Beech Milkcap Identification Guide

A step-by-step read of Lactarius blennius: the slimy olive-grey spotted cap, white latex that dries grey on the gills, and its strict partnership with beech.

The Situation

You are on a beech slope in autumn, walking through deep coppery litter with the smooth grey trunks rising around you, and the ground is dotted with medium-sized, dull olive-grey caps that look wet even when it has not rained for a day. Pick one up and your fingers slip on it. This is the most abundant milkcap of European beechwoods, often fruiting in scattered troops of ten or twenty across a single slope, and the combination of slime, drab olive tones and a spotted cap surface makes it recognisable long before you check any microscopic detail.

The Cap, Read Carefully

The cap measures roughly four to ten centimetres across. It starts convex with the margin rolled tightly under, then flattens and finally develops a shallow central depression, occasionally becoming slightly funnel-shaped in old specimens. Colour is the first thing to record: an olive-grey, grey-green or drab greyish-buff, usually darker over the centre and lighter toward the rim, and rather variable, so a single collection can span pale putty-grey to a definite green-grey.

The surface is viscid to frankly glutinous when damp, drying to a slightly shining, tacky skin. Scattered across it, and typically arranged in vague concentric rings, are darker, translucent, water-drop spots that look as if droplets had soaked into the cuticle. These spots are one of the more useful features, though they can be faint or absent in dry weather, so treat their presence as confirmation rather than requiring them.

The margin is smooth, not grooved, and lacks any hairy or woolly fringe. Any beard on the rim points to a different species entirely.

The Gills and Their Staining

Underneath, the gills are crowded and narrow, adnate to slightly decurrent, whitish at first and ageing to pale cream. What matters is what happens where they are damaged. Slug grazing, bruising from your fingers or a deliberate cut all produce the same result: within several minutes the injured area darkens to grey and then to grey-brown as the exuded latex dries. Look closely at any older cap in the troop and you will usually find these grey stains already present around the nibbled edges, which lets you read the character without cutting anything.

Latex and Flesh

Cut across the gills with a clean blade. Latex flows quickly and abundantly and is white when it emerges. Watch it. On the gill surface, and on a smear placed on white paper, it dries to a dull grey or olive-grey rather than staying white or turning yellow. That greying reaction is the single most useful chemical clue in the field and separates the species from most of the pale milkcaps that share beech.

The flesh is white, thick over the centre and thinning toward the margin, firm but brittle, and it breaks with a clean snap rather than tearing in fibres. Cut flesh slowly greys where latex has run across it. There is no reddening, no blueing and no rapid dramatic colour flash.

The Stipe and Base

The stipe is four to six centimetres tall and one to two centimetres thick, cylindrical or narrowing slightly toward the base, and it is paler than the cap: whitish-grey to pale buff, sometimes with faint darker spotting. It is viscid in wet conditions, dry and slightly polished when the weather is fine. There is no ring and no volva. The interior is stuffed at first and becomes hollow with age, so slice it lengthwise to check. At the base you may find beech litter and fine white mycelial threads bound into the leaf mould, confirming a soil connection rather than a wood connection.

Taking a Spore Print

Remove the cap by cutting through the stipe just under the gills, place it gills-down on white paper with a cup over it, and leave it several hours or overnight. The deposit is cream to pale cream, not pure white and not deep ochre. Judge it by scraping the powder together into a small ridge, since a thin dusting always looks paler than it really is. With a microscope the spores are broadly elliptic to nearly round, around seven to eight by six to seven micrometres, ornamented with warts and ridges that form a partial network, and the ornamentation turns blue-grey in iodine.

Substrate, Season and Ecology

This is an ectomycorrhizal fungus, exchanging soil nutrients for sugars at the root tips of beech. In practice that means it grows only where beech grows, and it is faithful enough to that partnership that finding it under a lone beech in a mixed wood is normal while finding it away from beech should make you reconsider. It occurs on a wide range of soils but is especially abundant on chalk and clay beechwoods. Fruiting runs from late summer into late autumn, peaking in the main autumn flush, and the fruit bodies are often the first and last milkcaps of the season on a given slope.

Separating the Look-alikes

Lactarius fluens. The hardest one, since it also partners beech and its latex also greys. Its cap is darker olive-brown over the centre but shows a distinctly pale, clean marginal band that is not spotted, and the whole cap is less slimy. A clear pale rim on an otherwise dark cap points to fluens.

Lactarius circellatus. Associated with hornbeam rather than beech. The cap is greyish-lilac with obvious concentric zones rather than scattered water spots, and its white latex does not grey.

Lactarius pallidus. Also under beech, but uniformly pale ochre to pale buff with no olive tone and no spotting, and its white latex stays white.

Lactarius vietus. Latex also dries grey on the gills, but this species grows with birch, is more slender and thinner-fleshed, has a more lilac-grey cap and is far less glutinous.

Lactarius trivialis. A larger, more northern species of birch and spruce woods, lilac-grey and very slimy, with a longer stipe and a different habitat picture.

Russula species. No latex at all. Always confirm latex before comparing anything else.

The Working Combination

Slimy olive-grey cap with faint concentric water spots, crowded pale gills that stain grey where damaged, abundant white latex drying grey, a pale viscid stipe, a cream spore deposit, and beech overhead. That set is diagnostic.

Common questions

What is the key latex reaction?
The latex is white and copious when it first appears, but it dries to a dull grey or olive-grey on the gills and on a smear of white paper. That greying, rather than staying white or turning yellow, is the most useful field character.
Which tree does it grow with?
Beech, as an ectomycorrhizal partner at the root tips. It is abundant in beech woodland on chalk and clay and effectively absent where beech is not present, so a beech in the vicinity is part of the identification.
How do I separate it from Lactarius fluens?
Look at the cap margin. Lactarius fluens has a darker olive-brown centre and a distinctly pale, clean, unspotted marginal band, and it is less slimy overall. The Beech Milkcap is more uniformly olive-grey with scattered concentric water spots right out to the rim.
Are the concentric spots always present?
No. The darker translucent water-drop spots show best on moist caps and can be faint or missing in dry spells. Treat them as confirmation when present rather than as a required feature, and rely on the greying latex and beech association.
