A firm, apricot-orange milkcap that bleeds copious white latex and stains every damaged surface rich brown. Its strong shellfish-like odour, developing with age, is the quickest field character.

Overview

The Fishy Milkcap is one of the largest and most solidly built members of the milkcap group, the fungi characterised by brittle, granular flesh and a latex ("milk") that seeps from broken gills. It is a heavy, dry-capped species in shades of apricot, tawny orange and warm russet, quite unlike the slimy grey and lilac milkcaps of birch and beech woodland.

Traditionally placed in Lactarius, this species and its close relatives are now frequently treated in the segregate genus Lactifluus, whose members typically have abundant, unchanging white latex, pale spore deposits and flesh that browns strongly on handling. Whichever name is used, the combination of size, colour and copious milk makes it one of the more memorable woodland fungi of warm summers.

It is distinctive because almost every part of it reacts: gills, flesh and stipe all discolour brown where bruised or cut, so old or well-handled fruitbodies look rust-stained. Combined with its penetrating fishy or crab-like smell, it is difficult to confuse with anything outside its own small group.

How to identify it

Cap

Broad, 5–13 cm across (sometimes larger), convex at first, then flattening and finally becoming shallowly depressed or funnel-shaped. The surface is dry and matt, sometimes minutely velvety, apricot-orange to golden brown or dull rusty tan, and frequently develops a fine network of cracks in dry weather. The margin is smooth, not striate, and only briefly inrolled.

Gills

Adnate to slightly decurrent, crowded and fairly narrow, whitish to pale cream or buff, sometimes with a faint pinkish tinge. They exude abundant white latex on the slightest damage, and every bruise, cut or insect track turns a distinct rusty brown within minutes.

Stipe

4–12 cm tall and 1–3 cm thick, firm and solid at first, dry, smooth or faintly velvety, coloured like the cap or a shade paler. It tapers slightly toward the base and browns readily where handled.

Flesh and latex

The flesh is white, thick and firm with the typical brittle, chalky texture of the group, browning where exposed. The latex is copious, sticky and white, unchanging in itself but drying dull brown and staining tissue brown. The odour is faint at first and becomes strongly fishy or reminiscent of shellfish in mature fruitbodies. Spore deposit white to very pale cream; spores are broadly rounded with a strong reticulate ornamentation.

Where and when it grows

The Fishy Milkcap grows on soil in broadleaf and mixed woodland, most often in association with oak and beech, but also with hornbeam, chestnut and at times conifers. It favours warm, well-drained slopes and woodland margins, appearing singly or in scattered troops rather than dense clusters.

It is chiefly a warm-season species, fruiting from midsummer through early autumn and often appearing after heavy summer rain when few other large fungi are showing. It is widespread across Europe and temperate Asia and is common in the eastern United States, where it is one of the most familiar large summer woodland fungi.

Ecological role

This is an ectomycorrhizal fungus. Its hyphae sheathe the fine roots of its host trees and penetrate between the outer root cells, forming an exchange interface through which the tree supplies sugars and the fungus delivers water, phosphorus and nitrogen drawn from a far greater soil volume than roots alone could reach.

The latex system is a defensive adaptation: pressurised laticifer hyphae run through the flesh, so that grazing by slugs or insect larvae releases a sticky flood that gums up mouthparts and oxidises to a brown, hardening residue. Fruitbodies are short-lived, decaying within days and returning nutrients to the litter layer, while the perennial mycelium persists in the soil around its host roots for many years.

Similar species

The Corrugated-cap Milkcap (Lactarius corrugis) is the nearest relative: it is darker chocolate to reddish brown, has a conspicuously wrinkled, velvety cap surface and noticeably darker cinnamon-buff gills. Lactarius hygrophoroides shares the orange-brown dry cap and white latex but has strikingly distant, thick, well-spaced gills and shows far less brown staining.

Lactarius rugatus and other velvety-capped relatives differ in cap texture and in the intensity of brown discolouration. Among unrelated fungi, Lactarius rufus is deeper brick red with a sharp central point and a much slimmer build, while chanterelles, sometimes matched on colour alone, have blunt forking ridges rather than true blades and produce no latex at all.
