Winter Chanterelle Identification Guide

A field guide to recognising Craterellus tubaeformis: the brown funnel cap, blunt forked grey-lilac ridges instead of true gills, and the hollow yellow stem, plus how to split it from its closest relatives.

First impressions and the setting

Winter Chanterelle is a late-season fungus of mossy, acidic, damp woodland, and finding it is usually a matter of getting your eye in rather than spotting a conspicuous mushroom. You are standing in conifer forest - spruce or pine is classic - on a deep carpet of moss, needle litter and rotting wood, often in a wet hollow, along a ditch bank, or on a well-rotted mossy log. Birch woodland on acidic soil works too.

The first impression is subtle: scattered dull brown funnels barely lifting above the moss, looking more like fallen leaves than mushrooms. Then you notice a second one, then twenty, and the troop resolves into a dense colony spread over several square metres. The best recognition trick is to look for the yellow: the stems are a clear ochre-yellow that shows between the moss stems even when the caps blend in.

Reading the cap

Caps are small, two to six centimetres across. They start convex with an inrolled margin, then flatten and quickly become funnel-shaped or trumpet-shaped, with the centre depressed and often perforated so that the hollow of the stem opens through the middle of the cap. Poke a straw or grass stem down the stipe of a mature specimen and it will frequently emerge at the top.

The margin is thin, wavy and irregularly lobed, usually turned down at first and then flaring and often becoming upturned and crimped in old specimens. There is nothing regular or geometric about the outline.

Colour is a dull yellow-brown, greyish-brown, umber or tawny, darker at the centre, sometimes with a faint olive cast. The surface is dry and finely felted to minutely scaly when examined with a lens, not smooth and waxy. In wet weather caps darken considerably and can look almost blackish-brown; the same collection dried out reads pale tan.

The flesh is very thin, pallid to yellowish, and pliant rather than brittle - it bends and tears rather than snapping cleanly, which is a genuinely useful tactile character.

The spore-bearing surface

This is the character that defines the group. Turn the fruit body over. The underside does not carry true gills. Instead it is covered in blunt, thick, wax-like ridges or folds that run down the stem in a strongly decurrent fashion, fork repeatedly and are interconnected by cross-veins between the main ridges, giving a shallow reticulate or wrinkled appearance.

Run a fingertip across them. True gills are thin, knife-edged plates that catch the finger; these ridges are rounded, low and blunt, and feel like moulded wax. They also cannot be cleanly detached from the flesh, because they are simply folds in it.

Colour of the ridges is diagnostic: pale grey, greyish-lilac, greyish-ochre or lavender-grey, usually noticeably duller and greyer than the yellow stem. They pale further in old material and may develop a faint bloom of spores.

Stipe, base and flesh

The stipe is slender, three to eight centimetres tall and three to eight millimetres thick, often flattened, grooved or twisted rather than perfectly round, and typically curved as it emerges from the moss.

Colour is the key here: bright to dull ochre-yellow, egg-yellow or brownish-yellow, and it usually contrasts clearly with the greyer ridges above it. Old and waterlogged specimens fade towards dirty ochre.

Critically, the stipe is hollow. Slice one lengthways and you find a continuous cavity running from the base up into the depressed centre of the cap. That hollow tube, plus the yellow colour, plus the grey forked ridges, is the core of the identification.

The base is often slightly narrowed, sometimes with fine white mycelial down binding moss and litter. There is no ring, no volva and no bulb. Cut flesh does not change colour, and there is no milk or latex.

Taking and reading a spore print

Prints are easy but need patience because the fruit bodies are small. Cut several stems flush and arrange four or five caps ridge-side-down on white paper, cover them, and leave them overnight. The deposit is thin, so a single cap often gives a disappointing result while a group gives a clear one.

The print is white to pale cream, sometimes with a faint yellowish tint. Any pinkish, brown or rusty print rules out the identification immediately, which is the fastest way to eliminate one of the common look-alikes.

Microscopically the spores are broadly ellipsoid, smooth and thin-walled, and the hymenium lacks cystidia.

Substrate and season

This species forms mycorrhizal partnerships with trees, principally conifers such as spruce and pine and also birch on acidic ground. It does not decompose wood in a functional sense, although it very often fruits on and around well-rotted mossy logs and stumps where the moss layer is deep and the litter acidic. Wet, sheltered, mossy ground with a thick bryophyte layer is the habitat to search.

Season is late and long. Fruiting typically begins in early to mid autumn, peaks well after the main autumn flush of other fungi, and continues into early winter, persisting through mild frosts and often being the last conspicuous agaric-like fungus of the year in northern woodland. Fruit bodies are gregarious and frequently densely clustered, sometimes with two or three stems fused at the base.

Separating it from the look-alikes

Craterellus lutescens is the nearest relative and the commonest confusion. Its underside is nearly smooth or only shallowly wrinkled with very low, poorly developed veins rather than clear forked ridges, and its stem is a warmer orange-yellow. It also favours very wet mossy ground and often smells more strongly fruity.

Craterellus cornucopioides is a deeper trumpet, dark grey-brown to blackish throughout, with an essentially smooth or faintly wrinkled undersurface and no yellow anywhere on the stem.

Cantharellus cibarius and its allies are uniformly egg-yellow to golden across cap and ridges, are much fleshier, have a solid stem that is not hollow, and fruit earlier in the season.

Hygrophoropsis aurantiaca is the classic trap. It is orange to orange-brown, and its underside carries true gills - thin, sharp-edged, repeatedly forked, and separable from the flesh with a fingernail. Its stem is solid, not hollow, and it grows on conifer litter and rotting wood. Feel the underside and check the stem for a cavity and the two part cleanly.

Small brown Mycena and Omphalina-type fungi in the same moss have true gills, brittle stems and different proportions, and rarely show the decurrent blunt ridges.

Arrhenia and Lichenomphalia species in moss are grey and thin, with true if blunt gills, and lack the yellow hollow stem.

Common questions

How do I tell the false gills from real ones?
Run a fingertip across the underside. The ridges here are blunt, rounded and wax-like, forking repeatedly and joined by cross-veins, and they cannot be peeled off because they are folds of the cap flesh itself. True gills are thin plates with a sharp edge that catch on the finger and can be scraped away from the flesh with a fingernail. This one test separates it from Hygrophoropsis aurantiaca.
What habitat and season should I target?
Damp, acidic, mossy woodland, especially spruce and pine forest and birch on poor soil, with a deep bryophyte layer, wet hollows, ditch banks and well-rotted mossy logs. It fruits late, from mid autumn into early winter, persisting through mild frosts, and grows gregariously in dense troops rather than as scattered singles.

Is it decomposing the logs it grows on?
No. It forms mycorrhizal associations with the roots of conifers and birch, exchanging soil nutrients for tree sugars. It frequently fruits on and around rotten mossy logs and stumps because those places hold moisture and support the deep moss layer it favours, but the wood is a rooting medium and microhabitat rather than a food source.
