Hygrophorus Milkcap Identification Guide

A field routine for Lactarius hygrophoroides: an orange-brown oak-wood milkcap defined by extremely distant white gills and copious white latex that never changes colour or stains the tissue it touches.

First Impressions

You are walking oak woodland in summer, a few days after heavy rain, and you spot a low orange dome on the soil among leaf litter. The colour is warm: rust, cinnamon, apricot-brown. The cap surface looks dry and slightly velvety rather than shiny. So far it could be any of a dozen orange milkcaps.

Then you tip it over, and the identification more or less makes itself. The gills are extraordinarily well spaced: broad white blades with wide gaps between them, so few that you could almost count them from a standing position. Very few milkcaps have gills like this, and the combination of an orange-brown cap with strikingly distant white gills is the signature of this species. The epithet refers to that waxcap-like gill spacing, which is exactly the impression the mushroom gives.

Reading the Cap

The cap is 3 to 10 cm across, convex at first with an inrolled margin, then flattening and finally becoming shallowly funnel-shaped or broadly depressed at the centre while the margin lifts and often becomes wavy.

The surface is dry and matt, finely velvety to the touch when young, and typically becomes wrinkled, corrugated or minutely roughened as it expands, especially toward the centre. It is not viscid, not sticky, and not polished. There are no concentric colour zones, which rules out the whole set of zonate milkcaps immediately.

Colour is orange, orange-brown, cinnamon, tawny or brick-orange, sometimes fading toward apricot at the margin in older specimens or after sun exposure.

Reading the Gills

Spend real time here, because the gills carry most of the identification.

Attachment: adnate to distinctly decurrent, the gills running a short way down the stipe.

Spacing: this is the crux. The gills are markedly distant, well separated with clear space between each blade, and the total count is low for a mushroom of this size. Look along the underside at a shallow angle and you can see the cap flesh clearly between neighbouring gills.

Form: broad, thick, waxy-looking, occasionally forking near the stipe, with relatively few short intermediate gills.

Colour: white to cream when young, ageing to pale buff, pale ochre or faintly yellowish. They stay pale. This matters, because in several related species the gills become spotted or blotched brown where the latex has dried on them, and here they do not.

Latex: The Decisive Test

Take a sharp blade and score the gills across their edges, then watch.

The latex appears quickly and abundantly. This is a generously milky species, and a fresh, damp specimen will bead white droplets all along the cut within seconds. The latex is pure white and, crucially, it stays white. Leave a droplet on the gill for five minutes, ten minutes, half an hour, and it should not yellow, redden, brown, turn lilac or go greenish.

Then check the tissue underneath. Wipe some latex onto a white handkerchief or a corner of the cut flesh and leave it. In this species neither the latex nor the flesh it contacts develops brown, ochre or rusty staining. That double negative, unchanging latex plus non-staining tissue, is what separates it from its closest relatives, and it is worth waiting the extra ten minutes to confirm.

Stipe, Base and Flesh

The stipe is short relative to the cap, usually 2 to 6 cm long and 0.8 to 2 cm thick, cylindrical or tapering downward, dry, smooth to very finely velvety, and coloured like the cap or a shade paler: orange-buff to pale tawny, often whitish at the extreme base. There is no ring and no volva, and the surface is unpolished and unpitted, with no scrobicules and no dark spots.

Inside, the stipe is stuffed when young and becomes hollow with age. The flesh throughout is white to pale cream, firm, and brittle in the way that all milkcaps and brittlegills are: it snaps cleanly like chalk rather than tearing into fibres. Cut flesh remains white and does not discolour on standing.

The odour is faint and unremarkable, with nothing fishy, pungent or aromatic about it, and that absence is itself a useful negative character within the group.

Taking a Spore Print

Trim the stipe flush with the gills and place the cap gill-side down on dark paper or glass, cover it, and give it three to six hours. Because the gills are so distant, the resulting print is a striking, widely spaced radial star rather than a solid disc, which is attractive and also a small confirmation of the gill spacing in itself.

The deposit is white to pale cream. Under the microscope the spores are broadly ellipsoid to nearly round, roughly 7 to 9 by 6 to 7 micrometres, ornamented with warts and short ridges that form a partial network, and that ornamentation stains blue-black in iodine reagents. A pale print rules out the brown-spored litter mushrooms of the same woods.

Substrate, Habitat and Season

This is a mycorrhizal species partnering broadleaved trees, above all oaks, and it is a characteristic mushroom of eastern North American oak and mixed hardwood forest. It fruits from soil among leaf litter, singly or in scattered groups, sometimes in loose troops along shaded trail edges and slopes.

The season is warm-weather: summer into early autumn, appearing in flushes a few days after heavy rain and disappearing quickly in dry spells. Look on well-drained slopes and in litter under mature oaks rather than in deep moss or on wood.

Separating the Look-Alikes

Lactarius volemus is the commonest confusion. It shares the orange to tawny cap and copious white latex, but its gills are crowded and close rather than distant, its latex and the tissue it touches turn brown on standing, and it has a strong fishy odour, particularly in age.

Lactarius corrugis is darker, brown to reddish-brown, with a strongly corrugated and wrinkled cap surface, crowded gills that develop brown staining, browning latex, and the same fishy odour.

Lactarius luteolus is pale buff to whitish rather than orange, and although it has fairly distant gills, its white latex stains flesh and gills brown quickly and it carries a strong odour.

Lactarius subvellereus and Lactarius deceptivus are white or whitish, much larger, with crowded gills and a very different overall look.

Zonate orange milkcaps such as Lactarius thyinos and Lactarius deterrimus have concentric bands on the cap and orange or carrot-coloured latex, not white.

Waxcaps (Hygrocybe and Hygrophorus species) genuinely resemble it in gill spacing and thickness, which is where the name comes from, but they produce no latex at all when cut, and their flesh is not brittle in the same chalky way.

What is the quickest way to recognise this milkcap?
The gill spacing. An orange to cinnamon-brown milkcap whose gills are broad, white and conspicuously far apart is already a very short list, and if the abundant white latex then stays white and leaves no brown marks on gills or flesh, the identification is essentially complete.
