Vinegar Cup Identification Guide
A spring field guide to Helvella acetabulum, the ribbed goblet fungus of calcareous woodland paths, and how the branching ribs running up the outside of the cup set it apart from every relative.
The First Impression
This is a spring fungus, and finding it usually means walking well-drained, lime-rich ground while the woodland canopy is still opening. Path edges, track verges, old quarry floors colonised by scrub, chalk or limestone banks under oak, beech and hazel, and the thin grassy margins where soil is compacted and vegetation is sparse — these are the places to look.
What you see is not a mushroom shape at all. It is a cup: a deep, stiff, symmetrical goblet sitting low on the ground, two to seven centimetres across the mouth, dark inside and paler outside, on a short thick stalk. The immediate impression is of something ceramic rather than fleshy, because the wall is firm and slightly brittle and the outline is clean.
Get down to ground level immediately. The character that identifies this species is on the outside of the cup, and it is invisible from above.
The Cup
Start with the interior surface, which is the fertile layer. It is smooth, dull rather than glossy, and coloured a mid to dark brown — sometimes warm and chestnut, sometimes greyer and more umber depending on age and moisture. It is often faintly wrinkled near the base of the bowl where the wall meets the stalk.
The outer surface is a different colour and a different texture entirely: paler, greyish-buff to whitish-brown or fawn, and finely downy or granular under a hand lens, so that it feels slightly furry and looks matt.
The cup shape is consistently deep. Young specimens are almost closed, like a stemmed egg cup with an inturned rim. As they expand the mouth widens and the margin can become irregular, split, or torn into shallow lobes, but the fungus rarely flattens out into a saucer. That persistent depth distinguishes it from the many shallow discs and saucers on the same ground.
The Ribs: The Diagnostic Character
Now the crucial detail. From the base of the cup, raised ribs run outward and upward across the exterior. They are pale, sharp-edged, and they branch and fork as they ascend, forming a network of veins over the lower half of the outer wall. In good material these ribs continue well up the outside of the cup, sometimes almost to the rim, before fading.
This is the character to test carefully, because it is what separates this species from the rest of the genus. Turn the cup on its side or lift it and look along the exterior in raking light. If the ribs are confined to the extreme base and stop as soon as they reach the bowl, you are probably dealing with a relative. If they climb the outside of the cup in a branching pattern, you are in the right place.
The Stalk and Base
The stalk is short — often only one to three centimetres — and disproportionately thick, so the whole fungus looks stoutly built. It is whitish to pale cream, sometimes greying with age.
Its surface is deeply and coarsely ribbed and pitted. The ribs run lengthwise, are separated by deep grooves and irregular hollows, and merge upward into the ribs on the cup exterior, so the ribbing of the stalk and the ribbing of the cup are visibly continuous. Sectioning the stalk lengthwise shows a chambered interior: the ribs and folds create internal cavities rather than a simple solid or hollow core.
Excavate the base rather than pulling. It is usually embedded a centimetre or two in compacted soil, with pale mycelial threads binding soil particles. There is no cup, bulb or sheath at the base.
Flesh and Texture
Cut through the cup wall. The flesh is thin, whitish to pale buff, firm and brittle, snapping rather than tearing. There is no colour change on cutting or handling, no latex, and no milky exudate. The odour is faint and earthy.
The texture point is worth emphasising because it is a genus-level clue: this is a cup fungus with a rubbery-brittle, almost cartilaginous consistency, quite unlike the soft, waxy, easily crumbled flesh of most true Peziza cups.
Getting a Spore Deposit
This fungus has no gills, so the usual method is adapted. Spores are produced in asci lining the inner surface of the cup and are shot upward and outward into the air.
To capture a deposit, invert the fresh cup over a clean glass slide or a piece of dark card, prop it so that the fertile face is a centimetre or so above the surface, and cover the whole arrangement to keep it humid and draught-free. Leave it for several hours. In fresh, well-hydrated material the discharge can be vigorous enough that a gentle breath or a sudden change in humidity triggers a visible puff of spores from the cup surface — a small cloud that hangs briefly in the air.
The deposit is whitish to very pale cream. Under a lens it appears as a fine even dust. It is a useful confirmation of an ascomycete, though for this genus the exterior ribbing is far more decisive than the deposit colour.
Substrate, Season and Ecology
The season is the first strong filter. This is a spring species, fruiting from early spring into early summer, and it is largely absent in autumn when most cup fungi you meet will be something else.
It grows on soil, not on wood. It strongly prefers calcareous, well-drained substrates: chalk and limestone soils, old quarry and lime-kiln ground, gravelly path edges, and compacted verges under broadleaved trees, especially oak, beech, hazel and hornbeam. Bare or thinly vegetated ground with some disturbance suits it, which is why path margins are so productive.
Fruit bodies appear singly or in small scattered groups, occasionally in loose lines along a path edge where the soil conditions are uniform. The species is generally regarded as forming a nutritional association with the surrounding trees and soil organic matter; whatever the precise strategy, its consistent occurrence under particular broadleaved trees on lime-rich ground is a reliable part of the identification picture.
Separating It From Look-alikes
Helvella leucomelaena. The most frequent confusion. It is also a deep cup on a short stalk, but the inner surface is much darker — blackish-brown to near black — the outer surface is paler and more contrasting, and critically the ribs do not run up the outside of the cup. They stop at or just above the base. It also favours sandy soils under conifers, especially pine, whereas this species is a broadleaf and lime-loving fungus.
Helvella costifera. Very close indeed, and also ribbed on the exterior. Separate it on interior colour: H. costifera has a distinctly greyish to bluish-grey inner surface rather than a warm to dull brown one, and its cup tends to be broader and shallower in proportion, opening more widely with age.
Helvella queletii. Has a well-ribbed stalk but the ribs terminate abruptly where the stalk meets the cup, leaving the outer cup wall smooth and downy. The cup is also usually shallower and the stalk longer.
Peziza species. Numerous, and some are similar in colour, but they are sessile or nearly so, with no true stalk and certainly no ribbing, and their flesh is softer and more brittle-waxy. A true stalk with continuous lengthwise ribs excludes the genus at once.
Helvella lacunosa and Helvella crispa. Share the deeply grooved, chambered stalk but carry a saddle-shaped or lobed, folded cap on top rather than an open cup, so the confusion is only in the stalk.
