Sweetbread Mushroom Identification Guide

A step-by-step read of Clitopilus prunulus: a matt kid-leather cap, deeply decurrent gills that turn pink, a strong farinaceous odour and a salmon-pink spore print.

The First Impression

Clitopilus prunulus is a species you identify by texture as much as by colour. The setting is typically a grassy woodland clearing, the mossy edge of a ride, a wood bank or open ground beneath scattered oak, beech or pine, from midsummer through autumn. What catches the eye is a smallish, chalky-white to pale grey mushroom with an irregular, slightly lopsided cap and a stipe that is often noticeably short and set off-centre, so the whole fruitbody has a leaning, unbalanced posture.

Pick it up and immediately do two things. Run a finger over the cap — it should feel like fine kid leather or dry chamois, matt and faintly greasy-soft to the touch, with no shine and no stickiness. Then smell it. The odour is strongly farinaceous, the smell of freshly milled grain or damp cereal dust, and in fresh material it is powerful. Cap texture plus that odour will get you to the right genus faster than anything else.

Reading the Cap

The cap is 3–10 cm across, convex when young with a strongly inrolled margin, then flattening and often becoming shallowly depressed or funnel-shaped in the centre. Older caps are rarely circular; the margin tends to be wavy, lobed or split, and the whole cap can be irregularly bent.

Colour is white, ivory, cream or pale grey, sometimes with a faint buff or greyish flush in the centre with age. The surface is dry, matt and finely felted or pruinose — under a lens, minutely velvety. It is never viscid, never zoned, never scaly, and it does not show the concentric watery rings that some pale funnel-caps display.

The Gills — the Colour Change That Names It

Turn it over. The gills are the second essential character:

  • Attachment: strongly and deeply decurrent, running well down the stipe as narrow ridges
  • Spacing: fairly crowded, narrow, and forking or intervening near the margin
  • Colour when young: white to pale cream
  • Colour when mature: a distinct salmon-pink or flesh-pink as the spores ripen on the gill faces

That white-to-pink transition is a spore-driven change and it is the key to placing the mushroom. A pale funnel-shaped mushroom whose gills stay white to the end belongs somewhere else. Check a mature specimen; on very young fruitbodies the pink has not yet developed and you may need to return or wait.

Stipe, Base and Flesh

The stipe is short relative to the cap — usually 2–5 cm long and 0.5–1.5 cm thick — solid, white, and often eccentric, attaching off the centre of the cap. It tapers slightly downward in many collections and is finely silky to minutely downy over its surface, sometimes with a faint white bloom near the apex.

There is no ring, no cortina and no volva. Excavate the base; it commonly carries a small tuft of white mycelium and bound soil, but no bulb, sac or sheath.

Split the fruitbody lengthwise. The flesh is white, soft and rather fragile — the cap flesh in particular breaks cleanly rather than tearing fibrously — and it does not change colour on exposure. There is no latex, no blueing, no reddening. The farinaceous odour becomes noticeably stronger from the cut surface.

Taking a Spore Print

This is the confirming test and it is worth doing properly. Cut the cap free and place it gills-down on white paper, cover with a bowl, and leave two to four hours. The deposit is pink to salmon or flesh-coloured, sometimes with a slightly ochre tone in a thick print. Judge it by scraping the powder into a heap and viewing it in daylight; a thin scatter can look deceptively pale.

Under the microscope the spores are the clinching feature of the genus: ellipsoid to spindle-shaped, roughly 9–12 × 5–7 µm, and marked with six to ten longitudinal ridges, so that in end-on view (optical cross-section) they appear angular or polygonal. Pinkish-spored relatives in Entoloma have spores that are angular in a different way — irregularly faceted rather than ridged along their length.

Substrate and Season

Clitopilus prunulus fruits from soil, typically in short grass, moss or thin litter rather than deep leaf mould, in woodland glades, along path margins, on grassy wood banks and in open parkland with scattered trees. It is associated with a range of broadleaves and conifers and its fruiting frequently coincides with that of large boletes in the same ground, which is why field mycologists in several countries treat it as an informal indicator species for bolete habitat.

The season is long — July to November in temperate regions, peaking in late summer and early autumn — and fruitbodies appear singly, in small groups or in loose arcs.

Separating the Look-alikes

  • Funnels (Clitocybe spp.) — the critical comparison, since several are white with decurrent gills. Look at the spore print, which is white to cream in Clitocybe, and at the cap surface, which is smoother, often silky or faintly zoned rather than kid-leather matt. C. rivulosa and C. dealbata show concentric watery bands on the cap and grow in grassland; C. phyllophila is larger with a whitish frosted cap in woodland litter.
  • Clouded Funnel (Clitocybe nebularis) — much bigger and greyer, with a cloudy grey cap, gills only shortly decurrent, and a cream print.
  • Pinkgills (Entoloma spp.) — also pink-spored, but the gills are typically adnexed to sinuate, not deeply decurrent; the stipe is fibrous, often striate and cartilaginous; and the caps are usually greyish-brown and hygrophanous rather than white and felted.
  • Miller's relatives (Clitopilus scyphoides and allies) — the same genus and same characters in miniature, with caps under 3 cm, usually in grass and moss.
  • Oysterlings and small Pleurotus — cap laterally attached with no proper central stipe and gills radiating from the attachment point; white spore print.
  • Milkcaps (Lactarius spp.) — some are white with decurrent gills but release latex from cut gills and have brittle, granular flesh.
