A pink, concentrically banded birch milkcap with a heavily inrolled, shaggily woolly cap margin and copious white latex that does not change colour.

Overview

Lactarius torminosus is the archetypal woolly milkcap: a medium to large pink-capped fungus whose young margin is rolled tightly inward and clothed in a dense fringe of matted hairs. In fresh specimens that fringe is so pronounced that the cap edge looks bearded, and it is the feature the English name records.

The cap is pale flesh-pink to salmon with distinct concentric bands of deeper colour, and it flattens and becomes funnel-shaped with age as the woolly margin gradually uncurls and wears away. Broken gills release abundant white latex that stays white — an important point, since several related milkcaps have latex that yellows or changes on the gill surface.

The species belongs to a group of hairy, birch-associated milkcaps whose members are separated largely by intensity of cap colour, degree of zoning and how shaggy the margin is. L. torminosus is the largest and pinkest of these, and it is one of the commonest larger fungi of northern birch woodland.

How to identify it

Cap

The cap is 4–12 cm across, convex with a deeply inrolled margin, then flattening and becoming depressed to broadly funnel-shaped. It is pale to fairly strong pink or salmon, marked with clear concentric zones of deeper colour, and it is slightly viscid at the centre when wet. The margin bears a conspicuous shaggy fringe of matted woolly hairs, densest in young specimens and thinning with age.

Gills

Gills are adnate to slightly decurrent, crowded, narrow, and white to pale pinkish-buff, deepening slightly toward cream. They bruise brownish and often show dried latex as small pale beads or a chalky film along broken edges.

Stipe

The stipe is 3–8 cm tall and 1–2 cm thick, cylindrical or tapering downward, pale pink to whitish, smooth or with a few faint shallow pits. It is stuffed then hollow, and it lacks a ring, a volva and any bulb or sac at the base.

Flesh & spore print

The flesh is white to pale pink, firm, and brittle. Cut tissue and broken gills release copious white latex that remains white and does not turn yellow on exposure or on a handkerchief. The spore print is cream, with warty, partly reticulate spores.

Where and when it grows

Lactarius torminosus grows with birch and is essentially restricted to it, appearing in birch woodland, on birch-invaded heath and common land, along damp woodland edges and in mixed stands wherever birch is a component. It is indifferent to soil reaction but is most abundant on the acid, sandy and peaty ground that birch colonises.

It is very common across northern and temperate Europe, including Britain and Ireland and throughout Scandinavia, and it occurs across northern Asia and in North America wherever birches grow. Fruiting runs from late summer through autumn, often in large troops and rings under individual trees, and it can continue until the first hard frosts.

Ecological role

This milkcap is ectomycorrhizal with birch. Its hyphae sheathe the fine root tips and form a Hartig net through which mineral nutrients, especially nitrogen and phosphorus, and water pass to the tree in exchange for photosynthetic carbon. On the poor, often waterlogged soils where birch grows, the fungal partner substantially extends the tree's effective root system.

Both the woolly margin and the latex are defensive structures. The dense marginal hairs shield the developing gills of young fruiting bodies, and the pressurised latex floods any wound within seconds, physically gumming the mouthparts of small grazing invertebrates. Larger fungus-feeding fly larvae still colonise mature specimens and, along with slugs and small mammals, distribute spores through the litter.

Similar species

Lactarius pubescens, the Bearded Milkcap, is the nearest relative and shares the birch host and hairy margin, but it is smaller, much paler cream to whitish-pink, and has a cap with little or no concentric zoning; its marginal hairs are downy rather than shaggily matted. Lactarius mairei has a strongly hairy margin too but its cap hairs form coarse upright scales and it grows with oak rather than birch.

Lactarius spinosulus is far smaller with a lilac-pink, finely scaly cap under birch, and it lacks the woolly fringe entirely. Lactarius controversus has a whitish cap with pink blotches and pale pink gills, is much bulkier, and grows with poplar and willow instead of birch.
