A pale, unassuming woodland Hebeloma recognised chiefly by its extremely strong sweet, scorched-sugar scent, clay-brown spore deposit and finely fringed gill edges.
Overview
Hebeloma sacchariolens belongs to a large and notoriously difficult genus of ectomycorrhizal agarics in the family Hymenogastraceae. Most Hebeloma species share a dull palette of creams, buffs and clay-browns, a smooth or slightly greasy cap, pale gills that darken to snuff-brown as the spores mature, and a ringless whitish stipe that is minutely floccose towards the apex. Because so many members of the genus look alike, field workers lean heavily on scent, stipe base shape and microscopic spore ornamentation to separate them.
This species is one of the few in the genus that can be picked out reliably in the field without a microscope, because its odour is so unusual and so powerful. Fresh fruit bodies release a heavy, cloying sweetness often likened to burnt sugar, scorched caramel or an overripe, slightly synthetic fruit perfume. The smell carries for some distance on damp air and frequently announces the fungus before it is seen.
In the wider fungal world Hebeloma sacchariolens sits among the root-partner fungi of damp deciduous woodland and scrub. It is a modest, short-lived agaric that appears in scattered troops in leaf litter and mossy ground, and it forms part of the broad autumn assemblage of clay-spored agarics that includes Cortinarius, Inocybe and Galerina.
How to identify it
Cap
Usually 2-5 cm across, at first hemispherical or bluntly convex, expanding to broadly convex or flat with a low, rounded centre. The surface is smooth and unadorned, pale ochre-buff to cream or dull ivory, often slightly darker and warmer toned in the middle. It becomes greasy to faintly sticky in wet weather and dries silky and matt. The margin is incurved when young, sometimes minutely fringed with pale veil fibres, and lacks radial grooves.
Gills
Moderately crowded, attached to the stipe by a narrow adnate to emarginate (notched) junction. They are pale greyish-cream at first and gradually take on the clay to snuff-brown colour of the ripening spores. Under a hand lens the gill edge is whitish and finely fringed or floccose, and in humid conditions some collections show small pale droplets along the edges that leave brown spots as they dry.
Stipe
Around 3-8 cm long and 4-10 mm thick, cylindrical or slightly widening downwards, occasionally with a somewhat swollen base. It is white to pale buff, dry, and covered in the upper part with fine mealy or floccose scurf that gives a frosted appearance. There is no true ring and no volva; the stipe browns gradually from the base upwards with age and handling.
Flesh & spore print
The flesh is whitish and does not change colour appreciably when cut or bruised, though the stipe base may discolour brownish in old material. The defining character is the odour: intensely sweet, heavy and lingering, suggesting burnt sugar or a sugary artificial fruit essence. The spore print is clay to snuff-brown; the spores themselves are large for the genus, almond-shaped and conspicuously roughened.
Where and when it grows
This is a fungus of damp, humus-rich ground under broadleaf trees. It is most frequently found with willow and birch, but also occurs with poplar, alder, hazel and oak, and turns up in mossy dune slacks where creeping willow forms low thickets. It prefers moist, sheltered situations: woodland flushes, stream banks, damp rides, boggy scrub margins and the mossy edges of paths.
Fruiting runs from late summer through autumn, peaking after prolonged rain, and the fungus generally appears in scattered groups or small troops rather than tight clusters. The species is widespread across temperate Europe and is recorded across northern temperate North America and parts of Asia, though because of the difficulty of the genus many records are aggregated under broader species concepts.
Ecological role
Hebeloma sacchariolens is ectomycorrhizal. Its mycelium sheathes the fine feeder roots of its host trees, forming a mantle and an inward-growing Hartig net between the root cells. Through this interface the fungus supplies the tree with water, nitrogen and phosphorus scavenged from the litter layer, and receives sugars manufactured in the leaves in return. This partnership explains why the fungus is tied so closely to willow and birch stands and why it never appears on wood or dung.
Many Hebeloma species are pioneer mycorrhizal colonists that thrive in disturbed, nutrient-flushed or recently colonised ground, and this species follows that pattern in dune slacks and along disturbed damp margins. The fruit bodies are short-lived, releasing clay-brown spores over a few days before collapsing back into the litter, where the mycelium persists year-round on the root systems of its partners.
Similar species
Most confusion is with other members of the genus. Hebeloma crustuliniforme has a similar pale, greasy cap but a mealy, radish-like odour rather than a sweet one, a more strongly bulbous stipe base, and gills that weep watery droplets very freely. Hebeloma mesophaeum is separated by a distinctly darker reddish-brown cap centre contrasting with a pale margin, and by an obvious fibrillose veil zone banding the stipe; it favours birch and pine on disturbed ground. Hebeloma radicosum is much larger, with a deeply rooting, tapering stipe and a distinct ring above a scaly stipe surface.
Outside the genus, small Cortinarius species can look superficially similar but young specimens show a cobwebby cortina between cap margin and stipe and mature with a rustier, more red-brown spore deposit. Inocybe species tend to have radially fibrillose or split cap surfaces and a duller, more earthy tone, and their spore deposit is a dull tobacco-brown; none combines the smooth pale cap, fringed gill edge and overpowering sweet scent of H. sacchariolens.
