Veiled Oyster Identification Guide
How to read the oyster mushroom that grew a stem and a ring: felty scaly cap, cottony veil fragments at the margin, decurrent gills, white print and hardwood wounds.
The Encounter
Veiled Oyster is usually spotted at eye level or above, not in the litter. You are walking through mature broadleaf woodland, parkland or an old avenue in autumn and you notice a solid whitish bracket sticking out of the trunk of a living oak, beech, poplar or ash, often at an old pruning scar, a lightning strike or a limb wound, anywhere from waist height to four or five metres up. Usually there is one, or a few in a loose vertical line following the wound; it does not form the dense tiers of the common oyster mushroom.
The impression at a glance is of an oyster mushroom that has done two unusual things: it has grown a distinct stem, and it has a shaggy fringe of cottony tissue hanging from the cap edge. Those two features, the stipe and the veil, are the whole identification in miniature.
Cap
Diameter runs 5 to 15 cm, sometimes larger on a productive wound. The cap starts convex with a strongly inrolled margin, then flattens and often becomes shallowly depressed toward the stipe. It is thick, firm and heavy for its size.
Colour is whitish to cream when fresh, ageing to pale ochre or dull straw-yellow, and old or damaged areas discolour a definite yellow. The surface is dry, never slimy, and densely tomentose: a matted, felty covering that breaks up with expansion into appressed woolly fibrils and small soft scales, coarsest at the centre.
Now look at the margin. On young fruit bodies it carries conspicuous white cottony flaps and shreds, the torn remains of a partial veil that stretched from cap edge to stipe. Even on older specimens you will usually find a few adhering woolly patches. This is the single most useful character of the species and the reason for its common name.
Gills and Spore Print
The gills are decurrent, running noticeably down the stipe rather than stopping at it, and where they meet the stipe apex they often anastomose into a shallow network of ridges. They are white to cream at first, discolouring pale yellow to ochre with age or where bruised, moderately spaced, fairly broad, with entire edges.
Take a spore print by laying a cap gills-down on paper overnight under a bowl. The deposit is white to very pale cream, so use dark paper or place the cap across the join of a white and a black card to be certain. A white print rules out a very large number of the wood-growing look-alikes at a stroke.
Under the microscope, the spores are smooth, thin-walled, hyaline, and cylindric-ellipsoid, roughly 9 to 13 by 3.5 to 4.5 micrometres.
Stipe and Base
Unlike most of its genus, this species has a real stipe. It is 2 to 8 cm long and 1 to 3 cm thick, stout, firm, tapering downward, and typically eccentric or lateral, though a fruit body growing out of the top of a horizontal wound can have a nearly central stem.
Look for the ring. A woolly, cottony annular zone or a torn membranous ring sits on the upper stipe where the veil detached. It is fugacious, which means it often survives only as a fibrous girdle or a change in surface texture, so examine young material where possible. Below the ring zone the stipe is white and fibrillose to scaly; above it, smoother and grooved by the descending gills.
The base is attached directly into the wood, often with white mycelium invading the bark. There is no volva and no basal bulb.
Flesh and Colour Change
Cut a fruit body from cap edge through the stipe. The flesh is thick, solid, white and firm, quite tough in the stipe. It does not change to blue, red or black on exposure. What it does do is discolour slowly to pale yellow, particularly in the stipe base and in older tissue, and that yellowing carries through to gills and cap surface in mature fruit bodies. Odour is mild and pleasantly fungal.
Substrate, Season and Ecology
This is a wound parasite and white-rot saprotroph of broadleaf trees. It enters through damaged bark and dead branch stubs, colonises heartwood and sapwood, and eventually fruits from the wound. Oak and beech are the classic hosts; poplar, ash, elm, lime and maple are all recorded. It is unusual on conifers.
Because the mycelium is established inside a living trunk, fruiting recurs at the same wound in successive years, which makes known trees worth revisiting. The season is late summer through autumn, later than the summer oyster species and usually before the hardest frosts.
The rot it causes is a white rot, degrading lignin and leaving pale, fibrous, softened wood, and its habit of exploiting wounds on otherwise vigorous trees makes it ecologically important in creating heart-rot cavities used by nesting birds and invertebrates.
Look-alikes, on Morphology Alone
Pleurotus ostreatus is the main confusion. It has no veil, no ring, no true stipe to speak of, a smooth grey, brown or bluish cap, and it fruits in dense overlapping tiers on dead wood and fallen logs. The absence of any veil tissue on the cap margin is decisive.
Pleurotus pulmonarius is paler, thinner and smaller, fruits mainly in summer, and again has no veil.
Pleurotus cornucopiae has very strongly decurrent gills forming a pronounced network far down the stipe, grows in clustered bouquets from a common base, has a smooth pale cap, and lacks veil remnants.
Hypsizygus ulmarius and H. tessulatus have a central stipe, gills that are adnate to notched rather than running down the stem, a smooth cap that often cracks into a mosaic, and no veil.
Neolentinus lepideus shares a scaly cap and a scaly stipe with a ring zone, but its gill edges are conspicuously jagged and saw-toothed, its flesh is very tough, and it grows on conifer wood and treated timber.
Volvariella bombycina is white, silky-hairy and grows from hardwood wounds, but it has a large sac-like volva at the base, no ring, and a pink spore print.
Armillaria species have a ring, but they fruit in dense clusters at the base of trunks and from roots, have black bootlace rhizomorphs under the bark, non-decurrent gills and a cream print, and never carry the woolly veil flaps on the cap margin.
