A large greasy-capped mushroom of disturbed rich ground, with free gills that turn deep salmon pink and a stipe seated in a conspicuous white sac-like volva but with no ring at all.
Overview
The Stubble Rosegill (Volvopluteus gloiocephalus, long known as Volvariella gloiocephala or V. speciosa) is the largest of the volva-bearing pink-spored agarics found on open ground. It is a striking fungus: a tall smooth stipe rising from a substantial white bag at the base, carrying a broad, greasy, grey-brown to whitish cap whose free gills flush a deep salmon pink as the spores ripen.
The genus Volvopluteus was separated from Volvariella on molecular evidence and sits close to Pluteus in the family Pluteaceae. All members of the family share free gills and pink spore prints; what distinguishes Volvopluteus and Volvariella is the universal veil that encloses the entire young fruitbody and is left behind as a membranous volva at the stipe base.
Because a volva plus a large pale cap also describes some Amanita species, the structural checklist matters. This fungus has a volva but no ring, its gills go clearly pink, and its spore print is salmon — a combination no Amanita shows, since those keep white gills and a white spore print and usually carry a ring.
How to identify it
Cap
5 to 15 cm across, egg-shaped or ovoid when young, expanding to convex and finally almost flat, often with a low broad umbo. The surface is smooth and distinctly greasy or sticky when moist, drying silky and shining. Colour ranges from whitish through pale grey to grey-brown or mouse-brown, usually darkest at the centre. The margin may be faintly striate in wet weather.
Gills
Free from the stipe and crowded, broad and ventricose. They are white at first and then turn a clear pink and finally a deep salmon or flesh pink as the spores mature — one of the most reliable characters.
Stipe
7 to 20 cm tall and 1 to 2 cm thick, white, smooth or finely silky, solid, tapering upwards from a swollen base. That base sits within a large, loose, membranous, sac-like white volva that must be dug up to be seen intact. There is no ring anywhere on the stipe.
Flesh & spore print
The flesh is soft and white, unchanging when cut. Odour is faint and slightly earthy. The spore print is pink to salmon-pink, and the spores are smooth and broadly ellipsoid.
Where and when it grows
This species is a coloniser of rich, disturbed, nutrient-loaded ground. Classic sites include cereal stubble fields after ploughing, compost heaps, manured soil, garden beds, wood-chip mulch, silage residues, landfill caps and freshly landscaped earth. It sometimes appears in impressive numbers across a whole field in a single flush.
Fruiting runs from late summer well into autumn, often continuing until the first frosts. It is widespread across Europe, North America and much of the temperate world, and has spread readily with agriculture and landscaping because its preferred substrates are man-made.
Ecological role
Volvopluteus gloiocephalus is saprotrophic, decomposing straw, stubble residues, compost and other soft plant material in enriched soil. It behaves as an opportunist, appearing quickly on freshly disturbed nutrient-rich substrates, producing large fruitbodies in a short burst and then disappearing as the resource is exhausted or as slower competitors move in.
The universal veil that produces the volva encloses the entire developing fruitbody like an egg, protecting it as it pushes through loose soil and litter. As the stipe elongates the veil ruptures, leaving the membranous sac at the base while the cap is carried upwards. Because there is no partial veil, no ring is formed on the stipe.
Similar species
Amanita species, particularly grisettes such as Amanita vaginata, also stand in a sac-like volva, but their gills remain white and their spore print is white, and the cap margin of a grisette is strongly grooved. Ringed Amanita species add a skirt on the stipe, which this fungus never has. Checking gill colour at maturity and taking a print resolves the question quickly.
Volvariella bombycina has a similar volva and pink gills but a silky-hairy, pale yellowish cap and grows on standing trunks and wounds of living broadleaved trees rather than on soil. Pluteus cervinus and relatives share the free pink gills and pink print but have no volva at all and fruit on rotting wood. Large white Agaricus species can look similar from above but have a ring, no volva, and a chocolate-brown spore print.
