Hedgehog Mushroom Identification Guide

Hydnum repandum hangs its spores on crowded brittle spines instead of gills. This guide covers the buff wavy cap, the toothed underside, the off-centre stem and how to sort it from the other toothed fungi.

The First Impression

Seen from above, the Hedgehog Mushroom is unremarkable: a pale buff or apricot-cream cap, matt and slightly suede-like, with an irregular wavy outline, sitting low in moss or leaf litter. It is the underside that transforms the encounter. Instead of gills or pores there is a dense forest of soft, brittle spines hanging downward, cream to pale pinkish-buff, which is why it is called a tooth fungus.

You usually find them in mixed or coniferous woodland on shaded ground, often in mossy hollows, on banks or along the margins of paths. They rarely grow singly. Typically there is a troop, a line or a broad arc of them, and pushing aside the leaf litter around the first one usually reveals several more, sometimes fused together in twos and threes where their caps have collided as they expanded.

Reading the Cap

Caps run 4 to 15 cm across, occasionally larger. The shape is irregular from the start: convex, then flattening and often becoming shallowly depressed or slumped in the middle, with a margin that is wavy, lobed, inrolled and rarely a neat circle. Adjacent caps frequently fuse into a lumpy, multi-lobed sheet.

The colour ranges over pale cream, buff, pale ochre, warm apricot and pale orange-tan; deeper orange forms occur, and shaded specimens can be almost whitish. The surface is dry, matt and finely felted, like fine suede or kid leather, never sticky or slimy and never scaly. Handling or bruising leaves a deeper orange-buff smudge, which develops slowly over a minute or two. The cuticle does not peel readily.

The Spines

Turn the cap over. The underside carries crowded, pendent spines 2 to 6 mm long, sometimes to 8 mm, tapering to fine points, and they are typically shorter near the cap margin than under the centre. They are cream, whitish or pale pinkish-buff, ageing to a deeper buff and staining orange where damaged.

Two qualities matter. First, the spines are brittle and fragile; brush them with a fingertip and they snap off cleanly and fall like fine sawdust. Second, look at where they meet the stem. In this species the spine layer runs a little way down the stem, decurrent, so the boundary is a slope rather than a clean stop. Note also that the spines are true separate teeth, each free from its neighbours, not a mass of folds or blunt ridges.

The Stipe

The stem is short and thick relative to the cap, 3 to 8 cm tall and 1 to 3.5 cm across, often stout and slightly swollen at the base, solid and firm. It is whitish to cream, matt, and it stains orange-buff or rusty where handled, sometimes long before the cap does.

A characteristic point is that the stem is frequently off-centre, attached toward one side of the irregular cap rather than in the middle. That eccentric attachment, combined with the lobed cap, gives fruitbodies their lopsided look. Where two fruitbodies have fused, a single lumpy cap may sit on two stems.

Flesh and Colour Change

Cut the fruitbody vertically. The flesh is white to pale cream, thick, firm and notably brittle; a piece of the cap snaps rather than tearing, in the same way a Russula does. Where cut or bruised it develops a slow orange-buff to yellowish discolouration, most noticeable after several minutes and strongest near the surface. There is no blue, green or black reaction, no latex and no zoning; the cut face is uniform, not banded or marbled. The smell is mild and pleasantly fungal, sometimes faintly fruity.

Taking a Spore Print

Cut a cap free and lay it spines-down on dark paper, covered, for four to eight hours. The print is white to pale cream, and the fallen spore dust is often accompanied by broken spine fragments, so brush the deposit gently to judge the true colour. Under a microscope the spores are smooth, broadly ellipsoid to almost round, and colourless, without warts, spines or ornament, and they are not amyloid.

Substrate, Partners and Season

The Hedgehog Mushroom is ectomycorrhizal, forming partnerships with tree roots, and so it always fruits from soil, moss and leaf litter, never from wood. It associates with both conifers and broadleaves: spruce, pine, fir, beech, oak and birch are all frequent partners, and it is common in mature mixed woodland with a mossy floor and in conifer plantations of some age.

Because the mycelium spreads outward through the soil, fruitbodies arrange themselves in lines, arcs and rough rings, and productive patches recur in the same places over many seasons. The main fruiting period is late summer through autumn, roughly August to November in temperate regions, continuing until hard frost, with the heaviest flushes following a week or two of steady rain. Caps often lift the litter rather than emerging cleanly, so scan for suspicious domes in the leaf layer.

Separating It from Look-alikes

The toothed underside cuts the field down enormously; only a handful of groups share it.

Hydnum rufescens and Hydnum umbilicatum are the closest relatives. They are smaller and more slender, with caps typically under 7 cm, a stronger orange to rufous colour, a distinctly depressed or navel-like centre, a more or less central and slimmer stem, and spines that stop at the stem rather than running down it. Their overall build is neat and symmetrical where Hydnum repandum is broad and lopsided.

Sarcodon species such as Sarcodon imbricatus are far larger and darker, with coarse, raised brown scales all over the cap, greyish spines, tougher flesh and a brown spore print, so the print alone separates them.

Hydnellum and Phellodon species also have spines, but their flesh is corky, tough and often concentrically zoned in section, frequently with blue, black or violet tones, and their fruitbodies fuse around twigs and grass stems. They cannot be snapped like brittle flesh.

Auriscalpium vulgare has spines but is tiny, dark brown, hairy, with a lateral stem, and grows on buried pine cones.

From above, chanterelles are often confused with it because the cap colour and wavy shape are similar and they often grow nearby, but turning one over reveals blunt, forking, vein-like ridges running down the stem instead of separate hanging spines, and chanterelle flesh is stringy rather than brittle.

Finally, various pale Clitocybe and Lactarius species can resemble it from above, but both have true gills, and Lactarius exudes milk from cut flesh.

Why is it confused with chanterelles?
From above they look alike: both have pale apricot to buff, wavy, irregular caps, both grow from mossy woodland soil with the same trees, and they often fruit in the same places at the same time of year. The undersides are entirely different. A chanterelle has blunt, forking, vein-like ridges that run down the stem, while a Hedgehog Mushroom has separate, fragile, needle-like spines that break off when brushed.
