A tropical and subtropical oyster mushroom forming rosettes of thin salmon-pink to rose fans on dead hardwood, the colour fading to buff as the fruit bodies mature.

Overview

The Pink Oyster is the warm-climate member of the Pleurotus group and the only widespread oyster with genuinely pink fruit bodies. Fresh clusters can be an intense salmon or rose colour that fades over a day or two to pale apricot and finally to dull buff, so age is written plainly across a single colony.

The species has a complicated naming history. Pleurotus djamor is the accepted name for a variable pantropical complex, with Pleurotus salmoneostramineus and Pleurotus flabellatus among the names applied to pink-fruiting populations. All share thin, rapidly developing fruit bodies and a strong preference for heat and humidity.

Like other oysters it is a wood decomposer with decurrent gills and little or no stem, but it is exceptional in its speed. In warm humid conditions it can go from first pinning to fully expanded fans in a matter of days, then deteriorate almost as quickly.

How to identify it

Cap

Caps are 2-8 cm across, thin, fan-, shell- or spoon-shaped, often with a wavy, lobed or splitting margin. Fresh caps are bright salmon-pink, rose or coral, fading through apricot and pale tan to dull buff or straw with age and sun. The surface is smooth to very finely velvety and dry. Caps grow in dense overlapping rosettes and tiers on the side of the wood.

Gills

Gills are decurrent, crowded and narrow, and share the pink tone of the cap when fresh, fading with it. They run down onto whatever stem tissue is present and are often cross-veined at the base.

Stipe

The stem is rudimentary or absent. Where present it is a short, thick lateral stub, whitish to pink, with many fruit bodies sharing a common attachment point.

Flesh and spore print

Flesh is thin, soft and pinkish-white to white, unchanging when cut. The spore print is pale pink to whitish-pink, a useful confirmation since the pink cap colour alone fades quickly.

Where and when it grows

The Pink Oyster is a fungus of warm climates, fruiting on dead hardwood in tropical and subtropical forests, plantations and gardens. It grows on fallen logs, stumps, dead branches, palm trunks and other woody debris, and appears rapidly after heavy rain when temperatures are high.

Its distribution is essentially pantropical, spanning Southeast Asia, southern China, India, the Pacific islands, Central and South America, the Caribbean, tropical Africa and the warmer parts of the southern United States. In the tropics it can fruit at any time of year given rain; in subtropical zones it is restricted to the hottest, wettest part of the season.

Ecological role

This is a saprotrophic white-rot fungus and an aggressive primary coloniser of freshly dead hardwood. It degrades lignin as well as cellulose, reducing hard timber to a soft pale fibrous mass. Its tolerance of high temperatures lets it work in conditions that suppress many temperate wood decomposers.

Rapid growth is its central strategy. In hot humid forests, dead wood is contested by a large number of fungi and insects, and the ability to fruit within days of a rain event allows this species to release spores before slower competitors have established. The fruit bodies are correspondingly short-lived and quickly become soft and insect-riddled.

Similar species

Rhodotus palmatus is also pink but is entirely different in structure: it has a tough, gelatinous cap surface raised into a net-like pattern of ridges and veins, a more nearly central stem, and it grows in cool temperate regions on elm. Pleurotus ostreatus and Pleurotus pulmonarius share the shape and decurrent gills but are grey-brown and cream respectively, with white to lilac spore prints.

Phyllotopsis nidulans forms similar stemless fans but is orange, densely hairy on the upper surface, and much tougher. Lentinus and Panus species in tropical forests can be pinkish-tan when young but have tough, leathery flesh and finely toothed or serrated gill edges, and they usually have a well-developed central or eccentric stem.
