Bearded Milkcap Identification Guide
How to work through Lactarius pubescens in the field, from the shaggy inrolled margin and pale unzoned cap to the unchanging white latex and its strict association with birch.
First Impression
You usually meet this one on poor, open, sandy ground rather than in deep shaded woodland: a scatter of pale, medium-sized, funnel-shaped fungi pushed up through moss, thin grass or bare sand under young birch. From above they look washed-out, almost dirty cream, with a slight pink flush toward the centre. What catches the eye when you crouch is the margin, which is rolled tightly under and fringed with a dense woolly beard of long, tangled white hairs. That shaggy rim is the character the common name records, and it is visible without a lens on any specimen that is not badly weathered.
Where You Are Standing
Habitat carries a lot of weight here. The Bearded Milkcap forms ectomycorrhizal partnerships with birch and, as far as field observation goes, with birch alone. Look on sandy heaths, dune slacks, colliery spoil and reclaimed ground, roadside verges, parkland edges and the birchy fringes of plantations, particularly where the trees are young and the soil is thin and nutrient-poor. It fruits from midsummer into late autumn, often in loose troops of a dozen or more following the drip line of a single sapling. If there is no birch within reach of the roots, look again at your identification.
Working Through the Cap
The cap runs roughly four to eight centimetres across. It begins convex with the margin curled hard under, then flattens and finally becomes shallowly funnel-shaped with a depressed centre. The ground colour is whitish to pale pinkish-buff, deepening to a soft salmon or pale flesh tone over the disc, and the critical point is that it is either completely unzoned or shows only the faintest suggestion of concentric banding. Surface texture is dry to slightly tacky in wet weather, never glutinous. The woolly fringe is densest on young caps and gradually wears down, so on old material you may have to look for remnant hairs on the extreme edge or on the underside of the rolled rim.
The Gills
Turn the cap over. The gills are crowded, narrow and rather shallow, running from adnate to slightly decurrent so that they just begin to descend the top of the stipe. Colour is whitish at first, ageing to pale cream with a warm pinkish cast. Edges are even. Look for short intermediate gills interleaved between the full-length ones, a normal feature of the genus. Where an insect has grazed a gill, or where you nick one, note carefully what the exuded latex does next, because that is the next step.
Latex, Flesh and Colour Change
Cut across the gills and the stipe apex with a clean blade. Latex appears promptly and copiously and is white. The test that matters is whether it stays white. Smear a drop onto a white handkerchief or a piece of paper tissue and watch it for five to ten minutes: in this species it dries white to faintly cream and does not turn yellow, orange or lilac. The flesh itself is white, firm but brittle, and does not change appreciably when exposed, though it may take on a faint cream tone in the stipe of old specimens. There is no blueing, no reddening and no greening anywhere.
The Stipe and Base
The stipe is short relative to the cap, commonly three to six centimetres tall by one to one and a half thick, cylindrical or narrowing slightly downward. It is dry, smooth, whitish to very pale pink, without a ring and without scattered coloured pits or scrobicules. Internally it becomes hollow with age. Dig the whole thing rather than snapping it: the base should be clean and slightly tapered, embedded in sand or moss with no bulb, no volval sac and no rhizomorph cords. The fine white mycelial threads binding sand grains to the base are worth noting as evidence that the soil connection is real.
Taking a Spore Print
Spore colour is a genuine discriminator among the pale milkcaps, so make the print carefully. Cut the cap free just below the gills, set it gills-down on white paper or, better, half on white and half on black glass, cover with a cup, and leave several hours. The deposit here is pale cream with a warm buff or faintly pinkish tint, distinctly not pure white and not deep ochre. Scrape the deposit into a heap with a blade before judging the colour, because a thin dusting always reads paler than it is. Under a microscope the spores are broadly elliptic, around seven to nine by six micrometres, decorated with warts and short ridges that form a partial network and that stain blue-grey in iodine.
Sorting Out the Look-alikes
Woolly Milkcap, Lactarius torminosus. The main confusion, and it shares birch and the shaggy margin. It is a bigger fungus, commonly six to twelve centimetres across, and its cap is a much clearer pinkish-orange marked with distinct concentric zones. Where this species is pale and effectively unzoned with a lighter overall look, the Woolly Milkcap is stronger-coloured and obviously banded. Spore deposit is similar, so lean on cap colour, zonation and size.
Lactarius scoticus. Smaller and whiter, hairy-margined, and tied to wet mossy birch ground including bog edges. Slighter build throughout and a cleaner white cap.
Lactarius controversus. Large and firm, white with vinaceous or pinkish blotches, gills distinctly pink at maturity, margin only slightly downy rather than bearded, and associated with poplar and willow rather than birch.
Lactarius vellereus and Lactarius bertillonii. Much larger, chalk-white, with a finely velvety rather than shaggy cap surface, very distant thick gills, and a stout short stipe. They grow with broadleaves generally, not specifically birch.
Russula species. Any pale brittle-gilled fungus without latex is not a milkcap. Always confirm latex before going further.
Putting It Together
A pale, faintly pink, essentially unzoned cap with a strongly inrolled and woolly-bearded margin, crowded pale gills, abundant white latex that stays white, a short whitish stipe, a pale cream spore deposit, and young birch overhead on sandy ground. That combination is the Bearded Milkcap, and no single feature on its own will get you there.
