A practical walk-through for Lactarius hepaticus: the dark liver-brown pine-wood milkcap whose scanty white latex turns sulphur-yellow within a minute on a white tissue.
The Setting You Will Be Standing In
The Liver Milkcap is a pine specialist, and knowing that shapes the search. You are standing on sandy, acid, free-draining ground: a Scots pine plantation, a heathland stand of self-sown pine, a coastal pine belt behind dunes, or the mossy edge of a conifer ride. The ground cover is needle litter with cushions of Leucobryum or Dicranum moss, sometimes with Sphagnum in the wetter hollows and heather nearby. In that setting, from late summer well into early winter, small dark caps push up through the needles in scattered troops, often half buried and easy to miss because their colour is so close to that of wet pine litter.
The first impression is of a small, dark, unassuming milkcap with no zoning, no bright colours and nothing obviously distinctive. Everything hinges on one test, done properly, with a white tissue.
Step One: Confirm You Are in the Right Family
Before worrying about the species, confirm the genus. Snap the stipe across. Russulaceae flesh is granular and brittle: it breaks like a piece of chalk with a clean crumbly fracture, not into long fibres. Then cut across the gills of a young fruitbody with a sharp blade and watch the cut for thirty seconds. If beads of latex well up along the cut, you are in Lactarius rather than Russula. Both steps take a moment and both are worth doing every time.
Step Two: The Cap
The cap is 3-7 cm across, occasionally to 8. Young caps are convex with a tightly inrolled margin; they flatten and then develop a shallow central depression, and many carry a small blunt nipple in the middle of that depression. The margin becomes wavy and sometimes slightly upturned in old material.
The surface is smooth and matt, faintly greasy rather than sticky in wet weather, and drying to a dull unpolished finish. Colour is the source of the name: a dark liver-brown, date-brown or deep chestnut, sometimes with a slightly redder flush at the centre and a marginally paler rim. Crucially, there are no concentric zones or bands, no bloom of frost-like scurf, and no shaggy fringe on the margin.
Step Three: The Gills
The gills are adnate to very slightly decurrent, crowded, and narrow in relation to the cap. Their colour begins pale ochre or pinkish-buff, considerably lighter than the cap, and deepens with age to a duller reddish or cinnamon shade. They fork here and there near the stipe, and bruised or damaged areas turn brown. Note that the strong contrast between a dark cap and much paler gills is part of the overall impression.
Step Four: The Stipe and Base
The stipe is 3-7 cm tall and 5-12 mm thick, cylindrical or narrowing slightly towards the bottom, smooth and dry, with no pits or spots. It is the same colour as the cap or a shade paler and more tawny-red, often paler still towards the apex. It is stuffed with a soft pith when young and becomes hollow with age. The base is bound into a plug of needles and moss by pale mycelium, so ease the litter apart rather than tugging.
Step Five: The Latex, and How to Read It Properly
This is the identification. The latex is white and, in this species, scanty, so choose a young, fresh, moist fruitbody; a shrivelled cap after a dry week may yield almost nothing.
Cut cleanly across the gills near the cap margin. Watch the drops on the flesh: they usually remain white or become only faintly yellowish there. Now take a piece of plain white tissue or a white handkerchief and press the cut gills firmly against it so that a smear of latex transfers. Wait, and watch the smear in daylight, not in the shade of the canopy. Within about thirty to sixty seconds the milk on the tissue turns a distinct sulphur or lemon-yellow. That yellowing on white tissue, in a dark liver-brown milkcap under pine, is the diagnosis.
Two practical notes: use white paper, because the yellow is subtle against cream or recycled stock, and give it a full minute before deciding, because a glance at ten seconds shows nothing.
Step Six: Flesh and Odour
The flesh is pale buff to whitish, tinged brownish under the cap cuticle and in the stipe cortex, and it browns slowly on exposure. The odour is weak and unremarkable, sometimes faintly aromatic in drying material, and it does not help much here. This is a species identified by pigment, habitat and the latex reaction rather than by smell.
Taking and Reading a Spore Print
Cut a mature cap free, lay it gill-side down on white paper or on a glass slide, cover it, and leave it for several hours in a still, humid place. Milkcap prints are best judged as a thick mass rather than a thin dusting, so leave it overnight if you can and scrape the deposit into a heap with a blade before judging the colour in daylight.
The print is pale cream to pale ochraceous, not white and not deep ochre. Under a microscope the spores are broadly ellipsoid, roughly 7-8.5 by 6-6.5 microns, and ornamented with warts and ridges that form an incomplete network. That ornament stains blue-black in Melzer's reagent, the amyloid reaction shared across the Russulaceae, and it is a satisfying confirmation of family if you have a scope.
Substrate, Season and Ecology
Lactarius hepaticus is ectomycorrhizal and strongly tied to pine, above all Scots pine. The mycelium sheathes the fine roots of its partner and trades soil-derived water and nutrients for tree carbon, which is why it appears only where pine roots run and why it is absent from pure broadleaf woodland. It favours acid, sandy, podzolised soils that are poor in nutrients, and it is common in plantations, on heaths, in dune pine belts and on old sandy commons. Fruiting begins in late summer, peaks through October and November, and can continue until the first hard frosts. Look for it alongside other pine associates such as Lactarius rufus, Suillus species and Chroogomphus.
Separating the Closest Look-alikes
Lactarius rufus shares the habitat and is the commonest confusion. It is larger and a brighter brick or rust-red rather than liver-brown, its cap is dry and matt with a distinct sharp central point, and its abundant white latex does not turn yellow on tissue.
Lactarius tabidus also yellows on tissue, which makes it the critical comparison. Separate it on colour and habitat: it is smaller and a pale tawny-orange to ochre-brown rather than dark liver-brown, its cap is thinner with a fine papilla, and it grows in damp broadleaf woodland, especially with birch, rather than under pine.
Lactarius subdulcis is a red-brown broadleaf species, especially of beech, with a smooth cap, paler gills and white latex that does not change on tissue.
Lactarius camphoratus is dark red-brown with a darker, often lined stipe and watery-white unchanging latex, and it develops a strong penetrating aromatic odour as it dries.
Lactarius quietus is an oak associate with a faintly zoned, spotted cap and cream latex that does not yellow.
Chroogomphus and Gomphidius species in the same pine litter have thick, waxy, strongly decurrent gills, fibrous flesh and no latex at all.
Russula species in the same habitat share the brittle granular flesh but produce no latex whatsoever.
