Overview
The Late Fall Oyster (Sarcomyxa serotina, long known as Panellus serotinus) is one of the last conspicuous gilled fungi of the year in northern forests, often appearing when frosts have already flattened the autumn flush. Its combination of olive-green cap and warm yellow-orange gills is unlike anything else fruiting at that season.
The species was moved out of Panellus into the segregate genus Sarcomyxa on the basis of molecular data and its gelatinised cap layer. Structurally it sits between the true oysters and the small tough panelloid fungi: it has substantial flesh like an oyster, but a rubbery-gelatinous zone beneath the cap skin and a short, thick, distinctly scurfy lateral stipe.
In East Asia it is a familiar late-season woodland fungus known as mukitake, and in Europe and North America it is a well-known component of the November mycota on beech, birch, alder and maple. Colour is variable — some collections are strongly olive, others yellowish, purplish-grey or almost brown — but the gill colour and the tacky, slightly gelatinous cap are reliable.
How to identify it
Cap
The cap is 3–12 cm across, kidney- to fan-shaped or semicircular, convex then flattening. The surface is smooth and distinctly tacky to slightly slimy when moist, drying to a dull sheen, and coloured olive-green, yellow-green, olive-brown or occasionally purplish- to violet-grey, usually with paler yellowish margins. Fine radial fibrils are sometimes visible under the gelatinised skin.
Gills
Gills are crowded, narrow, and coloured pale yellow to orange-yellow or ochre — a warm tone that contrasts strongly with the cool olive cap and is the single most useful field character. They are shortly decurrent, running a little way onto the stipe stub, with even edges, and they hold their colour into age.
Stipe
The stipe is short, stout and lateral, usually only 1–3 cm long and up to 2 cm thick, sometimes barely more than a swollen attachment point. It is yellowish to olive-brown and conspicuously covered in dark brown to blackish scurfy granules or fine scales, a texture quite unlike the smooth white stipe stubs of true oysters.
Flesh & spore print
The flesh is thick, whitish to pale yellow, firm and elastic, with a gelatinous layer immediately below the cap cuticle that can be seen as a translucent zone in section. It does not change colour when cut. The spore print is white to very pale yellowish; spores are small, smooth, sausage-shaped and amyloid.
Where and when it grows
Sarcomyxa serotina fruits on dead hardwood — fallen logs, standing dead trunks, large branches and stumps — with beech, birch, alder, maple, poplar and willow among its most frequent substrates. It occasionally occurs on conifer wood but is overwhelmingly a broadleaf species. Fruitbodies form overlapping shelves and tiers along the upper flanks of logs, often in considerable numbers on a single trunk.
Its season is distinctly late: from October through December in much of the north temperate zone, continuing during mild spells well after most autumn agarics have gone. The gelatinised tissue tolerates freezing and thawing, so fruitbodies can persist for weeks in cold weather. The species is widespread across Europe, northern Asia including Japan and Korea, and northern and montane North America.
Ecological role
This is a saprotrophic white-rot fungus of hardwood, degrading lignin and cellulose in dead trunks and large limbs, generally attacking wood in the middle stages of decay after bark has begun to loosen. Its late fruiting exploits a seasonal niche with little competition for spore dispersal from other wood fungi, and the frost-tolerant gelatinous tissue allows it to continue releasing spores through cold snaps that would destroy softer mushrooms.
By accelerating the breakdown of substantial hardwood logs it contributes to nutrient cycling and to the structural softening of dead wood that makes it habitable for invertebrates and cavity nesters. Colonies can fruit from the same log for several consecutive winters, indicating a long-lived mycelium occupying a large volume of the trunk.
Similar species
Pleurotus ostreatus overlaps in season on the same logs but has a dry, non-gelatinous grey to brown cap, white to cream gills rather than yellow-orange ones, and a smooth white stipe stub without scurfy dark granules. Panellus stipticus is far smaller, buff to cinnamon, with a suede-textured cap and a very short pale stalk.
Phyllotopsis nidulans has similar warm orange gills but the cap is also bright orange and densely woolly-hairy rather than olive and tacky, and it lacks any gelatinous layer. Hohenbuehelia species share a gelatinous subcuticular layer but are grey to brown with white gills and a much smaller, more shell-like fruitbody. Where colour is atypical, the combination of tacky olive-tinged cap, warm yellow gills, scurfy dark-dotted lateral stipe and late-winter fruiting is diagnostic.
