Desert Truffle Identification Guide

A field walkthrough for Terfezia claveryi, the underground desert ascomycete found by reading cracked soil beside rock rose. Covers surface, marbled gleba, the darkening interior, spore ornamentation and the other hypogeous fungi it is confused with.

Finding a Fungus You Cannot See

Desert Truffle is hypogeous — it develops and matures entirely underground — so the first impression is never of a mushroom. It is of ground. You are walking across open arid or semi-arid steppe: sandy-loam or calcareous soil, thin scrubby vegetation, wide sky, very little cover. What you are scanning for is a subtle disturbance in the crust, and there are two things to read.

The first is cracking. As a fruitbody swells beneath the surface it lifts and splits the soil above, producing a low dome perhaps 5 to 15 cm across with radial fissures running out from the centre. In fine crusted soil this shows as a star-shaped fracture; in looser sand it is just a soft bulge with a lighter, drier top where the crust has parted.

The second is vegetation. This is a mycorrhizal fungus and it partners with rock rose — small shrubby Helianthemum species — so the plant is a positional guide. Experienced collectors work outward from the base of a rock rose in a slow spiral, watching the crust. A cracked dome without a nearby host plant is worth checking but is less likely.

Excavate gently with a small probe or blade, from the side rather than straight down, so you lift the fruitbody out whole rather than cutting through it.

The Outside of the Fruitbody

What comes out of the ground is an irregular tuber, roughly globose to lumpy and potato-like, commonly 2 to 8 cm across and occasionally fist-sized or larger. Big specimens are often flattened, kidney-shaped or lobed, taking the form the surrounding stones allowed.

The surface is smooth to slightly roughened, sometimes minutely scurfy or finely cracked into shallow patches, and it is frequently coated in adhering sand and fine soil that has to be brushed away before you can judge colour. Fresh, young fruitbodies are whitish, cream or pale ochre. With age and handling they darken to yellow-brown, reddish-brown, or a dull purplish-brown, and bruised patches darken faster.

Importantly, there is no thick, warty, separable rind. The outer layer is thin and merges into the interior tissue, so you cannot peel it off in the way you can with a hard-skinned earthball. At one point on the underside there is usually a slight basal depression or scar where mycelial strands attached to the soil.

Cutting It Open — the Decisive Step

Slice the fruitbody cleanly in half. The interior, called the gleba, is what identifies the group and the species.

You should see a firm, solid, marbled interior with no cavity: pale sterile veins branching and looping through a differently coloured fertile tissue, producing a pattern like veined marble or a section through a brain. Those pale veins are whitish to cream and remain pale throughout development.

The fertile pockets between them are the part that changes. In young material they are pale cream or greyish. As the fruitbody ripens they darken markedly, and in this species the mature gleba takes on brown, reddish-brown or purplish-brown tones. That darkening of the fertile tissue against persistently pale veins is the character to record, because several close relatives keep a much paler interior at maturity.

The cut surface does not produce a rapid dramatic colour change, but exposed flesh dulls and browns slowly over several minutes as it dries.

Why There Is No Spore Print

This is an ascomycete with enclosed development, so there is no gill, pore or tooth surface, no wind dispersal, and no possibility of a spore print. Substituting the equivalent step, you examine the gleba directly.

In the field, that means judging the marbling: continuous solid tissue with pale veins, not a hollow chamber, not a powdery mass, not a set of small packed pellets. Under a microscope you look for globose asci containing eight spores, and the spores themselves are globose and comparatively large, roughly 16 to 22 micrometres, ornamented with distinct conical spines. Spine length and shape are the standard way of separating the species in this genus, and a squash mount of a small piece of ripe gleba is enough to see them.

Substrate, Host and Season

Sandy, sandy-loam or gravelly soils, frequently calcareous, in arid and semi-arid steppe. The range covers the Mediterranean basin, North Africa, the Arabian peninsula, the Middle East and parts of central and southwest Asia.

The mycorrhizal partnership with Helianthemum is close enough that the shrubs act as indicator plants, and locals in many regions refer to them by names that mean roughly "truffle grass". Fruiting depends entirely on autumn and early-winter rainfall; fruitbodies then develop underground over several months and reach maturity from late winter into spring, typically February to April in the Mediterranean and Middle East. A dry autumn simply means no season at all.

Separating It From Look-alikes on Structure Alone

Terfezia boudieri is the nearest relative and shares habitat and host. Its mature gleba stays much paler — whitish to cream or pale ochre — where this species darkens to brown, reddish or purplish tones, and microscopically its spore ornamentation is shorter and more wart-like than the longer conical spines here.

Terfezia arenaria and its allies are similar in build but again differ in mature gleba colour and in spore ornament, and they associate with different Helianthemum species.

Tirmania species, the white desert truffles, are separated by a smoother, whiter, more even surface, a paler and more finely veined gleba, and smaller spores with much weaker ornamentation.

Picoa species are far smaller, distinctly dark brown, and have a surface roughened with small warts.

True truffles, Tuber species, have a firm, often blackish, warty and clearly differentiated rind, a gleba with fine white veins on a dark background, and they associate with trees such as oak and hazel in temperate woodland — the wrong setting entirely.

Earthballs, Scleroderma, are basidiomycetes with a thick, tough, warty skin that peels as a distinct layer and an interior that turns into a dry, powdery, purple-black spore mass, quite unlike marbled solid tissue.

False truffles such as Pisolithus show a gleba made of many small packed pellets in a gel, not continuous veined flesh.

Elaphomyces species have a thick, hard, granular rind enclosing a powdery dark spore mass and grow in temperate forest soil under trees.

Common questions

How do you locate something that fruits underground?
By reading the soil surface. A maturing fruitbody domes and cracks the crust into a low mound with radial fissures, typically 5 to 15 cm across. Work outward from rock rose shrubs, which are the mycorrhizal hosts, and lift any cracked dome carefully from the side with a probe.
