Meadow Mushroom Identification Guide
The classic white pasture Agaricus, with free gills that pass from deep pink to blackish brown, a single fragile ring and a tapering ringless base. This guide covers the full field sequence and the morphological tests that separate it from other white grassland agarics.
First Impression and the Habitat You Are In
This is a mushroom of open ground. You are standing in grazed pasture, on a horse paddock, in a hay meadow, on old lawn or coastal dune grassland, and the fruit bodies show up as clean white domes pushed just above the sward. They frequently appear in troops, arcs or full fairy rings, sometimes in the hundreds, and the ring may be marked by darker, faster-growing grass.
The silhouette is stocky and low: a fairly short stipe carrying a thick convex cap, so the whole thing looks compact and grounded rather than tall. Fresh caps are matt white and clean; older ones become dingy cream or take on faint brownish tones where they have been rained on. The first move is always the same. Turn one over. Pink gills under a white cap in short grass is the starting point for the whole identification.
Reading the Cap
The cap runs from about 4 to 10 cm across, occasionally larger on rich ground. It begins hemispherical or almost globose with the margin tucked tightly against the stipe, then expands through convex to broadly flat, usually keeping a slightly incurved edge.
The surface is dry, never viscid. Texture varies from smooth and silky through minutely fibrillose to, in weathered specimens, faintly scaly with small appressed pale brownish fibrils, particularly over the centre. Colour is white to off-white, ageing dull cream or buff. Handling and rain produce dirty brownish smears rather than any vivid bruising reaction.
At the margin of a young cap you often find remnants of the partial veil hanging as a fine white fringe. Note whether the cap flesh is thick: this species has a solidly built cap, typically 5 to 10 mm of white flesh above the gills.
The Gills: The Central Character
The gill sequence is the backbone of the identification, and it must be checked on more than one specimen because the colour is age-dependent.
In a young unopened button, split lengthwise, the gills are already a clear, bright pink, sometimes described as vivid rose or salmon pink. As the cap opens they intensify slightly, then darken through dull pink to purplish brown, and finally to a very dark blackish brown in fully mature caps. A patch of several fruit bodies of different ages lets you see the whole series at once, which is far more convincing than any single specimen.
Attachment is free: the gills stop short of the stipe, leaving a narrow gutter all the way round. They are crowded, narrow, and taper toward both the margin and the stipe. Edges are even and concolorous.
Bright pink young gills are the key point. Several other white grassland agarics either keep pale greyish-pink gills throughout youth or never develop pink at all, and this species runs distinctly and unambiguously pink before it browns.
Stipe, Ring and Base
The stipe is short in proportion to the cap, generally 3 to 7 cm long and 1 to 2 cm thick, often shorter than the cap width. It is white, smooth to slightly silky, solid or becoming loosely stuffed, and it tapers gently downward to a narrowed or bluntly pointed base.
The base is a decisive character. There is no marginate bulb, no abrupt swelling, no rooting spindle and, above all, no volva, no sac and no rim of loose tissue. Always dig the whole stipe out rather than cutting or pulling the cap off, because base shape cannot be assessed from a snapped stem.
The ring is thin, white, single, sited around the middle of the stipe, and fragile. It frequently tears into fragments or disappears entirely on older specimens, leaving only a faint fibrillose zone. It is not the thick, two-layered, cogwheel-patterned structure found in some larger relatives.
Flesh, Cut Surface and Odour
Cut a fruit body from cap apex to base with a sharp knife and watch the exposed surfaces for at least a minute. The flesh is white, thick and firm. It may slowly develop a faint pinkish or pale brownish blush where cut, particularly in the stipe, but there is no rapid or vivid colour change.
The critical negative test is at the very base. Slice the bottom centimetre of the stipe longitudinally. In this species it stays white or turns barely pinkish. It does not flush bright chrome yellow within seconds, which is the behaviour of a different white pasture Agaricus described below.
The odour is plain and mushroomy. There is no strong anise or almond note and no sharp phenolic or inky smell. Odour is best judged by enclosing a cut specimen in a container for a minute and then opening it.
Taking a Spore Print
Remove the stipe flush with the gills, place the cap gills-down on white paper with a strip of dark card underneath one side, cover it with a bowl and leave it for four to six hours. Mature caps with dark gills drop heavily and quickly.
The print is a deep purple-brown to blackish brown. This is the confirmation that you are in Agaricus and not in a white-spored genus. Under the microscope the spores are smooth, thick-walled, ellipsoid and roughly 6 to 8 by 4 to 5.5 micrometres, without a conspicuous germ pore.
Substrate and Season
This is a soil-dwelling saprotroph of grassland, strongly associated with grazed or mown turf enriched by livestock. It fruits from late summer through autumn, typically two to five days after substantial rain following a warm spell, and it can flush repeatedly in the same field through the season. It is not a woodland species, does not fruit from wood, and its appearance under trees should immediately prompt a rethink.
Separating the Look-alikes on Morphology
Agaricus arvensis and relatives. Larger and taller, with the cap often flushing yellowish where rubbed. Young gills are pale greyish or whitish rather than bright pink, and only later become brown. The ring is thick, double and typically bears a cogwheel or star-like pattern of scales on its underside. The odour is distinctly of anise or almond.
Agaricus xanthodermus. The most important morphological separation in the same habitat. Its stipe base is usually abruptly bulbous and flattened at the bottom, and when cut it flushes vivid chrome yellow within seconds, fading later to dull brown. Young gills are pale greyish pink at best. The odour is sharp, phenolic and unpleasant, strongest at the base and when heated. The cap is often more squared off when young.
Agaricus bitorquis. A hard-fleshed urban species of compacted ground, path edges and roadsides. It has a distinctly double, sheathing ring low on the stipe and a very firm cap that often emerges pushing up gravel.
Agaricus bisporus in its wild form. Caps usually clothed in brownish fibrils or scales, gills passing through a similar sequence, and a ring more persistent. Microscopically the basidia bear two spores rather than four.
Leucoagaricus leucothites. White, ringed, grassland-dwelling and roughly the right size, but the gills remain white to faintly pinkish-cream and never darken to brown, and the spore print is white to pale pink. Always take a print from any white grassland agaric with pale gills.
Clitopilus prunulus. Softer, greyish white, with strongly decurrent gills that run down the stipe, no ring at all, and a salmon-pink spore print.
Amanita species. Any white agaric with gills that stay white must be examined at the base and print-tested. Amanita has free white gills that never turn pink or brown, a white spore print, and a stipe base that is bulbous, sac-like or wrapped in a membranous volva. Dig the entire base out of the soil intact before making any determination.
