A dry, matt, sooty grey-brown milkcap of broadleaved woodland whose white latex turns the pale flesh and gills salmon-pink within moments of cutting. That colour reaction is its defining field character.

Overview

Lactarius fuliginosus is one of the dark, dry-capped milkcaps of section Plinthogalus, a group defined less by colour than by a chemical signature: white latex that itself stays white, but which flushes any white tissue it touches a distinct salmon or coral pink within a minute or two.

Above ground it is an understated mushroom — a smoky grey-brown to fawn-brown cap with a matt, faintly velvety or suede-like surface, no zoning, no sliminess and no hairy margin, on a slender stipe of similar colour. The contrast between the dusky cap and the pale cream gills is the main visual cue at a distance.

It is a woodland species of the broadleaved zone, tied particularly to beech and oak on richer soils, and is widespread across temperate Europe. It has several close relatives that differ mainly in cap darkness, texture and host preference, so the group as a whole often needs careful comparison of surface texture and spore ornamentation.

How to identify it

Cap

The cap is 4–10 cm across, convex then flat and finally slightly depressed, occasionally with a low broad umbo. The surface is dry, matt and finely velvety or minutely granular, sometimes becoming wrinkled toward the centre, and is never viscid. Colour is smoky grey-brown, sooty fawn, dark clay-brown or coffee-brown, generally uniform and unzoned, and often paler toward the margin.

Gills

Gills are moderately crowded, adnate to slightly decurrent, and pale cream to pale ochre, deepening to a warmer ochre with pinkish tones as spores mature. When cut or bruised they flush salmon-pink, and the pink discolouration persists as a permanent stain.

Stipe

The stipe is 4–10 cm tall and 0.8–2 cm thick, cylindrical or slightly tapering, dry, matt and coloured like a paler version of the cap — greyish-fawn to buff-brown. It is often paler at the apex and may be finely wrinkled. No ring or volva is present, and it becomes hollow with age.

Flesh, latex and spore print

The flesh is white and brittle, turning pink to salmon within one to two minutes of being cut. The latex is white and unchanging in itself, but reddens the flesh and gills on contact — the single most reliable diagnostic feature. The spore print is pale ochre with a pinkish tinge; spores are globose to subglobose with prominent amyloid ridges forming a strong reticulum.

Where and when it grows

This is a mycorrhizal species of broadleaved woodland, associating chiefly with beech (Fagus) and oak (Quercus), and less often with hornbeam, chestnut and hazel. It fruits on leaf litter and humus, usually singly or in scattered small groups, on neutral to base-rich loams and calcareous soils, and is a familiar sight in mature beech hangers and old oak woods.

It is widespread across temperate Europe, from Britain and Ireland east into Russia and south into the Mediterranean uplands, with related taxa reported from Asia and North America. Fruiting runs from midsummer through to late autumn, generally beginning earlier in the season than many other woodland milkcaps.

Ecological role

Lactarius fuliginosus is an ectomycorrhizal partner of beech and oak. Its hyphae encase fine root tips and penetrate between cortical cells, greatly extending the effective absorptive surface of the root system and delivering nitrogen and phosphorus mobilised from leaf litter. As with all milkcaps, it depends entirely on host photosynthate and cannot be raised on dead substrates.

The pinking reaction seen when the flesh is damaged reflects oxidation of compounds carried in the latex system, part of the genus-wide chemical defence against grazing invertebrates. In practice, slug-grazed caps and larval tunnels in the stipe are outlined in salmon or rust, which conveniently makes the diagnostic reaction visible even on specimens that have already been damaged in the field.

Similar species

Lactarius lignyotus is darker — chocolate to almost black — with a strongly wrinkled cap, a small pointed umbo, more distant white gills with dark edges, and it grows with spruce and fir rather than broadleaves. Lactarius picinus is blacker, smoother and matt, again a conifer species. Lactarius azonites is much paler, greyish-white to pale ash, but shows the same salmon-pink flesh reaction.

Lactarius acris has a greyer, more viscid cap and its flesh reddens strongly too, but the cap surface is greasy rather than dry and velvety. Any similarly dusky Russula is separated at once by yielding no latex when the gills are cut.
