A field-by-field walk through Lactarius deterrimus, the orange-latex milkcap of spruce plantations, from the greening cap to the wine-red latex reaction that separates it from its pine and fir relatives.
The wood you are standing in
Almost every False Saffron Milkcap begins as a patch of orange showing through dark moss under spruce. The classic setting is a Norway spruce plantation or a spruce shelterbelt on acid ground, where the needle litter is deep and springy and the ground layer is a carpet of feather moss and bilberry. Look along the drip line of the outer trees, on mossy banks beside forest tracks, and around young spruce fifteen to thirty years old, which are far more productive than mature closed stands. The fruit bodies push up through moss so that only the disc of the cap shows, and they are often clustered in loose troops of five or ten.
The first impression is of a firm, orange, funnel-shaped mushroom that looks slightly bruised. Even in perfect specimens there is usually a smudge of dull verdigris green somewhere on the cap or the gill edges, and that combination of carrot-orange and green is the fastest way to place the species in the field.
Reading the cap
Measure before anything else. The cap is 4 to 10 cm across, occasionally to 12. Young caps are convex with a tightly inrolled margin, then flatten and finally become shallowly funnel-shaped with a depressed centre. The surface is smooth, slightly sticky when the weather is wet and matt when dry, and it is marked with faint concentric zones of deeper orange on a paler orange-buff ground. The zoning is weaker than in most of the orange milkcaps, and there is very often a narrow band close to the margin that is unzoned and slightly paler.
Colour ages badly, and that is useful. Old caps, waterlogged caps and any part that has been nibbled or knocked develop patches of dull grey-green to bottle green. Run a fingernail across the surface and come back to the mark in a quarter of an hour: on this species the scratch will usually be greening.
Gills and the latex
Turn the cap over. The gills are crowded, narrow, adnate to slightly decurrent, and repeatedly forked near the stipe attachment. Fresh, they are a clean saffron to pale carrot orange, slightly paler than the cap. Damaged gills stain first wine-red and then, over an hour or more, dirty green.
The latex test is the heart of the identification. Slice cleanly across the gills with a sharp blade and watch the cut for a full half hour. The latex emerges carrot-orange and reasonably copious. Within roughly ten to thirty minutes it turns a distinct wine-red or purplish-red, and the cut surface follows it. Leave the specimen in a pot and look again after several hours and the same tissue will have gone dull greenish. Speed matters as much as colour, so note the clock. Cold weather slows the reaction, and very old fruit bodies may produce almost no latex at all.
Stipe, base and flesh
The stipe is 3 to 7 cm long and 1 to 2 cm thick, cylindrical or slightly tapering downward, and hollow by maturity, so it compresses easily between finger and thumb. Its colour is orange, usually paler than the cap, and it is frequently overlaid by a fine whitish bloom that rubs away. Shallow, darker orange pits called scrobicules may be present, but they are typically few, faint and confined to the upper half rather than covering the stipe.
Dig the base out rather than pulling. It sits in a pad of white to pale orange mycelium bound into needle litter, and there is no volva, no ring and no cortina. Cut the whole fruit body in half from cap to base. The flesh is firm but brittle, breaking with a clean chalky snap rather than tearing in fibres, which is the Russulaceae signature. It is pale orange, darker just under the cap skin, and it repeats the same red-then-green sequence as the gills.
Taking a spore print
Choose a fully expanded cap, cut the stipe off flush with the gills, and set the cap gill side down on white card with a small piece of black card alongside so that a pale print can be judged against both. Cover it with an upturned cup to hold humidity and leave it three to six hours in a cool place. Latex will bleed onto the card and stain it orange or red, so scrape a thin layer of the deposit with a blade and view it heaped on white.
The print is pale ochre with a faint pinkish or buff tone, never white and never dark. Under a microscope the spores are broadly ellipsoid, roughly 7 to 9 by 6 to 7 microns, and ornamented with an incomplete network of ridges and warts that stains blue-black in Melzer's reagent.
Substrate and season
This is an obligate ectomycorrhizal partner of spruce, in Europe chiefly Norway spruce, and it will not be found away from its host. Plantations, spruce hedges, park plantings and natural montane spruce forest all qualify, and acid, mossy, moisture-retentive soils are preferred. Fruiting runs from late summer into late autumn and often begins earlier than the pine-associated members of the group. Where spruce and pine grow mixed, the trees directly overhead matter more than the general character of the wood.
Separating it from close relatives
Every look-alike is another orange-latex milkcap, so the discipline is always host tree plus latex behaviour.
Saffron Milkcap, Lactarius deliciosus, grows with two-needle pines. Its stipe is conspicuously and deeply scrobiculate, its cap is more strongly zoned and brighter, and its latex stays orange for a long time before dulling. Greening occurs but is slower and patchier.
Lactarius semisanguifluus is also a pine associate. Its latex turns dark wine-red within a minute or two rather than after ten or twenty, and mature caps are heavily suffused green over most of the surface.
Lactarius salmonicolor grows with silver fir. It is a deeper salmon-orange throughout, the latex remains salmon and does not pass through wine-red, and green staining is essentially absent.
Lactarius quieticolor, with pines, has a duller cap carrying blue-grey or greenish zones from the outset and orange-red flesh in section.
Lactarius sanguifluus and Lactarius vinosus release latex that is already deep blood-red or vinaceous as it emerges, with no orange phase at all.
Finally, confirm the genus before worrying about species: brittle granular flesh, latex of any kind, and a pale ochre print place a fungus here, and rule out the various orange-capped woodland fungi that tear in fibres and produce no latex at all.
