Overview

Lactarius deliciosus is the best-known of the orange-milk milkcaps: a firm, brittle-fleshed mushroom with a broad, faintly zoned orange cap that becomes funnel-shaped, crowded decurrent gills of the same orange, and — its defining feature — a bright carrot-orange latex that bleeds from any cut or scratch and slowly stains the damaged tissue dull green.

The genus Lactarius (Russulaceae) is unique among gilled fungi for this milk. The flesh is composed of spherical cells packed around latex-carrying vessels, which makes it granular and crumbly rather than fibrous — a Lactarius cap snaps like chalk instead of tearing into strings. Species are separated largely by latex colour, how the latex changes on exposure to air, and how the flesh stains afterwards.

In L. deliciosus the greening is progressive and conspicuous: old specimens often look more green than orange, with verdigris blotches across the cap and gills, and a broken cap edge left overnight will be green by morning.

How to identify it

Cap

The cap is 4–15 cm across, convex with an inrolled margin at first, then flattening and finally shallowly funnel-shaped with a depressed centre. The surface is smooth, slightly greasy when damp, and coloured carrot-orange to salmon-orange, marked with darker concentric bands or water-mark zones. Older caps and any bruised areas develop dull green to verdigris patches, and heavily weathered specimens can be almost entirely green.

Gills

Gills are crowded, narrow, brittle, and decurrent — running noticeably down the stipe. They are bright orange, forking near the stipe, and turn green wherever they are handled or damaged. Bruised patches are among the quickest greening reactions on the fungus.

Stipe

The stipe is 3–8 cm tall and 1–2.5 cm thick, cylindrical or tapering downward, brittle, and hollow or chambered in mature specimens. It is orange, paler than the cap, and usually marked with shallow, darker orange, roundish depressions known as scrobicules — small pits that look like thumbprints. It greens where handled, and has neither ring nor volva.

Flesh, latex and spore print

The flesh is pale orange to whitish, granular and brittle. Cut it and it exudes an abundant carrot-orange latex that stays orange or turns slowly wine-red then green over 10–30 minutes; the cut surface itself greens. Odour is mild and slightly fruity. The spore print is pale cream to buff, sometimes with a faint pinkish tinge.

Where and when it grows

Lactarius deliciosus grows on the ground exclusively under pines — Scots pine, Corsican and black pine, maritime pine and other two- and three-needled species — in plantations, dune pine woods, heathland pine stands, parkland and roadside pine belts. It prefers sandy, well-drained or calcareous soils, often appearing in moss, needle litter and short grass at the woodland edge or under young open-grown trees rather than in dense shade.

Fruiting runs from late summer into autumn, and continues into early winter in mild Mediterranean climates, always following rain. It occurs in scattered groups, arcs and rings under a single tree, and productive trees fruit reliably year after year. The species is native across Europe and western Asia and has spread widely with planted pines, becoming common in pine plantations in North Africa, Australia, New Zealand and parts of the Americas.

Ecological role

The fungus is ectomycorrhizal and strictly associated with Pinus. Its mycelium forms a sheath around the short roots of pines and an interconnecting network in the soil, supplying the tree with water, phosphorus and nitrogen and receiving photosynthetic sugars in return. That specificity means the fungus does not appear under spruce, fir or broadleaf trees, and its presence is a dependable marker of pine roots below.

Because of this partnership it can be established deliberately by inoculating pine seedlings, and it commonly follows planted pines into regions where it is not native. Fruiting favours young to middle-aged stands with open canopy and thin litter; as pine woods close in and litter deepens, production often shifts to the woodland margin. The latex system itself is defensive — the orange fluid is released under pressure when tissue is torn, and the green pigment that follows is the oxidation product of that latex.

Similar species

Lactarius deterrimus, the False Saffron Milkcap, is the nearest match but grows with spruce rather than pine; its cap is usually more weakly zoned or unzoned, it greens far more rapidly and extensively, and its stipe generally lacks well-marked scrobicules. Lactarius salmonicolor and L. semisanguifluus are further members of the orange-latex group separated respectively by association with fir and by latex that turns wine-red within minutes before greening.

Lactarius torminosus and L. pubescens share a zoned pinkish-orange cap but have a conspicuously shaggy, woolly-haired cap margin and, decisively, white latex, and they grow with birch. Any orange, funnel-shaped fungus with no latex at all belongs elsewhere: Cantharellus has blunt forking ridges instead of true gills and fibrous white flesh, while Hygrophoropsis has soft thin flesh and no milk. The three checks are latex colour, whether the wound greens, and which tree is overhead.
