A dense, heavy, white-fleshed woodland mushroom overlaid with cinnamon-brown fibrous scales, carrying a thick flaring ring and a strongly aromatic odour, fruiting in arcs beneath pine.

Overview

Tricholoma matsutake is a member of Tricholoma, a large genus of fleshy, ground-dwelling, ectomycorrhizal agarics with white spore prints and gills that are notched or sinuate where they meet the stem. Most Tricholoma species lack any veil, which makes matsutake immediately unusual: it carries a substantial cottony partial veil that tears to leave a thick, flaring, persistent ring on the stem.

The fungus is built for pushing through compacted litter. It emerges from a dense underground mycelial mat, is firm and heavy in the hand, and often lifts a low mound of needles and soil as it rises, so experienced observers look for the disturbed hummock rather than the mushroom itself. Above the ring the stem is smooth and white; below it, the same cinnamon-brown fibrils that pattern the cap continue in patches and bands.

Its other signature is smell. Fresh specimens release a strong, penetrating, distinctly aromatic odour often likened to a mixture of cinnamon, pine resin and something faintly sweetish, detectable from a short distance and persisting long after the fruit body is picked up. Closely related fungi in Europe and North America share the same growth habit and scent, and the group as a whole is sometimes treated as a single wide-ranging complex.

How to identify it

Cap

5-20 cm across, occasionally larger, at first a tight hemisphere with a strongly inrolled margin, expanding slowly to convex and eventually flat. The ground colour is white to cream, overlaid with appressed, flattened, cinnamon-brown to reddish-brown fibrils and scales that are densest at the centre and break into separate patches toward the margin, letting the pale ground show through. The surface is dry, and the margin often retains hanging cottony veil fragments.

Gills

Crowded, fairly narrow, white to cream, and sinuate or notched where they meet the stem. They are covered in young specimens by a thick white cottony veil. Where handled or damaged they slowly develop rusty to reddish-brown stains, and the same discoloration appears along the gill edges in older fruit bodies.

Stipe

Stout and solid, 5-15 cm tall and 2-4 cm thick, often tapering to a narrowed rooting base that runs deep into the soil. Above the ring it is smooth and white; the ring itself is thick, membranous, flaring and persistent, white on the upper surface and often brownish beneath. Below the ring the surface carries the same brown fibrillose scaling as the cap, arranged in irregular bands.

Flesh and spore print

The flesh is thick, firm, dense and pure white throughout, barely changing on cutting. The odour is strong and aromatic. The spore print is white.

Where and when it grows

Matsutake is a fungus of nutrient-poor, well-drained, often sandy or gravelly mineral soils under pine. In Japan the classic host is Japanese red pine, in Korea and northern China it is also red pine and related species, and in northern Europe closely related material fruits under Scots pine and spruce. It tends to occur on sloping, sparse, sunlit stands where the litter layer is thin and the soil is low in organic matter and nitrogen.

Fruit bodies appear in autumn, usually triggered by a drop in soil temperature followed by rain, and emerge in rings, arcs or lines that mark the advancing edge of the underground colony. They frequently push up through needle litter and moss with only a domed hummock visible at first. The distribution covers eastern Asia, including Japan, Korea and China, with the wider species complex extending across northern Europe and into western North America.

Ecological role

This is an ectomycorrhizal fungus, forming an intimate sheath around the fine roots of pine and supplying the tree with water and mineral nutrients in return for carbon. Its mycelium builds a distinctive dense, whitish, soil-binding mat known in Japanese as a shiro, which excludes many other soil organisms and gradually expands outward as a ring, dying out at the centre. A single shiro can be decades old and expands only slowly each year.

The association is unusually fussy about site conditions. Shiro development is suppressed by accumulating leaf litter, dense undergrowth and nitrogen-rich soil, so colonies decline as pine stands age and organic matter builds up. Traditional raking and thinning of pine woodland in Japan maintained exactly the sparse, mineral-soil conditions the fungus requires, and its decline in many areas tracks the abandonment of that woodland management.

Similar species

Tricholoma magnivelare, the western North American counterpart, is whiter overall with much sparser brown scaling that develops mainly with age, but shares the flaring ring, the notched gills and the aromatic odour. Tricholoma caligatum is smaller and darker, with sharply contrasting dark brown to blackish scales over a white ground and a more fragile ring. Catathelasma imperiale is similarly stout and ringed but has clearly decurrent gills running down the stem and a doubled ring structure.

Amanita smithiana is a stout white mushroom of the same conifer habitats and can look superficially similar, but its gills are free from the stem rather than notched, its cap is smooth or bears soft cottony patches rather than appressed brown fibrils, its ring is thin and often ragged or collapsing, and its stem base is enlarged and rooting with soft scaly veil remnants rather than banded brown fibrils.
