Overview

Lactarius deliciosus belongs to the milkcaps, a genus defined by a milky latex that bleeds from broken gills and flesh. Along with the brittlegills, milkcaps have granular, brittle flesh built from spherical cells, so the stem snaps cleanly and the gills crumble; the presence of latex is what separates Lactarius from Russula.

The Saffron Milkcap is one of a small group of orange-latex species sometimes treated as the deliciosus group or section Deliciosi. Everything about it is orange when fresh, from the zoned cap to the crowded decurrent gills to the droplets of latex, and this orange steadily bruises and ages to a dull verdigris green, so old fruit bodies can look patchily green all over.

The genus is an important component of northern forest ecosystems, with the orange-milk group tied specifically to conifers. L. deliciosus itself is associated above all with pines and has been introduced widely with pine plantations, so it now occurs far outside its native range wherever European pines have been planted.

How to identify it

Cap

4-15 cm across, convex with an inrolled margin when young, soon flattening and then becoming distinctly funnel-shaped with a depressed centre. The surface is smooth, slightly sticky when moist, and carrot to salmon-orange, marked with darker concentric bands or zones that give it a target-like appearance. Green blotching develops with age or handling and can eventually dominate.

Gills

Decurrent, running well down the stem, crowded, narrow and often forking near the stem. They are bright orange and bruise green where scratched, so damaged specimens show green streaks across an orange background. The gill surface releases latex freely when cut.

Stipe

3-8 cm tall, 1.5-2.5 cm thick, short, stout, cylindrical or tapering downward, and hollow at maturity. The surface is orange, paler than the gills, and characteristically marked with shallow, darker, rounded depressions known as scrobicules, which look like small oily thumbprints. It is ringless and greens where handled.

Flesh and latex

The flesh is pale buff to whitish with an orange line beneath the cap cuticle. Cutting releases a scanty to moderate latex that is carrot-orange from the outset and does not change to red or brown, though it stains the surrounding flesh green after some minutes. The spore print is pale ochre to buff, never white.

Where and when it grows

The Saffron Milkcap is strongly tied to pines. It grows in pine plantations, natural pine forest, dune pinewoods and mixed stands where pine is present, usually on sandy, well-drained or calcareous soils, and it is frequent along woodland tracks, in grassy pine clearings and among needle litter and moss under the canopy. Scots pine is the classic partner in Europe, with other two-needle pines used elsewhere.

Fruiting runs from late summer into late autumn, often continuing until the first frosts, and is triggered by soaking autumn rain. Fruit bodies appear scattered, in troops and sometimes in rings. The species is native across Europe and parts of temperate Asia and has been carried with plantation pines into North and South America, southern Africa, Australia and New Zealand, where it now fruits abundantly in exotic pine forests.

Ecological role

This is an ectomycorrhizal fungus and an obligate partner of pine. The mycelium forms a dense sheath around the short roots of the tree and penetrates between the outer cortical cells, creating the exchange interface through which mineral nutrients and water pass to the tree and carbohydrates pass to the fungus. Pine seedlings colonised by this and similar fungi establish more successfully on poor sandy soils.

Because the partnership is so specific, the presence of the fungus in a plantation is a direct indicator that pine roots are present and active. Its spread around the world has tracked pine forestry exactly, the mycelium travelling in the root balls of nursery stock. The latex itself functions as a defensive exudate, sealing wounds and deterring grazing invertebrates, and the rapid green discoloration is an oxidation reaction of the orange pigments on exposure to air.

Similar species

Several close relatives share orange latex. Lactarius deterrimus, the False Saffron Milkcap, grows with spruce rather than pine, has a cap that is scarcely zoned or only faintly so, a stem usually without scrobicules, and latex that turns wine-red within about half an hour before greening. Lactarius sanguifluus has a duller, more vinaceous to wine-purple cap and blood-red rather than carrot-orange latex. Lactarius semisanguifluus has orange latex that changes to red quite quickly and greens very strongly.

Lactarius torminosus, the Woolly Milkcap, is superficially similar in its pinkish zoned cap but has a conspicuously shaggy, woolly, inrolled cap margin and pure white latex. Any milkcap with white latex is immediately excluded from this group. Away from Lactarius, orange Hygrophoropsis and Cantharellus species have no latex at all, and chanterelles have blunt forking ridges rather than true blade-like gills.
