The warm-season oyster mushroom, with paler, thinner, more lung-shaped caps than the common oyster and a more clearly developed lateral stem.
Overview
The Phoenix Oyster is the summer counterpart of the common oyster mushroom, occupying the same dead hardwood but fruiting in warm weather rather than in the cold flushes that suit Pleurotus ostreatus. Its specific name pulmonarius refers to the lung-like outline of the cap, which is often longer than it is wide and tapers towards the attachment.
Compared with the common oyster it is smaller, distinctly paler, thinner-fleshed and more likely to show a well-formed lateral stem, sometimes up to two or three centimetres long. Where the two species occur together, season and colour are the most practical separators in the field.
It is one of the most widely distributed Pleurotus species in the world, recorded through Europe, Asia and North America, and it shows considerable variation in size and shade depending on host and weather. All forms share the decurrent white gills, thin white flesh and white to faintly lilac spore print of the genus.
How to identify it
Cap
The cap is 2-12 cm across, fan-, tongue- or lung-shaped, convex then flattening and often becoming depressed towards the point of attachment. The surface is smooth, dry to slightly moist, and pale cream, whitish, greyish-buff or pale tan, generally much lighter than the grey-brown of the common oyster. The margin is thin, often wavy, and may split with age.
Gills
Gills are decurrent, crowded and narrow, white to cream, ageing pale yellowish-buff. They run down onto the stem and are usually cross-veined where they converge.
Stipe
The stem is short but more clearly developed than in the common oyster, generally 1-3 cm long, lateral to eccentric, white, firm, and often finely hairy or woolly at the base. Several caps commonly share a branched base, producing tiered clusters on the side of a log.
Flesh and spore print
Flesh is thin, white and soft, unchanging when cut. The spore print is white to pale lilac-grey.
Where and when it grows
The Phoenix Oyster fruits on dead hardwood: fallen logs, standing dead trunks, stumps and large branches. Beech, birch, aspen, oak, maple and willow are all frequent hosts, and unlike some relatives it will also fruit on conifer wood in parts of its range. Clusters form in overlapping shelves along the flanks and upper surfaces of logs.
It is widespread across Europe, temperate Asia and North America. Fruiting runs from late spring through summer into early autumn, favouring warm humid spells, which contrasts with the common oyster's habit of appearing after the first cold snaps of late autumn and winter.
Ecological role
This is a saprotrophic white-rot fungus. Its mycelium spreads through the sapwood of dead hardwood, degrading lignin as well as cellulose and leaving the wood pale, soft and stringy. It is a strong primary coloniser, often establishing in a trunk soon after death and fruiting from the same log for several successive years.
Pleurotus mycelium is also notable for being nematode-trapping: it produces specialised structures that immobilise and digest soil and wood nematodes, supplementing the nitrogen that is scarce in dead wood. This makes the fungus an unusual dual-role organism, both a wood decomposer and a small predator within the deadwood food web.
Similar species
Pleurotus ostreatus is the closest match but is larger, thicker-fleshed, distinctly grey to grey-brown or bluish-grey, and typically has almost no stem; it also fruits in cold weather rather than summer heat. Pleurotus populinus is very similar in colour but is confined to dead aspen and cottonwood in North America and has a buff-tinted spore print.
Pleurotus cornucopiae has a deeply funnel-shaped cap and, decisively, gills that run down the stem and join into a raised network. Hypsizygus ulmarius looks similar from above but has a central to slightly eccentric stem and gills that are notched or merely adnate rather than running down. Brown-spored Crepidotus species sharing the same logs are far smaller and completely stalkless.
