The heaviest of the oyster mushrooms, with a small greyish-tan cap perched on a thick club-shaped white stem, growing from the dead root crowns of umbellifers in dry grassland.
Overview
The King Oyster breaks nearly every rule of its genus. Where other Pleurotus species are stalk-reduced fans clinging to logs, this one has a massive, nearly central, club-shaped white stem carrying a comparatively small cap, and it grows from plant roots in open grassland rather than from wood.
Its host plants are umbellifers of the family Apiaceae. The best known partner is field eryngo, Eryngium campestre, from which the species takes its epithet, but various Ferula, Laserpitium and Cachrys species are used across its range. Fruit bodies push up from the soil beside the dead or dying root crown of the host, and can look at first glance like a stout grassland mushroom with no wood in sight.
Several regional varieties are recognised on the basis of host plant and colour, and the group as a whole is widespread across the drier grasslands of southern Europe, North Africa, the Middle East and central Asia. Among the oysters it is the most substantial and the longest-lasting in the field.
How to identify it
Cap
The cap is 4-12 cm across, convex at first, later flattening and often becoming shallowly depressed with a wavy or slightly inrolled margin. The surface is dry, smooth to finely fibrillose, and greyish-brown, tan or pale buff, usually darker over the centre and sometimes finely cracked in dry weather. Relative to the stem the cap looks distinctly undersized.
Gills
Gills are decurrent, running well down the stem, crowded and moderately narrow, white to cream and sometimes ageing pale buff. They are frequently cross-veined and interconnected where they meet the stem.
Stipe
The stem is the outstanding character: thick, solid, firm and white, 4-12 cm long and 2-5 cm or more wide, cylindrical to club-shaped or barrel-shaped, and central to only slightly eccentric. It is smooth or very finely fibrillose, without ring or volva, and typically makes up most of the fruit body by bulk.
Flesh and spore print
Flesh is thick, firm and white throughout, unchanging when cut. The spore print is white to pale cream, occasionally with the faintest lilac tint.
Where and when it grows
This species grows in open, dry, often calcareous grassland, steppe, garrigue and scrubby field margins, always in association with umbelliferous plants. Fruit bodies arise from the soil directly over the dead or declining root crown of the host, with Eryngium campestre the classic partner and various Ferula and Laserpitium species used elsewhere.
Its natural range covers the Mediterranean basin, North Africa, the Middle East, the Caucasus, central Asia and parts of eastern Asia, extending north into parts of central Europe. Fruiting occurs mainly in spring and again in autumn, tracking the periods when rain and moderate temperatures coincide in a dry-summer climate.
Ecological role
The King Oyster is best described as a weak parasite and saprotroph of umbellifer roots. It colonises the root and root crown tissue of its host plant, contributing to its decline, and then continues to feed on the dead tissue, breaking down the woody taproot below ground. It is the only widespread Pleurotus to have made this shift from wood to herbaceous root systems.
Because the underground root crown is a compact, durable food source, colonies tend to be long lived and reappear at the same spot for years. Ecologically the fungus is part of the turnover of deep-rooted perennials in dry grassland, opening space for other plants and returning root carbon to the soil in a habitat where surface litter is scarce.
Similar species
Other Pleurotus species are readily separated by habit: they grow directly on wood and have short lateral or strongly eccentric stems and thin caps, whereas this species stands on a thick, nearly central stem in open grass. Pleurotus nebrodensis is a close relative with a paler, whiter cap that grows with Prangos in mountain limestone grassland.
Clitocybe and Leucopaxillus species may occur in the same grassland with white decurrent gills and a white spore print, but their stems are more slender and even, they lack any association with umbellifer roots, and their caps are proportionally much broader than the stem. Lentinus tigrinus has a scaly cap and finely toothed gill edges and grows on wood. Lepista species have pinkish spore prints and lilac or buff tints in the flesh.
