Milk-white Brittlegill Identification Guide
A practical field routine for Russula delica, the squat, soil-encrusted white funnel of woodland floors, keyed on chalky brittle flesh, decurrent gills and the absence of any latex.
The Setting and the First Impression
The Milk-white Brittlegill often announces itself before it is properly visible. Walking a mixed wood in late summer or autumn, you notice a low hummock in the litter, a dome of lifted leaves, moss and soil with something hard beneath it. Push the debris aside and a squat, thick, dirty-white cap emerges, still half buried, with soil grains and leaf fragments cemented onto its surface. Fruit bodies frequently spend much of their lives underground and only shoulder their way clear late in development.
The first impression is of solidity. This is a heavy, dense fungus with a short thick stem and a broad funnel-shaped cap, quite unlike the fragile, brightly coloured brittlegills most people picture. The colour is a chalky white to cream, almost invariably stained ochre, tan or rusty brown wherever soil has touched it, so a specimen in the wild rarely looks as clean as its name suggests.
Reading the Cap
Caps range widely, from about 5 cm to as much as 16 cm across on well-fed specimens. Young caps are convex to flattened with a strongly inrolled, almost furry-looking margin; with age the centre sinks so that the cap becomes broadly depressed and finally deeply funnel-shaped, with the margin remaining inrolled far longer than in most brittlegills.
The surface is dry, matt to slightly felty, never viscid when handled clean, and it is not separable as a peelable skin over more than a few millimetres at the edge. Wipe a patch clean and the underlying colour is white to ivory; leave it alone and it is stained a patchy ochre-brown. Older caps often crack radially. The margin is thick, blunt and only rarely striate.
Reading the Gills
Turn the cap over and check three things in order.
First, attachment. The gills are clearly decurrent, running down onto the stipe apex, which combined with the funnel shape gives the fruit body an almost Lactarius-like profile.
Second, spacing and texture. Gills are moderately spaced to fairly close, unequal in length with occasional forking near the stipe, thickish and rigid, and they shatter when you draw a finger across them rather than bending. That shattering is the brittlegill signature and it comes from the rounded, balloon-like cells that fill the tissue.
Third, colour, especially at the stipe junction. Gills are white then cream, sometimes with a faint ochre flush. Look closely at the point where the gills meet the top of the stipe: there is often a distinct bluish-green or turquoise tint forming a narrow band or zone. That blue-green line is one of the best characters in this group, and it is worth checking on several specimens because it is variable.
The Critical Negative Test
Cut a gill cleanly with a knife on a fresh, moist specimen and watch for thirty seconds. Nothing should exude. No white drop, no watery bead, no milk of any kind. This single negative result is what separates the Milk-white Brittlegill from the large white milkcaps that share its shape, size and habitat and that fool people constantly.
Do the test on a young specimen if you can, because latex production drops off sharply in old or dried-out fruit bodies of any milkcap, which can produce a false negative in the other direction.
Stipe, Base and Flesh
The stipe is short and stout, typically only 2 to 5 cm tall but 2 to 4 cm thick, so it is often broader than it is long. It is white, dry, firm and solid, usually smooth or slightly uneven, and stained brown wherever it has been handled or scraped by soil. In some collections that blue-green tint from the gills extends a short way down as a narrow band at the apex.
The base tapers slightly and grips a tight ball of soil and litter, which you should tease apart rather than tug: there is no volva, no ring, no bulb and no rhizomorph, and confirming those absences is part of the routine.
Flesh is white, thick, hard and compact, and it snaps like a piece of chalk when you bend a wedge of cap, giving a clean fracture surface rather than a fibrous tear. It does not change colour appreciably on cutting, though very old flesh may slowly discolour a dingy brownish. There is no gel, no latex and no colour flash.
Taking and Reading the Spore Print
Because pale prints are easy to misjudge and this genus is keyed on subtle print shades, take this step seriously. Cut the stipe flush, place the cap gills-down on white paper with a slip of glass beneath part of it, cover it to keep the humidity up, and give it six to twelve hours. Old, dry caps may deposit very little, so choose a specimen with fresh, moist gills.
The deposit is white to pale cream, in the palest quarter of the brittlegill range. Scrape it into a heap with a razor blade before judging, and read it in daylight against a white card. Under the microscope the spores are broadly ellipsoid, ornamented with warts and short ridges that form a partial network, and the ornamentation blackens strongly in iodine-based mountants, an amyloid reaction shared across the genus.
Substrate, Season and Ecology
This is an ectomycorrhizal fungus of soil, not of wood. It associates with a broad range of trees, both broadleaves such as beech and oak and conifers such as pine and spruce, and it prefers well-drained ground, often on calcareous or base-rich soils and frequently along path edges, banks and thinly vegetated slopes where the litter layer is shallow.
The season runs from midsummer through autumn, and fruit bodies are long-lived by fungal standards, persisting for a week or more and often becoming heavily insect-tunnelled and blotched brown before they collapse. The subterranean development habit is characteristic: the fungus builds a dense fruit body below the surface and lifts the litter as it expands, which is why a suspicious hummock in the leaf layer is worth investigating.
Separating It from the Look-alikes
Lactifluus vellereus, the Fleecy Milkcap, is the great confusion. It is the same size and shape and shares the woodland-soil habitat. Separate it on two characters: its cap surface is finely velvety or fleecy to the touch, like unwashed felt, where the brittlegill is matt but smooth; and a cut gill releases abundant white latex within seconds. Its gills are also more distant and thicker.
Lactifluus piperatus is whiter and cleaner, with extremely crowded, narrow gills that look like fine white lines, and again releases copious white latex on cutting.
Russula chloroides is the true near-twin, a genuine brittlegill with no latex. It differs in having narrower, distinctly more crowded gills, a usually stronger and broader blue-green zone at the stipe apex, and differences in spore ornamentation. Where the blue-green band is vivid and the gills are noticeably crowded, consider this species.
Russula pallidospora and allied pale species differ in spore print shade and in a browning reaction on the flesh.
Leucopaxillus and white Clitocybe species share the funnel shape but have fibrous, flexible flesh that tears rather than snaps, and gills that bend under a fingertip instead of shattering.
