosts. The species is widespread across temperate North America, Europe and parts of Asia, and is often more visible in towns and suburbs than in closed woodland because of the abundance of wounded amenity trees there.

Ecological role

This is a white-rot fungus that degrades lignin and cellulose in the heartwood of living trees, entering through mechanical wounds. It behaves as a facultative parasite, colonising and hollowing the structural core of a host that may survive for many further years, then continuing to decay the wood saprotrophically after death. Repeat fruiting from the same wound over consecutive seasons indicates a long-established internal mycelium.

The resulting hollowing of trunks and major limbs creates cavities and soft decayed wood that support nesting birds, roosting bats and a wide community of wood-feeding invertebrates. Spores discharged from the exposed gills travel on air currents to fresh wounds on other trees, so populations of the fungus tend to track populations of large, damaged hardwoods in a landscape.

Similar species

Pleurotus ostreatus and P. pulmonarius are the main confusions. Both have gills that run distinctly down the stipe, a short lateral stipe or none at all, thinner flesh, and a strong tendency to form overlapping shelf-like tiers; their caps are usually grey to brown rather than creamy white, and their spores are elongate-cylindrical rather than near-globose.

Hypsizygus tessulatus, the Beech Mushroom, is very closely related and shares the cracked cap surface, but it is smaller, grows in dense clustered tufts rather than solitary fruitbodies, has a more distinctly spotted or tessellated cap, and favours beech. Pleurotus dryinus is stouter but has a woolly-scaly cap, a fringed veil-remnant margin, and long-decurrent netted gills. Clitocybe species can look similar in pale colour and cap shape but grow on soil, not from trunk wounds, and typically have truly decurrent gills.

Why is the cap sometimes covered in cracks?
