Overview

Salt-loving Agaricus (Agaricus bernardii) is the salt specialist of its genus, a heavy, hard-fleshed white mushroom that thrives on soils too saline for most fungi. It is a familiar sight on coastal dunes, saltmarsh margins and — increasingly — along inland road verges where winter de-icing salt has accumulated over years, allowing the species to spread far from the sea along major highways.

It is closely allied to the Pavement Mushroom and shares that species' dense build and sheathing, often double-looking ring, but differs in its coarsely cracked cap surface, its distinctly reddening flesh and its unmistakable briny, pickled or fishy odour. Together these make it one of the more readily recognised white Agaricus species once the habitat is taken into account.

Like the rest of the family it has free gills that pass from greyish-pink to chocolate brown, a ringed stipe with no volva, and a dark brown spore print — but its extraordinary firmness and its ecological tolerance set it apart within the genus.

How to identify it

Cap

The cap is 6–15 cm or more across, very thick-fleshed and hard, remaining convex or flattened-domed for a long time. The surface is white to dingy cream or greyish-buff and characteristically breaks up into coarse, irregular scales, patches or fissures, especially toward the centre and in dry weather, giving a rough, cracked-mud appearance. Caps are frequently soiled with sand or grit from pushing through compacted ground, and the margin remains inrolled well into maturity.

Gills

The gills are free from the stipe, crowded and narrow, opening a pale greyish-pink — muted rather than bright — and darkening through purplish-brown to a deep chocolate brown at maturity.

Stipe

The stipe is short and thick, usually 3–8 cm long and 2–4 cm wide, often stouter than it is tall, tapering downward to a solid, sometimes rooting base. The ring is thick and sheathing, formed low on the stipe as an upturned collar and frequently appearing double or two-tiered, similar to that of the Pavement Mushroom. There is no volva.

Flesh & spore print

The flesh is exceptionally firm, thick and white, and on cutting it flushes pinkish then reddish-brown or vinaceous, most strongly in the stipe and cap centre. The odour is briny, pickled or faintly fishy, quite unlike any other white Agaricus, and it becomes more pronounced as the specimen ages. The spore print is dark chocolate brown.

Where and when it grows

As its name implies, this species is a halophile — a fungus adapted to saline conditions. Its natural habitats are coastal: fixed dunes and dune slacks, the upper margins of saltmarshes, grassy sea walls, shingle-backed turf and cliff-top grassland exposed to salt spray. Away from the coast it has colonised the salted verges of motorways and major roads, gritted lay-bys and other ground where de-icing salt is applied year after year, and it can also appear in irrigated turf on naturally saline soils.

The season runs mainly from summer into autumn, though coastal populations may fruit whenever there is sufficient moisture. It is widespread in Europe, including the Mediterranean, and is also recorded from North America, North Africa and parts of Asia and Australasia. Its inland spread along road networks is a well-documented example of a fungus expanding its range in response to human activity.

Ecological role

Agaricus bernardii is a saprotroph, decomposing plant litter, dead grass roots and buried organic material in saline soils. Its ability to regulate internal solute concentrations lets it maintain water uptake in conditions where salt would dehydrate the mycelium of most soil fungi, and this physiological tolerance is what defines its niche — it faces very little fungal competition on the substrates it occupies.

Because of this, it performs a specialised recycling role: in dune systems, saltmarsh fringes and salted verges it is often among the principal decomposers returning nutrients from dead grasses and herbs to the soil. Its very dense fruit bodies push through hard, compacted, salt-crusted ground much as the Pavement Mushroom does through gravel, and they persist longer than most agarics before decaying, providing an extended resource for the flies and beetles that breed in them.

Similar species

Pavement Mushroom (Agaricus bitorquis) is the nearest match, sharing the thick flesh and sheathing double ring, but its cap stays smooth and even rather than cracking into coarse scales, its flesh reddens only faintly if at all, and it has a plain mushroomy odour with no briny note. Field Mushroom (Agaricus campestris) is much softer-fleshed with a thin single ring, bright pink young gills and a smooth unbroken cap.

Horse Mushroom (Agaricus arvensis) is large and pale but yellows rather than reddens, smells of aniseed, and has a large soft pendulous ring with a cogwheel underside. Any thick white mushroom with white gills that never turn pink, a white spore print and a sac-like volva enclosing the stipe base is an Amanita and not a member of this genus at all.
