A white Agaricus that flushes instant bright chrome-yellow when the cap margin is rubbed or the stem base is cut, and carries a distinctive ink-like odour. Young caps often have a flat-topped, squared-off profile.
Overview
Agaricus xanthodermus is the best-known member of the Xanthodermatei, a section of Agaricus united by an immediate bright yellow staining reaction and a chemical, ink-like odour. Everything else about it - free gills, a chocolate-brown spore print, a ringed stem, no volva - is standard Agaricus, so the yellowing reaction and the smell carry all the identification weight.
The reaction is unusually vivid and unusually fast. Rubbing the edge of the cap with a fingernail produces a bright chrome- or lemon-yellow smear within seconds, and slicing the stem lengthwise reveals an intense yellow flush concentrated in the base, which then fades to a dingy brownish-yellow after some minutes. Other white Agaricus species yellow slowly, faintly and diffusely, if at all.
Unlike its pasture relatives, this species is largely a fungus of disturbed, shaded, nutrient-rich ground - garden borders, hedge bottoms, park shrubberies and path edges - which makes it one of the Agaricus species people are most likely to meet close to home.
How to identify it
Cap
5-15 cm across, distinctive in the young stage for its flat-topped, almost squared or trapezoidal profile before expanding to convex and then flat. The surface is white to greyish-white, smooth or minutely fibrillose, sometimes with fine grey-brown scales in the centre. Rubbing the margin produces an immediate bright chrome-yellow stain.
Gills
Free and crowded, pale greyish-white to pale pink when young - not the bright salmon of the Meadow Mushroom - then dull pink, purplish-brown and finally dark chocolate-brown.
Stipe
6-15 cm long, white, smooth, slender relative to the cap and usually with a distinctly bulbous or abruptly swollen base that sits without any sac or cup. The ring is large, thick, pendulous and often double, similar to the Horse Mushroom's. Cutting the stem lengthwise is the definitive test: the flesh in the base flushes vivid chrome-yellow almost instantly.
Flesh & spore print
Flesh is white and firm, yellowing quickly where cut - most intensely in the stem base - before dulling to a brownish-yellow. The odour is chemical and distinctive, variously described as ink, phenol, iodine or old library paste, and is strongest in the base and in older material. The spore print is dark chocolate-brown.
Where and when it grows
It grows on soil in disturbed, humus-rich and often shaded places: garden lawns and borders, hedgerows, parks, churchyards, roadside verges, compost-enriched ground, path edges and the grassy margins of broadleaf woodland. It tolerates far more shade and disturbance than the Meadow and Horse Mushrooms, which are pasture specialists.
Fruiting runs from summer into late autumn, often in troops, clusters and rings, and it is one of the commonest large white mushrooms to appear on suburban lawns. The species is widespread across Europe, North America, Australasia and temperate Asia, and has spread readily with urban and garden habitats.
Ecological role
Agaricus xanthodermus is saprophytic, decomposing leaf litter, dead roots and humus in nutrient-rich topsoil. It has no tree partners and is entirely independent of mycorrhizal associations, which is why it colonises made ground, compost-improved borders and mulched beds so readily.
Its mycelium is perennial and spreads radially, producing recurring troops, arcs and rings on the same lawn or border for many years. As a decomposer of litter and garden organic matter it plays a routine but useful part in nutrient cycling in urban and suburban soils, and its fruitbodies support the usual community of fungus gnats, beetle larvae and slugs.
Similar species
The Horse Mushroom (Agaricus arvensis) is the closest match in size and ring structure, but its yellowing is slow, faint and dull rather than instant and vivid, its base is not sharply bulbous, and it smells sweetly of aniseed rather than of ink. The Meadow Mushroom (A. campestris) is smaller, has bright salmon-pink young gills, a thin simple ring, and does not yellow at all.
The Wood Mushroom (A. silvicola) yellows and has a bulbous base too, but its stain is a softer lemon shade, it is a slender woodland species, and it smells of aniseed. Other members of the yellow-staining group, such as A. moelleri (A. praeclaresquamosus), share the reaction and the ink-like odour but have conspicuously grey-brown fibrillose scales over the cap. White Amanita species are ruled out structurally by their permanently white gills, white spore print and membranous volva at the stem base.
