Rufous Milkcap Identification Guide

How to work through Lactarius rufus in pine and birch woodland - the dark brick-red umbonate cap, the unchanging white latex, and the morphological details that separate it from other dark milkcaps.

The Setting and the First Look

Rufous Milkcap is a fungus of acidic, sandy or peaty ground under conifers, and the typical encounter is on a needle-carpeted path edge in a pine plantation, or among bilberry and heather on a mossy bank. You see a scatter or a troop of dark, dry, brick-red caps sitting low over the litter. From above they read as flat discs with a curious central nipple, and that combination - matte dark red plus a distinct small point in the middle - is the shape that should immediately put you in the milkcaps and, within them, on this species.

Reading the Cap

Pick one and study the cap surface before anything else. Diameter runs 3-10 cm, occasionally larger. Young caps are convex with an inrolled margin; they soon flatten and then become shallowly funnel-shaped, but almost always retain a small sharp umbo standing proud in the depression, giving a profile some people compare to a volcano in a saucer. The surface is dry and matte, faintly silky or minutely felty rather than sticky, and it is never strongly zoned with concentric rings. Colour is a deep, saturated brick-red to rusty red-brown or dark reddish chestnut, often a little paler and more ochre toward the margin, and it does not change much with weather. The margin is smooth and hairless - never bearded or shaggy.

The Gills

Turn it over. The gills are narrow, fairly crowded and adnate to slightly decurrent, running just a short way down the stipe. When young they are pale cream to pale ochre with a faint pinkish or buff cast; as the fruit body matures they darken to ochre-buff and eventually take on rusty reddish tints, sometimes with reddish-brown spotting where they have been damaged. Look along a gill edge with a lens - it should be even. Gills fork sparingly near the stipe.

Latex: the Central Test

The latex is the reason the group is called milkcaps and it is where this species is decided. Take a clean blade and cut across the gills of a fresh, well-hydrated specimen, then wait and watch. Rufous Milkcap exudes copious white latex that stays white. It does not turn yellow, does not turn lilac, does not turn wine-red, and it does not stain the surrounding gill tissue any striking colour. Dry weather can suppress latex flow, so if you get nothing, cut a second specimen from a shaded, damper spot before concluding anything. A useful supporting trick is to let a drop of the latex sit on a white paper tissue for several minutes: on this species it remains white or dries to a faint cream, rather than shifting to sulphur-yellow.

Stipe, Base and Flesh

The stipe is 3-8 cm long and 8-20 mm thick, roughly equal or slightly swollen downward, dry and smooth, coloured like the cap or a shade paler - reddish-pink to pale brick - and often whitish at the very apex. It is stuffed when young and becomes hollow with age. There are no scrobicules, meaning no darker sunken pits along its length. The base is often felted with white mycelium that binds needles, moss stems or sand grains into a tidy plug. Cut the fruit body lengthwise: the flesh is pale buff to pinkish-cream, brittle and granular in the way all Lactarius and Russula flesh is, and it does not change colour on exposure to air.

Taking a Spore Print

Trim the cap off, lay it gills-down on white paper, cover, and leave it several hours. The print is pale cream to pale buff with a slight ochre or yellowish cast - never white-white and never brown. Getting a clean print matters here, because print colour is one of the routine dividers between the darker milkcaps. Microscopically the spores are broadly ellipsoid and ornamented with an amyloid ridged and warted network, as in the genus generally.

Substrate, Season and Ecology

This is an ectomycorrhizal species, forming root sheaths in partnership with conifers - especially pines - and also with birch on very acidic peaty ground. It is strongly tied to poor, sandy, acid soils: pine plantations, heathland with scattered birch, sphagnum bog margins, and mossy conifer woods. It is essentially absent from rich, calcareous, deciduous woodland. Fruiting begins in mid to late summer and continues into late autumn, often persisting until the first hard frosts. Fruit bodies typically appear gregariously, scattered in loose troops among moss and needle litter, and the species can be extraordinarily abundant in the right plantation.

Separating the Look-alikes on Morphology

Lactarius hepaticus is a similarly dark pine associate but the cap is a duller liver-brown to dark chocolate-brown rather than brick-red, it lacks the sharp umbo, and its white latex turns distinctly sulphur-yellow within a minute or two when blotted onto a white tissue.

Lactarius camphoratus is smaller and more slender, with a dull red-brown, often slightly wrinkled cap, watery-whitish rather than copious white latex, and a strongly aromatic odour.

Lactarius subdulcis is paler cinnamon to tan, grows with hardwoods (particularly beech), lacks a pronounced umbo, and has a more slender stipe.

Lactarius helvus is much larger and paler, greyish-buff to pale tan with a finely scaly, matted cap surface, and its latex is watery and almost colourless.

Lactarius torminosus is pinkish and conspicuously bearded with shaggy hairs along an inrolled margin, and it is a birch specialist.

Lactarius badiosanguineus is dark reddish-brown but with a shinier cap and a stipe darkening from the base.

Non-milkcaps that resemble it, such as reddish-brown Russula or Gymnopus species, produce no latex at all, which settles it in one cut.
