Golden Chanterelle
Cantharellus cibarius

A golden-yellow funnel-shaped fungus with blunt forking ridges instead of true gills running down a solid tapering stem, and a distinctive apricot-like scent.
Overview
Cantharellus cibarius is the type species of Cantharellus, a genus in the family Cantharellaceae that sits some distance from the ordinary gilled fungi. Its spore-bearing surface is not made of thin blade-like gills but of blunt, thick, forking, vein-like ridges that are simply folds of the fruiting body's outer surface, decurrent and continuous with the stem. These false gills cannot be cleanly detached from the cap flesh, whereas the true gills of an ordinary agaric can be pushed sideways off the cap.
The whole fruiting body is a single continuous piece of fibrous tissue, with no clear division between cap and stem, and its flesh tears into strings rather than snapping. The colour is a fairly even egg-yellow to golden or apricot throughout, occasionally paler or almost white in some forms, and the surface is dry and slightly matte rather than shiny.
What has long been called C. cibarius across the Northern Hemisphere is now recognised as a complex of many species. European material retains the name in a stricter sense, while North America has Cantharellus formosus in the Pacific Northwest, the large Cantharellus californicus in California, Cantharellus roseocanus with conifers, and Cantharellus flavus and others in the east. All share the same overall construction.
How to identify it
Cap
3-12 cm across, convex with an in-rolled margin when young, then flattening and finally becoming shallowly funnel-shaped or vase-like with a wavy, lobed and often irregularly split margin. The surface is egg-yellow, golden-yellow to apricot, dry, smooth and slightly matte, sometimes paling in dry sun. There is no clear boundary between cap and stem; the whole structure is continuous.
False gills
The undersurface bears blunt, thick, shallow, vein-like ridges rather than blades. They fork repeatedly, are connected by cross-veins in the manner of wrinkles, run well down the stem as decurrent folds, and are the same yellow as the cap or slightly paler. Pressing a thumb sideways across them will not shear them off, because they are folds of the cap flesh itself rather than separate plates.
Stipe
3-8 cm tall and 0.5-2 cm thick, solid throughout with no hollow centre, tapering downward toward the base, the same golden-yellow as the cap or a little paler, smooth and dry. There is no ring and no volva.
Flesh & spore print
Flesh thick, firm, white to pale yellow, fibrous, tearing in strings rather than breaking cleanly. The smell is distinctly fruity, usually described as apricot. There is no colour change when bruised beyond a slow dull ochre or rust discolouration on old damaged surfaces. The spore print is pale yellow to cream.
Where and when it grows
The Golden Chanterelle is ectomycorrhizal and grows on soil, typically among moss, in both broadleaf and coniferous woodland. Oak, beech, birch, spruce and pine are its commonest partners. It favours acidic, well-drained, nutrient-poor ground: mossy banks, the sides of woodland paths, sloping ground beneath mature trees and old undisturbed woodland floors, where it appears in scattered troops or dense groups following the run of a root system.
Fruiting extends from early summer into autumn, and in mild oceanic climates into early winter. The species in the broad sense is widespread across Europe, temperate Asia and North America, though most North American populations are now assigned to segregate species. Colonies are long-lived and productive year after year from the same patch of ground, since the underlying mycorrhizal network is perennial.
Ecological role
Chanterelles form ectomycorrhizas, sheathing the fine roots of their partner trees and exchanging soil-derived phosphorus, nitrogen and water for photosynthetic sugars. Their strong preference for mossy, nutrient-poor and undisturbed ground reflects a sensitivity to soil disturbance and enrichment, and populations decline where woodland floors are compacted, cleared or fertilised.
The mycelium is perennial and slow to establish, which is why productive patches recur in exactly the same place for decades and why the species is a useful indicator of woodland continuity. Attempts to cultivate chanterelles have largely failed because the fungus depends absolutely on a living tree partner. The fruiting bodies are tough and long-lasting compared with most agarics, persisting for two or three weeks and providing a durable substrate for beetles and fly larvae.
Similar species
The False Chanterelle (Hygrophoropsis aurantiaca) is the most frequent point of confusion. It has true gills that are thin, blade-like, crowded, repeatedly forked and easily separated from the cap flesh, a softer and thinner texture, a hollow-tending stem, and a colour scheme with a darker orange centre grading to a paler margin rather than the even egg-yellow of a chanterelle. Its flesh is soft rather than fibrous and it lacks the apricot scent.
Jack-o'-lantern species (Omphalotus olearius in Europe, Omphalotus illudens and Omphalotus olivascens in North America) are deep orange throughout, grow in large fused clusters directly on stumps and buried wood rather than singly on soil, and have true sharp-edged gills. Cantharellus cinnabarinus is unmistakably pink-red, and Craterellus lutescens has an almost smooth, wrinkled undersurface with barely developed ridges and a hollow stem. The blunt forking non-detachable ridges, solid tapering stem and stringy flesh together separate a true chanterelle from all of these.
