Fenugreek Milkcap
Lactarius helvus

A large, dry, felty fawn milkcap of bogs and wet birch woods, with scanty watery latex and a powerful aromatic odour of fenugreek that intensifies as specimens dry. It is a reliable indicator of wet, acid, peaty ground.
Overview
Lactarius helvus is unusual among milkcaps in that its most memorable field character is not visual at all but olfactory: fresh fruiting bodies smell strongly aromatic and spicy, and dried material develops an intense fenugreek or lovage-like scent that can perfume a whole storage box. The odour is so distinctive that experienced field mycologists often identify the species before seeing it clearly.
Visually it is a big, pale, matt mushroom — much drier and paler than most bog milkcaps, with a felty to finely scurfy cap surface and a stout hollow stipe. Its latex is the other oddity: instead of the copious white milk typical of the genus, it produces only sparse, watery, colourless serum that can be hard to demonstrate at all in dry weather.
It is a strongly habitat-restricted species, essentially confined to Sphagnum bogs, peaty birch carr and wet acid conifer plantations, and it belongs to a small group of dry-capped, strongly scented milkcaps within the genus.
How to identify it
Cap
The cap is 4–15 cm across, convex then flat and finally shallowly funnel-shaped with a depressed centre. The surface is dry and matt, felty to finely granular or scurfy, never viscid, and often minutely cracked in dry weather. Colour is pale pinkish-buff, fawn, sandy or greyish-tan, sometimes with faint darker concentric zoning. The margin is inrolled and downy when young.
Gills
Gills are fairly crowded, narrow, adnate to slightly decurrent, and whitish to pale pinkish-buff, discolouring to dingy cream or pale ochre-brown with age. They may develop faint brownish spotting where damaged, but there is no strong colour change.
Stipe
The stipe is 4–12 cm tall and 1–3 cm thick, cylindrical or narrowing at the base, dry, matt and coloured like the cap or slightly paler. It becomes hollow early and is often slightly downy at the base where it meets the moss.
Flesh, latex and spore print
The flesh is whitish to pale buff, brittle and rather thin at the margin. Cut tissue releases only a small quantity of watery, colourless to whey-like latex, which does not stain the flesh; in dry conditions it may not appear at all. The odour is the key feature — strongly aromatic, spicy and fenugreek-like, dramatically stronger in dried specimens. The spore print is pale cream, and spores are ellipsoid with an amyloid partial network.
Where and when it grows
This species is mycorrhizal, associating mainly with birch (Betula) and pine (Pinus) and occasionally spruce. It is strongly tied to wet, acid, peaty ground: raised bogs and their margins, Sphagnum lawns, wet birch carr, boggy heathland and damp conifer plantations on peat. Fruiting bodies typically push up through moss cushions, so the lower stipe is often sheathed in Sphagnum.
It occurs widely across northern and central Europe, is common in Fennoscandia, Britain, Ireland and the Baltic, and extends across northern Asia; comparable populations are reported from boreal North America. The season runs from late summer through autumn, and it is often one of the more persistent bog fungi late in the year.
Ecological role
Lactarius helvus is ectomycorrhizal with birch and pine growing on peat. These are among the harshest rooting environments in temperate woodland — waterlogged, strongly acidic, cold and extremely poor in available nitrogen — and the fungal mantle it forms on host rootlets gives those trees access to organic nitrogen sources they could not otherwise exploit. Its close habitat fidelity makes it a useful indicator of intact, undrained peatland woodland.
The watery latex of this species suggests a reduced version of the pressurised laticifer defence seen elsewhere in the genus, with the strong volatile aroma possibly playing a role in deterring or attracting invertebrates. Whatever its function, that aroma also aids spore dispersal ecology indirectly, since the species is heavily visited by fungus gnats whose larvae tunnel the stipe.
Similar species
Lactarius rufus shares the same bog and pine habitat but is a deeper brick-red to dark rusty brown with a pointed umbo and produces copious white latex rather than watery serum. Lactarius glyciosmus is much smaller, greyish-lilac and scented of coconut. Lactarius tabidus and L. subdulcis are smaller, redder-brown and yield white latex.
Lactarius volemus is comparable in dry, felty texture but is a rich orange-brown with abundant white latex that stains brown, and grows in broadleaf woodland rather than peat bog. Faded Lactarius trivialis can approach it in colour but is markedly slimy-capped and yields plentiful white latex.
