An orange spruce-associated milkcap whose carrot-coloured latex turns wine-red within half an hour and whose flesh and cap green strongly with age.
Overview
Lactarius deterrimus belongs to section Deliciosi, the small and distinctive group of milkcaps that produce orange or red latex rather than white. All members of the group share a similar look — orange, often concentrically banded caps that develop verdigris-green stains — and they are separated from one another mainly by host tree, by the colour changes their latex goes through, and by whether the stipe carries pitted spots.
This species is the spruce specialist of the group. Its latex starts carrot-orange and, over roughly ten to thirty minutes, shifts through to a dull wine-red or purplish red before finally going greenish. The greening is intense in this species: old caps, bruised gills and cut flesh all take on strong blue-green to verdigris stains, sometimes covering most of the fruiting body.
The stipe is usually smooth or shows only faint pitting, and it often has a pale, almost whitish band just below the gills. Together with the spruce association, these characters make it one of the more tractable orange-latex milkcaps in the field.
How to identify it
Cap
The cap is 4–10 cm across, convex with an inrolled margin at first, then flattening and becoming shallowly funnel-shaped. It is orange to salmon-orange, usually with faint or indistinct concentric zoning rather than the sharp bands of some relatives, and the surface is smooth and slightly greasy when moist. Green blotches develop with age, bruising and rain, and old caps can be extensively verdigris.
Gills
Gills are adnate to slightly decurrent, crowded, narrow, and orange to pale saffron. They stain green readily where damaged and often show wine-red streaks after the latex has changed colour. Some forking occurs near the stipe.
Stipe
The stipe is 3–7 cm tall and 1–2 cm thick, cylindrical or tapering slightly downward, orange and typically smooth or with only shallow, poorly defined pits (scrobicules). A narrow paler, whitish zone just under the gills is a frequent feature. The stipe becomes hollow with age and greens where handled. No ring, no volva.
Flesh & spore print
Flesh is pale orange to whitish, greening on exposure. Cut tissue exudes carrot-orange latex that turns wine-red to purplish over about ten to thirty minutes and eventually greenish. The spore print is pale cream to buff, and the spores are ornamented with warts and ridges forming a partial network.
Where and when it grows
Lactarius deterrimus is strictly associated with spruce, particularly Norway spruce, and it is common in spruce plantations, shelterbelts and natural montane spruce forest. It favours young and middle-aged stands, mossy ground and grassy woodland rides, and it grows on both acid and moderately base-rich soils.
It is widespread through temperate and montane Europe, extending north into Scandinavia and east across Eurasia, and it has followed planted spruce into regions where the tree is not native. Fruiting is from late summer well into late autumn, often continuing after the first light frosts, and fruiting bodies frequently appear in troops or arcs beneath the outer branches of individual trees.
Ecological role
Like all milkcaps this species is ectomycorrhizal, and its partnership is narrow: essentially spruce alone. The mycelium builds a mantle over fine spruce rootlets and a Hartig net between their cortical cells, moving soil-derived nutrients and water into the tree in exchange for carbon. Its abundance in plantations means it is often one of the dominant ectomycorrhizal fungi in young spruce stands.
The latex system itself is an ecological feature. Milkcaps store latex in specialised hyphae under pressure, and when tissue is damaged it floods the wound, gumming up grazing invertebrates and sealing the injury. In section Deliciosi the latex pigments oxidise through orange to red to green, which is why damaged and ageing fruiting bodies of this species become so strikingly verdigris.
Similar species
Lactarius deliciosus, the Saffron Milkcap, grows with pine rather than spruce, has a more strongly and sharply zoned cap, a stipe marked with conspicuous darker orange pits, and latex that stays orange or turns only slowly and weakly greenish rather than passing through wine-red. Lactarius salmonicolor is a fir associate with a deep salmon-orange cap and latex that keeps its orange colour without a red stage and with little greening.
Lactarius semisanguifluus also grows with pine and turns wine-red quickly, but its cap greens even more heavily and its latex reddens within a couple of minutes rather than over half an hour. Lactarius sanguifluus is separated at once by latex that is dark blood-red from the first moment of cutting, with no orange phase at all.
