Flat-topped Agaricus Identification Guide

A detailed field routine for Agaricus placomyces, from the flattened dark-scaled cap and free pink-to-chocolate gills to the instant chrome-yellow bruising in the bulbous base.

The woodland and the first impression

Flat-topped Agaricus is a woodland mushroom rather than a lawn one. The typical setting is eastern North American broadleaf forest in late summer and autumn: oak, beech and maple over a moderate litter layer, along shaded trail edges, on wooded banks, and in the shady margins of lawns that back onto trees. It rises from soil and leaf litter, scattered or in small loose groups.

The first impression is of a strongly two-toned mushroom with an unusual silhouette. Where most of its relatives are domed, this one expands to a cap with a distinctly flattened, almost truncate top, as though the crown had been pressed down with a flat hand. The colour reinforces the effect: a whitish or pale grey cap that reads as dark grey-brown in the middle because of a dense cluster of tiny fibrillose scales, giving a bullseye pattern that thins out toward a pale margin.

Below that, the standard Agaricus architecture: free gills, a substantial skirt-like ring on a white stipe, and a swollen base.

Reading the cap

The cap is 4 to 10 cm across, occasionally to 12. It starts egg-shaped or convex and expands to broadly convex with that characteristic flat top, finally becoming nearly plane in old fruit bodies.

Get a lens on the surface. The ground colour is whitish to pale grey. Over it lie small, flattened fibrillose scales in grey-brown to blackish-brown, and their distribution is the point: they are crowded and nearly confluent over the centre, so the disc looks like a solid dark patch, and they become progressively smaller and more scattered toward the rim, so the outer third of the cap looks predominantly pale. On young caps the margin may hang with fragments of the partial veil.

The scales are appressed fibrils, not erect spines and not gelatinised patches. Brush the surface with a thumb and they smear rather than lift.

Gills, stipe, ring and base

Slice the cap vertically to check gill attachment. The gills are free, ending short of the stipe with a clear gap and often a small collar of tissue at the top of the stem. They are crowded and narrow, and they run through the standard sequence: whitish or pale grey when very young, then a clean pink, then a dull purplish-brown, and finally dark chocolate to blackish-brown at maturity. Because the colour depends entirely on stage, always try to examine two fruit bodies of different ages from the same group.

The stipe is 5 to 12 cm tall and 6 to 15 mm thick, white, smooth to silky-fibrillose, stuffed at first and hollowing with age. The base is distinctly enlarged into a rounded bulb, sometimes with an abrupt shoulder, and white mycelial cords usually run out into the litter from it.

The ring is large, membranous and persistent, hanging as a pendulous skirt fairly high on the stipe. Look at its underside: in this species it frequently carries brownish patches or small scale-like flecks. That decorated underside is a helpful supporting character.

Bruising and odour

Now do the two tests that place this mushroom in its group.

First, bruise it. Scrape the cap margin with a knife back and rub the outside of the stipe base firmly with a thumbnail. Both flush a bright chrome yellow within seconds to a minute, an unmistakably vivid yellow rather than a pale cream tint, and that yellow then fades over the following ten to twenty minutes to a dull brownish-ochre. Split the stipe lengthwise and watch the very bottom of the base: the flesh there turns yellow first and most intensely, while flesh higher up in the stipe and in the cap stays white or changes only slowly.

Second, smell it, and smell the base in particular. The odour is chemical and phenolic, reminiscent of ink or creosote, and it is far stronger at the stipe base and stronger still in a closed container after ten minutes. Together the instant chrome-yellow base and the phenolic odour define the group of Agaricus species this one belongs to.

Taking a spore print

Free gills make this straightforward. Cut the stipe off flush with the gills, set the cap gill-side down on white paper, cover it with a bowl and wait two to four hours. A mature cap prints heavily.

The deposit is dark chocolate-brown. Under the microscope the spores are smooth, ellipsoid and thick-walled, roughly 4 to 6 by 3 to 4 micrometres, dark brown in water, with an inconspicuous pore.

Substrate, season and range

The species is a litter and humus decomposer, drawing its carbon from decaying organic matter in the top layer of the soil rather than from a partnership with tree roots. It fruits under broadleaved trees, especially oak and beech, from midsummer through autumn following rain, and it is characteristic of eastern North America.

A note on names is worth carrying in the field. The name has been applied to more than one entity, and much material long called by it is now placed under Agaricus praeclaresquamosus or treated as close to the European Agaricus moelleri. The complex is still being sorted, and the morphology described above applies across it.

Separating it from its look-alikes

Agaricus xanthodermus gives the same instant chrome-yellow base and the same phenolic odour, but its cap is smooth and whitish to pale grey without dense dark scales, often cracking in dry weather, and it favours open grass, hedgerows, parks and disturbed ground rather than woodland litter.

Agaricus sylvaticus and its relatives carry brown fibrillose scales on a brown ground rather than blackish scales on white, so they read warm brown rather than grey. Decisively, their cut flesh turns red rather than yellow, and they have no phenolic odour.

Agaricus campestris is a grassland species with a smooth white silky cap, no dark scales, no yellow reaction, no bulbous base, and a thin ring that often falls apart.

The horse mushroom group, Agaricus arvensis and relatives, are large and white, stain a slow soft yellow over the whole surface rather than an instant chrome yellow concentrated in the base, have a cogwheel pattern on the ring underside, and smell sweetly of almond or anise.

Agaricus pocillator is genuinely difficult: it too has a dark-scaled cap and a yellow-staining bulbous base, but it is smaller and its bulb has an abrupt marginate collar. Careful attention to the shape of the bulb is needed.

Leucoagaricus and Chlorophyllum species can look similar in silhouette, with free gills and a skirt-like ring, but their gills stay white or turn greenish rather than passing through pink to chocolate, and their spore prints are white or green. Take a print.

Amanita species are settled by the base and the print: dig out the whole base and look for a sac-like volva, and take a print, which will be white.

Common questions

What does the yellow bruising reaction look like?
Rub the cap margin and the outside of the stipe base, and split the base lengthwise. Both flush a vivid chrome yellow within seconds to a minute, strongest and fastest in the very bottom of the stipe, and that yellow then fades to a dull brownish-ochre over ten to twenty minutes. Flesh higher in the stipe and in the cap changes little.
How do I separate it from Agaricus xanthodermus?
On the cap surface and the habitat. A. xanthodermus has a smooth whitish to grey cap, often cracking in dry weather, with no dense dark scaling, and it grows in open grass, hedgerows, parks and disturbed ground. Flat-topped Agaricus has crowded blackish-brown fibrillose scales concentrated over the disc and belongs to broadleaf woodland litter.
Why do the gills keep changing colour?
Gill colour tracks spore maturation. Very young gills are whitish or pale grey, then turn a clean pink, then dull purplish-brown, and finally dark chocolate to blackish-brown as the spore load ripens. Because a single fruit body only shows one stage, examine two or three of different ages from the same group before deciding.
How does it make its living?
It is a decomposer of leaf litter and humus, breaking down organic matter in the upper soil rather than forming root partnerships with trees. That is why it fruits from litter under oak, beech and maple in eastern North American woodland and along shaded woodland edges, from midsummer through autumn after rain, rather than being confined to the drip line of a particular partner tree.
