Lactarius pyrogalus

A grey-buff milkcap with faint watery zoning and unusually well-spaced ochre-yellow gills, found almost exclusively under hazel. Its white latex dries greyish and its gill spacing sets it apart from other grey milkcaps.
Overview
The Fiery Milkcap is a medium-sized, sober-coloured mushroom whose most useful field character is the spacing and colour of its gills. Where most grey milkcaps have crowded whitish gills, L. pyrogalus has notably distant, thick gills that mature to a warm ochre-yellow, contrasting with the cool grey-buff of the cap.
Its host preference is exceptionally narrow. It grows with hazel (Corylus avellana) and is one of the classic hedgerow and coppice fungi of temperate Europe, turning up in old hazel coppice, on woodland edges and along green lanes wherever hazel stools are present. Finding it under any other tree is unusual enough to prompt a second look at the identification.
The species sits within the group of grey to olive-toned milkcaps whose white latex dries to a grey film, alongside L. blennius and L. vietus, but its distant yellow gills and hazel association separate it cleanly from both.
How to identify it
Cap
The cap is 4–10 cm across, convex then flattened and shallowly depressed with a wavy margin in age. The surface is smooth, slightly greasy when moist but soon dry, and coloured grey-buff, olive-grey, greyish-brown or clay-grey, usually with faint darker watery concentric zones toward the margin. It is never strongly slimy or hairy-margined.
Gills
Gills are the key feature: distinctly distant or well spaced, fairly thick, adnate to slightly decurrent, and pale cream at first but soon a warm ochre or yellow-buff, sometimes with a faint pinkish cast. Damaged gills develop greyish stains where latex has dried.
Stipe
The stipe is 3–8 cm tall and 1–2 cm thick, cylindrical or tapering toward the base, smooth, dry and pale greyish-buff to whitish, generally paler than the cap. It is stuffed at first and hollow at maturity, with no ring and no volva.
Flesh, latex and spore print
The flesh is whitish to pale greyish-buff and brittle. Cut tissue yields moderate to copious white latex which stays white in the drop but dries to a grey or greenish-grey film, staining the gills and cut surfaces dingy grey after several minutes. The spore print is pale cream to pale yellow; spores are broadly ellipsoid with amyloid ridges forming an incomplete network.
Where and when it grows
Lactarius pyrogalus is mycorrhizal almost exclusively with hazel. It fruits on soil and leaf litter beneath hazel stools in ancient coppice, in hedgerows and along woodland rides and green lanes, and occasionally under hazel in scrub on chalk or limestone. Fruiting bodies appear singly, scattered or in small troops, often on the shaded side of a stool.
It is widespread and locally common throughout temperate Europe, including Britain and Ireland where hazel coppice is abundant, and extends east across the range of Corylus. The main season is late summer to late autumn, with fruiting concentrated after autumn rains; in mild seasons it can continue into early winter in sheltered hedgerows.
Ecological role
This species forms ectomycorrhizas on hazel roots, sheathing the fine root tips and connecting each stool to a wide network of soil hyphae. Hazel is a shrubby, multi-stemmed pioneer that regenerates vigorously after coppicing, and its mycorrhizal partners help fuel that rapid regrowth by supplying nitrogen and phosphorus during the intense post-cut demand for resources.
Its fidelity to a single host genus makes it a good indicator of long-established hazel — old coppice, ancient hedge banks and species-rich woodland edges — and it forms part of a distinctive hazel-associated fungal assemblage that also includes Lactarius circellatus in some regions and a range of Cortinarius and Russula species. As a symbiont it cannot be grown apart from its host.
Similar species
Lactarius circellatus is the closest match, sharing the hazel and hornbeam habitat and a greyish zoned cap, but its gills are crowded and pale cream rather than distant and ochre-yellow. Lactarius blennius has a much slimier olive-grey cap with dark droplet-like spots, crowded whitish gills, and grows with beech. Lactarius vietus is smaller, thinner-fleshed, more lilac-grey, with crowded gills and grows with birch.
Lactarius trivialis is far larger and slimier with violaceous tones and crowded gills, in wet birch and spruce forest. In all these cases the combination of host tree and gill spacing resolves the identification faster than cap colour, which is variable in every one of them.
