Fiery Milkcap Identification Guide

A step-by-step read of Lactarius pyrogalus under hazel, built around the grey faintly zoned cap, the widely spaced ochre gills and the copious unchanging white latex.

Look up before you look down

Lactarius pyrogalus is tied to hazel, and that single fact does most of the work. Before examining a specimen, look at the canopy above it. The typical setting is a coppiced hazel stool in old broadleaved woodland, a hazel-dominated hedge bank, a scrubby wood edge or a green lane on chalk or limestone, with the fruit bodies standing in the leaf litter within a few metres of the stems. Where there is no hazel overhead, the identification should be reconsidered from the start.

The first impression is of a medium-sized, drab, greyish mushroom that looks a little washed out and slightly funnel shaped. Nothing about the cap is showy. Then you turn it over and the gills are a warm ochre-yellow and unusually widely spaced, and that contrast between a cold grey cap and warm well-separated gills is the fastest recognition character in the field.

Reading the cap

The cap is 4 to 9 cm across, occasionally to 11. Young specimens are convex with an inrolled margin, expanding to flat and then to shallowly depressed or broadly funnel shaped, with the margin becoming wavy and sometimes splitting.

The surface is smooth and slightly greasy or tacky when moist, drying to a matt, faintly silky finish. It is never conspicuously slimy and never scaly. Colour runs through pale grey-buff, olive grey, drab clay-grey and pale lead, usually darker at the centre and paler towards the margin. Faint concentric zoning, or a scatter of darker watery spots arranged in vague rings, is often visible when the cap is wet and fades as it dries. The zoning is subtle; a strongly and sharply banded cap points elsewhere.

Gills and the latex

The gills are the best single character. They are distinctly distant, that is well spaced with obvious gaps between them, thick, moderately broad, and adnate to slightly decurrent, with occasional forking near the stipe and a few short intermediate gills. Colour is pale ochre, yellow-buff or cinnamon-buff, warm and clearly deeper than the cap, deepening further with age. Damaged edges spot brownish.

Now cut across the gills with a clean blade. The latex is white, released copiously, and it does not change colour. Watch it for at least twenty minutes on the cut surface and again on a piece of white tissue: it should stay white, dry to a slightly glossy pale film, and it should not turn yellow, pink, lilac or grey. Some brownish staining of the gill tissue itself may follow, but the latex remains unchanged. That unchanging white latex, on widely spaced ochre gills, under a grey cap, over hazel, is the complete diagnosis.

Stipe, base and flesh

The stipe is 4 to 8 cm long and 1 to 2 cm thick, cylindrical or slightly tapering downward, sometimes a little curved where it emerges from litter. It is smooth, dry and matt, and paler than the cap, running whitish buff to pale grey-ochre. It is stuffed with soft tissue at first and becomes hollow with a wide cavity in mature specimens, so it compresses easily between finger and thumb.

There is no ring, no cortina and no volva, and no pitting of the surface. The base sits in litter with a few pale mycelial threads and often carries hazel leaf fragments.

Cut the whole fruit body in half. The flesh is whitish to pale buff, thick in the cap centre, and brittle: it snaps with a clean chalky break rather than tearing into fibres, which is the Russulaceae signature and confirms the family before you consider the species. Colour change on exposure is slight, at most a faint creamy or pale ochre tint after some minutes.

Taking a spore print

Choose a fully expanded cap, cut the stipe off flush with the gills, and set the cap gill side down on white card with black card alongside. Cover it with an upturned bowl to hold humidity and leave it three to six hours. Because the gills are widely spaced, the print appears as a set of separated radiating lines rather than a solid disc, which is itself a small confirmation of gill spacing.

The deposit is pale ochre-yellow to yellowish buff, noticeably warmer and deeper than the near-white or cream prints of many milkcaps. Scrape it into a heap before judging. Microscopically the spores are broadly ellipsoid, roughly 6 to 8 by 5 to 6 microns, ornamented with ridges forming an incomplete network, the ornamentation staining blue-black in Melzer's reagent.

Substrate and season

The species is ectomycorrhizal and its partner is hazel, with occasional records under hornbeam. It favours calcareous or at least base-rich soils and shows a marked preference for coppice, hedge banks and woodland edges where hazel grows in the open rather than in dense shade. Fruiting begins in late summer and continues through autumn, peaking after a settled wet spell, and fruit bodies commonly appear in loose groups around a single stool.

Separating it from look-alikes

Lactarius circellatus is the closest problem. It grows with hornbeam rather than hazel, its cap is more strongly and clearly zoned with distinct concentric bands and often carries a purplish grey tone, and above all its gills are crowded and pale pinkish cream rather than distant and ochre. Gill spacing is the character to trust.

Lactarius blennius partners beech. Its cap is olive-green to grey-green and genuinely slimy when moist, marked with distinct dark spots arranged in rings, and its crowded whitish gills carry white latex that dries grey-green.

Lactarius fluens, also with beech, has a dark greenish-grey centre with a pale marginal band and crowded gills.

Lactarius acris, again with beech, releases white latex that turns pink or salmon on the flesh within a few minutes.

Lactarius vietus grows with birch, is thinner fleshed and greyish lilac, and its white latex dries grey on the gills.

Lactarius glaucescens, Lactarius piperatus and Lactarius vellereus are all white capped with extremely crowded narrow gills, so they are unlikely to be confused once the gills are examined.

Some authors segregate a very similar hazel associate, Lactarius hortensis, which cannot be reliably separated in the field and requires microscopic comparison.

Finally, rule out the grey woodland funnels that superficially resemble the cap: they have fibrous flesh that tears rather than snaps, no latex at all, and white spore prints.

Common questions

Which tree should I look for above it?
Hazel. Lactarius pyrogalus is ectomycorrhizal with Corylus, with occasional records under hornbeam, and it favours base-rich or calcareous soils. Coppiced hazel stools, hazel hedge banks, scrubby wood edges and green lanes are the productive places, and the fruit bodies usually stand within a few metres of the stems.
What do the gills look like?
Distinctly distant, with obvious gaps between them, thick and moderately broad, adnate to slightly decurrent, and coloured a warm pale ochre, yellow-buff or cinnamon-buff. The contrast between the cold grey cap and the warm widely spaced gills is the quickest recognition character in the field.
How does the latex behave?
It is white, copious and completely unchanging. Cut across fresh gills and watch the cut and a smear on white tissue for at least twenty minutes: the latex should stay white and dry to a glossy pale film without turning yellow, pink, lilac or grey. The gill tissue itself may spot brownish, but the latex does not change.
How do I separate it from Lactarius circellatus?
Use gill spacing and host tree. Lactarius circellatus grows with hornbeam, has a more strongly and clearly zoned cap with a purplish grey cast, and its gills are crowded and pale pinkish cream. Lactarius pyrogalus grows with hazel, is only faintly zoned, and has distant ochre gills.
