Perigord Black Truffle Identification Guide
A morphological walkthrough for Tuber melanosporum: fine pyramidal warts on a black peridium, a purple-black gleba marbled with dense white veins, and spiny ellipsoid ascospores.
First Impression and Setting
Nothing shows above ground, so the identification begins with the landscape. The setting for Tuber melanosporum is warm, dry, calcareous country: thin limestone soils, alkaline and free-draining, in Mediterranean and sub-Mediterranean woodland and scrub, usually with holm oak, downy oak or hazel, and sometimes hornbeam, lime or Cistus scrub.
The visible field sign is the brulee, a bare patch of ground around the host tree where the herbaceous vegetation is thinned or absent, giving a scorched-looking halo of exposed soil. This zone marks where the fungal mycelium is dense in the topsoil. Fruitbodies develop hypogeously, from a few centimetres to more than thirty deep, and in practice they are located by their scent, which is why trained dogs are the standard finding method. Once a specimen is in your hand, the identification is entirely morphological.
The Outside of the Fruitbody
Brush the soil away carefully with a soft brush before judging anything, since adhering earth hides both colour and sculpture.
The ascocarp is 2-9 cm across, sometimes larger, subglobose to irregularly lobed, and frequently carries a basal depression or fold where it grew against a root or stone. It is firm and heavy for its size, denser than any of the false truffles it might be confused with.
The surface, the peridium, is covered in small pyramidal warts, typically 2-5 mm wide, each with four to six sides and a low, slightly flattened or faintly depressed apex. Under a lens each facet shows fine radial striations. The warts are firmly attached and do not rub off. Colour runs from reddish-brown or rusty on young specimens to deep black or blue-black at maturity; scratch a wart with a fingernail and the tissue beneath is reddish-brown, which is a useful confirmatory detail.
The odour of a ripe specimen is strong, penetrating and complex, musky and earthy with a sweetish resinous note, detectable at a distance and persisting on the hands.
Cutting It Open
Section the fruitbody cleanly through the middle with a sharp blade. The interior, the gleba, is the decisive surface.
In an immature specimen the gleba is whitish to pale grey-brown and firm. As it ripens it darkens through greyish violet to a deep purple-black or brown-black, and it is marbled throughout with a network of white to pale cream sterile veins. The character of that marbling is what you must read carefully. In Tuber melanosporum the veins are numerous, fine, narrow, densely branched and closely packed, giving a delicate marbled pattern rather than a coarse one, and they characteristically flush reddish-brown when the cut surface is exposed to air for a while or when the specimen dries.
The consistency is firm and solid, cutting cleanly and evenly under a sharp blade, with no chambers, no cavities and no powdery interior. A truffle whose inside has collapsed into dust is not a Tuber at all.
Spores Instead of a Spore Print
Hypogeous ascomycetes do not shed a spore print; the spores are produced in asci inside the gleba and released when the fruitbody decays or is dug up and dispersed by animals. The equivalent step is a squash mount from the gleba.
Scrape a fragment of dark ripe tissue onto a slide, add a drop of water, cover and press gently. You should see asci, sac-like cells that are roughly globose to broadly ellipsoid and short-stalked, each containing one to six spores, most often four to six. The spores are ellipsoid to broadly ellipsoid, dark brown, and their size varies inversely with how many share an ascus, roughly 20-45 x 15-25 microns.
The ornamentation is the identifying detail. Tuber melanosporum spores are covered in dense, short, curved or hooked spines, closely set and fairly uniform. They are never reticulate, that is, never patterned with a net of ridges enclosing polygonal meshes.
Substrate, Season and Ecology
This is an ectomycorrhizal fungus, forming sheathed root tips with its oak and hazel hosts and exchanging soil nutrients for plant carbon. It requires alkaline, calcareous soils, typically around pH 7.5-8.3, that are stony, well aerated and well drained, and it does poorly in heavy waterlogged ground and in shade-dense closed stands.
Fruitbodies begin forming in spring and summer and ripen through the winter, with maturity in most of its range from late autumn to early spring. Ripeness is judged on the gleba: dark, fully marbled and strongly scented, rather than pale and grey. Immature specimens found out of season are much harder to name because both colour and spore ornamentation are undeveloped.
Separating the Look-Alikes on Morphology
Tuber brumale shares the winter season, the hosts and the black warted exterior. Separate it on the gleba: brumale is greyer black with fewer, broader, more strongly contrasting white veins that stay white rather than reddening, its warts tend to be smaller and flatter, and its spores carry sparser, longer, straighter spines.
Tuber aestivum, including the form called uncinatum, has much coarser, larger, sharply pyramidal warts up to about a centimetre across, a gleba that is ochre-brown to hazel rather than purple-black, and broad white veins. Decisively, its spores are reticulate, patterned with a net of ridges, not spiny.
Tuber mesentericum resembles aestivum, with reticulate spores and a pronounced basal cavity folded into the base.
Tuber indicum and its allies from East Asia are the hardest separation, since the exterior is very similar. Look for a gleba with slightly less dense veining and spores whose spines are on average longer and more sparsely arranged; honest practice is to treat exterior appearance as insufficient and rely on microscopy, and to accept that some collections cannot be resolved without molecular data.
Tuber macrosporum has a nearly smooth, finely warted reddish-brown peridium and very large spores.
Scleroderma species, the earthballs, are basidiomycetes with a thick hard rind and an interior that matures into a uniform blackish-purple powder with no white marbled veins.
Elaphomyces species have a thick, granular, corky rind enclosing a powdery blackish spore mass, again without marbling, and they sit shallowly in acid conifer litter.
Melanogaster and Rhizopogon species have chambered interiors, soft to rubbery flesh, and no true marbled veining.
