Elm Oyster Mushroom Identification Guide

A field walkthrough for Hypsizygus ulmarius, the pale, thick-stemmed mushroom that erupts from wounds on standing hardwoods. Covers the cracking cap, the attached rather than decurrent gills, the white spore print and the structural line between it and the true oysters.

The First Impression and Where You Are Standing

The Elm Oyster is a trunk mushroom of living and recently dead broadleaf trees, and you usually spot it from a distance and above eye level. Walking a street lined with old elms, a riverside stand of box elder and cottonwood, or a park with veteran maples, you notice a pale bulge on the trunk one to five metres up: a broad, creamy-white cap, or a small cluster of two to five, jutting straight out of a pruning scar, a frost crack, a branch stub or an old wound.

The first impression is of solidity. This is not a thin bracket. It is a thick, heavy, fleshy mushroom with a real stalk, and the cap often looks slightly domed and swollen rather than fan-shaped. Fruitbodies are frequently large, 10 cm or more across, and they hold their shape for weeks. Approach and look at how it attaches, because attachment is where the identification is won.

Reading the Cap

The cap runs 5 to 15 cm across, sometimes to 20. It starts convex with a strongly inrolled margin and expands to broadly convex or nearly flat, occasionally becoming a little depressed over the centre but never developing a true funnel.

Colour is white to cream, buff or pale tan, often slightly darker and more watery-tan over the disc and paler toward the edge. The surface is dry to very faintly greasy in wet weather, smooth or with fine appressed fibrils, and matte rather than shiny. In dry, breezy weather the skin frequently cracks into a mosaic of pale plates separated by narrow fissures, with the cracking coarsest at the centre — a common and useful look.

Check the margin closely. It stays inrolled well into maturity, and it is even and smooth: no radial grooves, no lines and no hanging veil fragments. With age it can become wavy or shallowly lobed, but it should not be striate.

The Gills Settle the Question

Turn the fruitbody over, or if it is still attached, crouch and look up under it. The gills are attached to the stalk — adnate, or notched where they meet it, and at most very shortly decurrent with a small tooth. They do not run any appreciable distance down the stalk.

That single observation is the heart of the identification, because the true oysters have gills that visibly and continuously descend onto whatever stalk stub they possess. Put a fingertip at the junction of gill and stalk and follow it down. If the gill lines fade out within a couple of millimetres, you are in this species. If they run a centimetre or more down a lateral stub, you are not.

The gills themselves are white to cream, close to crowded, moderately broad, with even edges and several tiers of short gills that do not reach the stalk. They stay pale; they do not develop pink, grey or brown tones as they mature.

Stipe, Base and Flesh

The stalk is substantial: 3 to 10 cm long and 1 to 2.5 cm thick, sometimes thicker, solid throughout, firm and tough. It is white, dry, smooth to slightly fibrillose, and it lacks both a ring and a volva. Its position is central to eccentric, occasionally approaching lateral, but it is always a genuine fleshy stalk rather than a rudimentary stub.

Because the mushroom grows out of a vertical trunk surface and then turns to hold the cap horizontal, the stalk is usually curved, and it often broadens where it enters the wood. Look for white mycelial down at the very base and for the way the base plugs directly into a wound rather than sitting on the bark surface.

Cut the fruitbody in half from cap to base. The flesh is white, thick, firm and unchanging: no reddening, no yellowing, no bluing, no latex, and no colour shift over the next ten minutes. The odour is mild, sometimes faintly mealy. That absence of any bruising reaction is worth recording, since it removes several genera.

Taking and Reading the Spore Print

Cut the cap free, lay it gill-side down on a sheet half white and half black, cover it with a bowl and leave it two to six hours. The deposit is white, sometimes with the faintest cream cast. The two-tone paper matters here: a white print vanishes on white paper, and against black you can also confirm it is not the pale lilac-grey that some true oysters give.

If you can put the print under a microscope, the spores are round to nearly round, smooth and small, roughly 4 to 6 micrometres. Globose spores are a genus-level confirmation and separate this fungus cleanly from the elliptical, sausage-shaped spores of the true oysters.

Wood, Host and Season

This is a white-rot fungus of standing hardwoods. It fruits from wounds, pruning cuts, cankers and dead branch stubs on trees that are still alive or only recently dead, most classically on elm, and also on box elder and other maples, poplar and cottonwood, beech, willow, and occasionally horse chestnut. Urban and street trees are prime habitat, which is why this species turns up so often on ornamental plantings and in parks.

It fruits singly or in small clusters of a few caps sharing a wound, rather than in the shelving tiers of a decaying log. The season runs from late summer through autumn and often into the first frosts, and fruitbodies persist for weeks once formed. Distribution is broadly northern temperate.

Look-alikes, on Structure Alone

Pleurotus ostreatus and P. pulmonarius, the true oysters, are the main confusion. They form overlapping shelving tiers on dead logs and stumps; their caps are fan- or shell-shaped and laterally attached; the stalk is absent or reduced to a short off-centre stub; and the gills run conspicuously down onto that stub. Their spore print is white to pale lilac-grey. The Elm Oyster's central-to-eccentric fleshy stalk, non-decurrent gills and preference for wounds on living trunks separate it on all three counts.

Hypsizygus tessulatus is the closest relative. Its cap carries watery translucent spots that dry into a mottled, tiled pattern, and it typically fruits in dense clusters with many stalks fused at a common base, usually on beech and elm. Uniform, unspotted caps and few fruitbodies per wound point to the Elm Oyster.

Pleurotus dryinus has a woolly cap surface, veil remnants hanging from the cap margin or forming a ring zone on the stalk, and decurrent gills that yellow with age.

Neolentinus and Lentinus species have jagged, saw-toothed gill edges and tough, leathery flesh; run a fingernail along a gill edge to check.

Pleurocybella porrigens is thin, pure white, ear-shaped and completely stemless, and it grows on conifer wood.

Pale terrestrial funnel caps in Clitocybe and Leucopaxillus grow from soil and litter, not out of trunk wounds, and their gills are usually strongly decurrent. Always trace the base to its actual attachment before comparing anything else.
