Blushing Milkcap Identification Guide
How to identify Lactarius controversus by its heavy white cap with wine-red blotches, crowded pink gills, copious unchanging white latex, and its restriction to poplar and willow.
The setting and the first impression
The Blushing Milkcap is a big, heavy, low-slung fungus, and the place you find it does half the identification. Think of damp ground under poplars and willows: a riverside path, a shelterbelt of hybrid poplar across farmland, a dune slack with creeping willow, a damp corner of an old plantation. In these settings the fungus pushes up through sand, silt or matted litter from midsummer into autumn, often as a group of several fruit bodies, and it frequently emerges only partly, leaving a dirt-crusted white dome half-buried and easy to mistake for a stone. When you clear the debris you find something solid and squat: a broad white cap up to 25 cm across on a short thick stem, so firm and dense that lifting it out feels like extracting a lump of chalk from the ground. The wine-coloured blotches that name it may be obvious or almost absent, so do not lead with them.
Reading the cap
Look at the profile first. Young caps are convex with a strongly inrolled margin; the inroll is deep, tight and finely downy under a lens, and it persists well into maturity. As the cap expands it flattens and then depresses in the centre, ending up broadly funnel-shaped with a wavy, lobed and often irregularly split edge. The surface is white to dirty cream and typically bears vinaceous, wine-red or dull purplish-pink blotches, streaks or vague concentric zones, strongest towards the centre and often accompanied by ochre or brownish stains where the cap has been in contact with soil. In wet weather the cap is distinctly viscid to sticky, and it picks up sand grains and leaf fragments that then stay glued in place; in dry weather it becomes matt and can crack into patches. The cap is never truly scaly or shaggy, and it is never fringed at the edge with long hairs.
Reading the gills
Turn the cap over. The gills are the character that pulls this species out of the group of large white milkcaps. They are extremely crowded, narrow, thin, and clearly decurrent, running some way down the stem. Their colour is pale pink to flesh-pink or salmon, quite distinct from the white or cream gills of the other big white milkcaps, and the pink deepens as the spores mature. Gills fork irregularly near the stem, and damaged gills discolour brownish or ochre. Look at how the gill colour reads against the white cap: the contrast between a chalky white cap and a distinctly pink underside is the most memorable feature of the species and is visible at arm's length once you know to look for it.
Stem, base, flesh and latex
The stem is short and stout for the size of the cap, usually only 2-6 cm long but 1.5-4 cm thick, tapering downwards, solid, firm and white, sometimes with faint pinkish or ochre spotting. There is no ring, no cortina and no sac at the base; the base is simply blunt and often coated in adhering sand. The flesh is thick, white, firm and brittle, and it snaps rather than tears, which is typical of the whole milkcap and brittlegill family. Now cut the gills across with a knife. Milkcaps exude a latex, and here it is copious: abundant white droplets appear immediately along the cut. Watch them for several minutes on a white surface and on the gill face. In Lactarius controversus the latex stays white and does not change colour, and it does not stain the gills yellow, lilac or grey. That combination, plentiful white latex that remains white, plus pink gills, is highly diagnostic. Also note the texture of the cap surface: firm, viscid when moist, but not velvety.
Taking a spore print
Cut the stem flush with the gills and set the cap gills-down on white and on dark paper, cover it, and give it four to eight hours; a large cap can deposit heavily. The print is pale, ranging from cream to a pale pinkish-buff or pale ochre, and it is best judged in a thick deposit against white paper. Under a microscope the spores are broadly ellipsoid, roughly 6-8 by 4.5-6 micrometres, and ornamented with warts and low ridges that form a partial network. Those ridges turn blue-black in iodine, which is a feature of the family rather than the species, but the ornamentation pattern combined with the pale pinkish deposit is a useful confirmation when material is old.
Substrate, season and ecology
This species is mycorrhizal and its host range is narrow, which makes habitat one of the strongest identification characters available. It partners with poplars and aspens and with willows, and it is essentially confined to their root zones: riverbanks, damp woodland, poplar plantations, shelterbelts, and above all coastal dune slacks where creeping willow forms low thickets in damp sand. It favours calcareous or base-rich, often sandy soils. Fruiting runs from midsummer through to late autumn, frequently earlier than the main flush of woodland fungi, and fruit bodies are long-lasting and often heavily insect-damaged by the time you find them. Because the association is with living roots, the same colonies reappear in the same few square metres year after year.
Separating it from look-alikes on morphology alone
The comparison set is the group of large, white, latex-producing milkcaps.
Lactarius vellereus is a similar size and colour but has a dry, distinctly velvety cap surface that feels like felt under the fingers, thick, widely spaced gills that are cream to white and never pink, and a shorter, harder, more solid stem.
Lactarius piperatus is white and smooth-capped, but its gills are exceptionally crowded, narrow and pure white to cream, never pink, and its latex is white and copious as well, so the gill colour is the separating character.
Lactarius pubescens and Lactarius torminosus both have pinkish caps but are separated at once by the margin, which is conspicuously shaggy with long woolly hairs, and by their strict association with birch rather than poplar or willow.
Lactarius deceptus and other white milkcaps of Northern Hemisphere woodland have inrolled cottony margins and white gills, and again lack the pink gill colour.
Russula species of similar size are brittle and white-gilled but produce no latex whatever, which is the immediate test: cut a gill and look for droplets.
Large white Clitocybe species are separated by their thin, flexible flesh, absence of latex, and non-brittle texture; milkcap flesh is granular and snaps like chalk.
