A chalk-white broadleaf milkcap with extremely crowded, narrow, forking decurrent gills and abundant white latex that floods any cut surface.
Overview
Lactarius piperatus is one of two large white milkcaps that dominate the summer floor of European beech and oak woodland, and it is the smoother and more finely gilled of the pair. Its cap is chalk white, dry and matt, unpolished but not velvety, and it develops from a flat disc with an inrolled edge into a broad shallow funnel.
The gills are the character to look at first. They are extraordinarily crowded — packed so tightly that the gill face looks almost striate from above — narrow, distinctly decurrent, and frequently forked one or more times between the stipe and the cap edge. Few other fungi of this size have gills so densely arranged.
It sits in a group of white, copiously milking species that includes Lactarius glaucescens and, in North America, Lactarius deceptivus, all separated from the fleecy-capped Lactifluus vellereus group by cap texture and gill spacing. Latex behaviour on drying is the key microcharacter within the white-capped cluster.
How to identify it
Cap
The cap is 6–16 cm across, first flat with a strongly inrolled margin, then depressed and eventually funnel-shaped. It is chalk to cream white, sometimes yellowing or developing ochre stains with age and handling, and the surface is dry, smooth and matt — never velvety or shaggy. The margin remains smooth and uncurls with maturity, and the cuticle sometimes cracks in dry weather.
Gills
Gills are the diagnostic feature: extremely crowded, very narrow, decurrent, and repeatedly forked, especially near the stipe. They are white to cream, discolouring ochre to brownish where damaged, and the latex that dries on them can leave olive-tinged or yellowish stains in some collections.
Stipe
The stipe is 3–8 cm tall and 2–3 cm thick, short, solid and firm, tapering toward the base, white and smooth or very finely downy. It is unpitted, without a ring, without a volva and without any bulb or sac.
Flesh & spore print
The flesh is thick, white, firm and brittle, discolouring pale ochre where cut. It releases copious white latex immediately and abundantly from every cut surface; in L. piperatus proper the latex remains white or dries slightly yellowish on the flesh. The spore print is white, and the spores are small with low warts and fine ridges.
Where and when it grows
This is a broadleaf woodland species, growing chiefly with beech and oak and also with hornbeam, chestnut and other deciduous trees. It prefers well-drained loams and clay soils, often on slopes, and it fruits in leaf litter beneath established trees, sometimes in large scattered troops.
It is widespread and common through temperate Europe from Britain and Ireland east into Russia, with closely related forms across Asia and in eastern North America. Fruiting starts in early summer and continues through autumn, and it is often among the first substantial fungi of the summer season in beech woods.
Ecological role
Lactarius piperatus is ectomycorrhizal with broadleaf trees, particularly beech and oak. The fungus forms a hyphal sheath over fine roots and a Hartig net between the cortical cells, supplying water, nitrogen and phosphorus in exchange for sugars. Its exploratory mycelium spreads widely through the leaf litter and upper mineral soil, and it is often one of the most abundant ectomycorrhizal partners in mature beech stands.
The abundant latex is a defensive system stored under pressure in specialised laticifer hyphae. When gills are grazed or the flesh is broken, latex floods out within a second or two and rapidly gums up the mouthparts of small invertebrates, then dries into a hard film sealing the wound. Despite this, the thick flesh of ageing fruiting bodies supports beetle and fly larvae, and the slowly decaying, often persistent caps return nutrients to the litter layer while continuing to shed spores.
Similar species
Lactifluus vellereus (Fleecy Milkcap) is the main confusion: it is generally larger and heavier with a distinctly velvety or fleecy cap surface and much broader, well-spaced gills, whereas L. piperatus has a smooth cap and crowded narrow gills. Lactarius glaucescens is essentially identical in shape and gill spacing but its white latex dries a distinct blue-green or greenish grey on the gills and flesh, a change absent or very weak in L. piperatus.
Lactarius deceptivus, a North American species, has a cottony roll of tissue along the inrolled young cap margin and a rougher, sometimes scaly cap, with gills more distant than those of L. piperatus. Russula brevipes is a similar large white funnel with crowded decurrent gills, but it produces no latex at all from cut tissue, which settles the matter immediately.
