A tough-fleshed wood-rotting agaric with a dry brown cap that cracks into a pale crazed pattern, white notched gills and a fibrous, off-centre stem with a fleeting ring zone.

Overview

Lentinula edodes is a wood-decaying agaric native to the warm-temperate and subtropical forests of East and Southeast Asia. Its Japanese name refers to the shii tree, Castanopsis cuspidata, one of the hardwoods on which it naturally fruits. The genus Lentinula is small, tropical to warm-temperate in distribution, and is placed in the Omphalotaceae; despite the tough, leathery flesh that once led to its inclusion in Lentinus, molecular work shows it is a white-rot relative of Gymnopus and Marasmiellus rather than a polypore ally.

The species is distinctive for a combination of features that are easy to check in the field: a dry, matt, warm-brown cap that dries and cracks into a network of pale fissures; crowded white gills whose edges are finely ragged; a curved, fibrous stem that is often set slightly off-centre because the mushroom grows sideways out of a log; and remnants of a thin white veil left as woolly scraps on the cap margin and a faint zone on the stem.

Log cultivation has carried Lentinula edodes far beyond its native forests, and fruit bodies are now encountered on inoculated hardwood billets and sawdust blocks in gardens, shade houses and small holdings on every continent except Antarctica. Wild collections, however, remain confined to Asia and Australasia.

How to identify it

Cap

4-12 cm across, occasionally to 20 cm on vigorous logs, at first strongly convex with a tightly inrolled margin, expanding to broadly convex or nearly flat. The surface is dry and matt, tan, cinnamon or dark chocolate-brown, usually darkest at the centre, and typically breaks up as it expands into a crazed pattern of pale cream cracks over a brown ground. Fine woolly white veil fragments cling to the incurved margin of young caps and often persist as a fringe.

Gills

White to cream, crowded, fairly narrow, attached to the stem by a notch (sinuate) or with a short decurrent tooth. The gill edges are minutely ragged or finely toothed when viewed with a lens, a feature shared with several other tough-fleshed wood agarics. Handling or ageing marks the gills with reddish-brown to rusty stains.

Stipe

3-8 cm long and 0.5-1.5 cm thick, central to distinctly eccentric, often curved where the mushroom has turned upward from the side of a log. It is whitish to pale brown, tough, dry and coarsely fibrous, becoming woody at the base, and frequently bears a thin, hairy ring zone that soon collapses into a scurfy band.

Flesh and spore print

The flesh is white, firm and notably tough, remaining pliable rather than crumbling. The spore print is white; spores are small, smooth and ellipsoid.

Where and when it grows

In the wild, Lentinula edodes grows on dead and dying hardwood, favouring members of the beech family such as Castanopsis, Lithocarpus, Quercus and Castanea, and also fruiting on hornbeam, maple, mulberry and other broadleaved trees. It appears on fallen trunks, standing dead stems and large branches in warm-temperate broadleaved and evergreen oak forest, usually in shaded, humid situations.

The natural range covers Japan, Korea, China, Taiwan, northern Southeast Asia and the Himalayan foothills, extending south and east to parts of Papua New Guinea, Australia and New Zealand. Fruiting is triggered by soaking rain and a drop in temperature, so flushes are concentrated in spring and autumn, with some appearing after summer storms. Outside this range, fruit bodies encountered on hardwood billets almost always trace back to deliberate inoculation rather than natural spread.

Ecological role

Lentinula edodes is a saprotroph and a white-rot fungus. Its mycelium secretes enzymes that degrade lignin along with cellulose, leaving the interior of the log soft, pale and fibrous. Colonisation typically begins in wood that has recently died, and a single log can support flushes for several years until the resource is exhausted.

As a decomposer of large-diameter hardwood, it occupies an important niche in the nutrient cycle of Asian broadleaf forests, opening up dense trunk wood for later-arriving fungi, insects and other invertebrates. The mycelium competes vigorously with other wood-rotters, which is one reason it establishes so readily on freshly cut logs, and its long fruiting life on a single substrate makes it a persistent feature of the deadwood community.

Similar species

Neolentinus lepideus resembles Shiitake in its tough flesh and ragged gill edges, but its cap is whitish to pale buff with dark flattened scales rather than uniformly brown with pale cracks, its gills are clearly decurrent, and it grows on conifer wood. Lentinus tigrinus is smaller, with a funnel-shaped cap bearing dark brown to blackish fibrous scales on a cream ground and strongly decurrent gills, and it favours willow and poplar in wet ground.

Lentinula lateritia and Lentinula novae-zelandiae are Australasian relatives that are essentially identical in the field and separated mainly by range and microscopic detail. Pholiota species growing in clusters on hardwood can look superficially similar but have brown spore prints and gills that darken to rust. Panus species have hairy caps and violet-tinged, entire-edged gills.

Common questions about Shiitake

Why is the cap surface cracked into pale patches?
As the cap expands, the thin brown surface layer cannot keep pace with the growing white flesh beneath and splits, exposing pale fissures in a crazed network. The pattern is most pronounced in dry air and may be almost absent on caps that develop in constant humidity.
What trees does it grow on naturally?
Dead hardwood, especially members of the beech family such as Castanopsis, Lithocarpus, oak and chestnut, with occasional records from hornbeam, mulberry and maple. It fruits on fallen trunks, large branches and standing dead stems in humid broadleaved forest.
How can I tell Shiitake from a Neolentinus?
Check the substrate and gill attachment. Neolentinus lepideus grows on conifer wood with distinctly decurrent gills and a scaly whitish cap, whereas Shiitake is on hardwood with notched, narrowly attached gills and a brown cap that cracks pale.
Is the stem always central?
No. Because the fruit body usually emerges from the side of a log and bends upward toward the light, the stem is frequently curved and set off-centre. Fully central stems are more typical of specimens that fruit from the cut end of a billet.
