Snowy Waxcap Identification Guide
Recognising Cuphophyllus virginea in old grassland by its greasy ivory cap, thick waxy decurrent gills and tapering white stem, plus how to rule out its white grassland look-alikes.
The Setting
Snowy Waxcap belongs to short, old, unimproved turf. The classic places are ancient pasture that has never been ploughed or fertilised, churchyards and cemeteries, mossy lawns that have been mown but not fed, coastal dune slacks and links, upland sheep-walk, and grassy woodland rides. It appears from early autumn well into the first frosts of winter, and in mild maritime climates it can still be fruiting in December.
The first impression is easy to miss: a scatter of small, glistening, off-white caps sitting low among the grass blades, sometimes in troops of dozens, sometimes with the caps half-buried in moss. They look wet even when the surrounding grass has dried, and in low sunlight they shine. Pick one and it feels oddly greasy and slightly soft. Most importantly, it is almost always in company - waxcap turf tends to produce several species at once, so scan for the pinks, oranges and scarlets nearby.
Working Through The Cap
Diameter runs 1-5 cm, occasionally to 6. The young cap is convex, sometimes bluntly conical, and it flattens with age, often becoming irregular, wavy-edged, uplifted or even split radially at the margin in older specimens. Some develop a shallow central depression.
Colour is white to ivory, frequently with a pale cream, buff or faint tan flush over the centre, and some collections darken to pale ochre or develop brownish blotches with age or frost. The surface is slightly greasy to distinctly slimy in wet weather and dries to a smooth, silky, matt finish. When moist the cap is somewhat translucent and you can see faint radial lines - the shadow of the gills - reaching a short way in from the rim; those lines vanish as it dries.
Feel the cap between finger and thumb. Waxcap flesh has a soft, slightly greasy, pliable quality that is quite unlike the crisp snap of a Russula or the dry firmness of a Clitocybe, and once you have learned it you can often place a specimen in the group by touch alone.
Gills, Stem And Flesh
The gills are the heart of the identification. They are strongly decurrent, running a clear distance down the stem so that the cap and stem meet in a smooth funnel rather than at an angle. They are thick, soft, waxy in texture, and noticeably distant - you can count them easily, and they are often connected by low cross-veins and interveining on the gill faces near the stem. Colour is white, sometimes with the faintest cream tone, and unchanged by bruising. Rub one between your fingers and it smears rather than crumbles.
The stem is 3-8 cm long, 3-8 mm thick, white throughout, dry, smooth or very finely fibrillose, and usually tapering toward the base. It is often curved or bent where it grew up between grass tussocks, becomes hollow with age, and has no ring and no volva. The base may be slightly pointed and is usually clean, with grass roots and moss adhering to it rather than a distinct mycelial mat.
The flesh is white, thin, soft and waxy, and does not change colour when cut. There is no latex, no reddening, no blueing. Odour is faint and mushroomy in typical material - and this is worth pausing on, because odour is one of the practical separators from a close relative described below.
Spore Print
The gills are decurrent, so cut the stem off flush with the base of the gills and set the cap gill-side down on paper. Because both cap and spores are pale, use black paper or a sheet that is half black, and cover the cap to hold humidity. Six to twelve hours gives a good deposit.
The print is white. Under the microscope the spores are smooth, thin-walled, ellipsoid, often slightly constricted in the middle or somewhat pip-shaped, roughly 8-12 by 5-7 micrometres, and inamyloid. Waxcaps of this genus also have short, parallel-arranged gill tissue rather than the long, interwoven, sharply divergent hyphae found in true Hygrocybe, which is the technical basis for placing this species in Cuphophyllus.
Habitat, Season And Ecology
Beyond simply being a grassland fungus, the Snowy Waxcap belongs to a distinctive community. Mycologists group waxcaps with earthtongues, club and coral fungi, pinkgills and crazed caps into an assemblage that marks out unimproved, low-nutrient, long-undisturbed turf. Where you find one member you generally find others, and the presence of a rich waxcap flush is a strong signal that the sward has been grazed or mown continuously for decades without fertiliser.
The nutritional biology is still being worked out. These fungi were long assumed to be straightforward litter saprotrophs, but isotope work suggests a more intimate relationship with living plants or with mosses, which would explain why they colonise new grassland so slowly and why they disappear so quickly when a field is fertilised or ploughed.
Fruiting runs from September to December in temperate regions, with the heaviest flushes after autumn rain on cool, still nights.
Separating It From Look-alikes By Structure
Cedarwood Waxcap (Cuphophyllus russocoriaceus) is essentially identical in shape, colour, gill spacing and habitat. The separator is smell: crush the stem base and it gives off a strong, persistent scent of cedarwood or Russian leather, which the Snowy Waxcap lacks. It also tends to be smaller and to run more consistently cream.
Meadow Waxcap (Cuphophyllus pratensis) shares the thick, distant, decurrent gills but is a larger, firmer fungus with an apricot to buff-orange cap and a stout stem.
Cuphophyllus fornicatus has a greyish to pale grey-brown cap, a proportionally longer stem, and less markedly decurrent gills.
The Miller (Clitopilus prunulus) is the trap. It is white, has decurrent gills, and grows in grassy places. Separate it on three points: its cap surface is dry, matt and finely felted like kid leather rather than greasy; its gills are crowded and thin rather than thick and distant; and its spore print is salmon-pink rather than white. Always print a white decurrent-gilled grassland mushroom.
Small white Clitocybe species of the rivulosa and dealbata group grow in the same turf and rings. Their gills are thin, crowded and only shortly decurrent, their caps are dry and often faintly zoned or frosted with concentric watery bands, their flesh lacks the waxy give, and their stems are more or less equal rather than tapering downward.
Ivory Woodwax (Hygrophorus eburneus) is superficially very similar but grows in woodland with beech, and both its cap and its stem are covered in a thick, sticky, glutinous coating that leaves your fingers tacky.
